4 Tbsp Butter
3 Tbsp flour
2 cups beef broth
1 cup heavy cream
1 Tbsp Worcestershire sauce
1 tsp mustard
Salt & pepper to taste
1 lbs ground beef
1 lbs ground pork
1/2 cup bread crumbs
1/4 cup parsley, chopped
1/2 tsp allspice powder
1/2 tsp nutmeg
1/4 cup onion, finely chopped
1 tsp garlic powder
2 egg yolks
1 tsp salt
1 tsp pepper
2 tbsp butter, for frying
1 Tbsp olive oil, for frying

Steps:

  • Mix in all the meatball ingredients except butter and oil and mix well. Roll them into meatballs.
  • Heat olive oil and 2 Tbsp butter in a skillet and place meatballs without crowding them and fry till golden brown on all sides. Plate them out and set aside.
  • In the same pan, melt remaining 4 Tbsp butter. Gradually stir in flour to create a roux. Cook until flour starts to brown.
  • Slowly stir in beef broth, mixing all those bits stuck to the pan into the sauce.
  • Add in cream, Worcestershire sauce, mustard, salt and pepper. Cook for 4-5 minutes, until sauce starts to thicken up.
  • Add in meatballs. Simmer for 10 minutes. Taste and adjust the seasonings to your liking.
  • Serve it over bed of mashed potatoes. Garnish with chopped parsley and lingonberry jam.

These can be prepared many ways- You can use Cheddar cheese soup or cream of celery soup in place of the cream of mushroom soup.

1/4 cup dry breadcrumbs
1/4 cup minced onion
1 egg, slightly beaten
1 (10 3/4 ounce) can cream of mushroom soup
1/3 cup water
2 tablespoons chopped parsley

Steps:

  • Mix beef, bread crumbs, onion and egg, and shape into 16 meatballs.
  • Brown meatballs in skillet, drain off drippings.
  • Stir in soup, water and parsley.
  • Cover, cook over low heat for 20 minutes, stirring often.
  • Serve with boiled new potatoes and lingonberries, or with buttered wide egg noodles.

This classic baked meatball recipe is easy to make, full of great flavor, and totally versatile. Pair it with your favorite Italian marinara sauce, BBQ sauce, Swedish cream sauce...and beyond!

1 cup Panko breadcrumbs
1/3 cup milk
1 pound ground beef
1 pound ground pork
4 cloves garlic, pressed or minced
2 eggs
1 cup (1 1/2 ounces) finely-grated Parmesan cheese
1/4 cup finely-chopped fresh Italian herbs (I used half parsley, half basil)
1/4 cup grated yellow onion
2 teaspoons Worcestershire sauce
1 teaspoon dried oregano
1 teaspoon fine sea salt
1/2 teaspoon black pepper
1/4 teaspoon crushed red pepper flakes

Steps:

  • In a large mixing bowl, stir together the panko and milk until combined. Set mixture aside to soak for 5 to 10 minutes while you prepare the other ingredients.
  • Add the ground beef, ground pork, garlic, eggs, Parmesan, fresh herbs, onion and Worcestershire sauce to the (same) mixing bowl. Sprinkle the oregano, salt, black pepper and crushed red pepper flakes evenly on top. Use your hands to mix the ingredients until evenly combined, being careful not to over-mix the ingredients.
  • To make the meatballs easier to form, I recommend covering and chilling the mixture in the refrigerator for 1 hour. But if you're pressed for time, you can skip this step.
  • Heat the oven to 425°F and line a large rimmed baking sheet with parchment paper.
  • Using a medium cookie scoop or a spoon, scoop and roll the mixture into 2-tablespoon balls and place them on the prepared baking sheet. (I recommend greasing your hands with a bit of olive oil to prevent the mixture from sticking.)
  • Bake for 10-12 minutes, or until an instant-read thermometer measures the internal temperature of the meatballs to be 160°F. Remove pan and transfer to a wire cooling rack.
  • Serve meatballs immediately and enjoy!

I never knew how to make good meatballs until I found this recipe. I normally make mine with just ground beef and they still taste great. I've used the combination of pork, beef and veal and they are equally good. Definitely use fresh bread crumbs and freshly grate your cheese instead of using the canned variety...it really does make a difference.

1 pound ground beef
½ pound ground veal
½ pound ground pork
2 cloves garlic, minced
2 eggs
1 cup freshly grated Romano cheese
1 ½ tablespoons chopped Italian flat leaf parsley
salt and ground black pepper to taste
2 cups stale Italian bread, crumbled
1 ½ cups lukewarm water
1 cup olive oil

Steps:

  • Combine beef, veal, and pork in a large bowl. Add garlic, eggs, cheese, parsley, salt and pepper.
  • Blend bread crumbs into meat mixture. Slowly add the water 1/2 cup at a time. The mixture should be very moist but still hold its shape if rolled into meatballs. (I usually use about 1 1/4 cups of water). Shape into meatballs.
  • Heat olive oil in a large skillet. Fry meatballs in batches. When the meatball is very brown and slightly crisp remove from the heat and drain on a paper towel. (If your mixture is too wet, cover the meatballs while they are cooking so that they hold their shape better.)
