MANKOMO'S FARMHOUSE BREAD
This bread is what we in South Africa would term plaasbrood - farm bread. You know the one, those loaves made by generations of farmer's wives where no written recipe really exists. No bread machine needed for this, kneading takes all of 10 minutes with two rising periods. Delicious. The recipe appears in Quiet Life, a Buddhist recipe book.

Steps:
- Preheat oven to 200C / 392°F.
- Mix all the dry ingredients and then add the butter if using.
- Gradually mix in the water and knead until you have an elastic dough which comes away from the sides of the bowl. If kneading by hand, do so for 10 minutes, 3 minutes with a food mixer.
- Allow to rise in a warm place, covering the bowl with clingwrap until the dough has doubled in size.
- Knead again lightly and place in a bread tin (at this point you can divide the dough if it is too much for one tin).
- Leave to rise again until doubled.
- Bake at 200C/392F for 15 minutes, then turn the oven down to 180C/356F and bake for a further 45 minutes or so, or until the loaves sound hollow when tipped out and knocked with your knuckles.
- You can use a variety of different flours in this recipe, as long as you end up with 1kg of flour in total.

FARMHOUSE WHITE MULTI-GRAIN CHEESE BREAD - BREAD MACHINE
A really easy & delectable loaf of bread from your Bread Making Machine! I use a mix of Farmhouse or Country White flour with Multi-Grain flour. The cheese is Parmesan cheese for a slightly "Cheesy" kick! This recipe is dependant on your Bread Machine - mine is a Russell Hobbs Breadman Ultimate and I use the White - Rapid - 2lb - Medium Crust setting for this bread; that is just a guide, as your bread machine might be bit a different - but that setting has worked for my family & friends! An easy-to-whip-up family loaf which is healthy & very tasty. It is particlarly good toasted the day after. If you don't want to use as much olive oil as I do - it IS good for you however - reduce it by 1 tablespoon; the texture is not as good, but it still works!PLEASE NOTE - I ALWAYS test my recipes at least twice before I post them - and photograph them wherever possible - as you can see from the photo, this bread DID cook right the way through, and, your measuremnts MUST be spot on when making bread in a bread machine!

Steps:
- Depending on the order of ingredients for your bread machine - place either wet or dry ingredients into the bread pan of the bread machine; I have put this list in order of wet to dry.
- Set your bread machine for a White 2lb loaf, rapid or normal and I find a medium crust works well on this - but it's up to personal taste!
- Check within the first 5 minutes if there is enough liquid to dry, I say this as flours from different parts of the world can differ greatly! (Adjust if necessary - it is NOT usual to have to add more or less than a few millilitres or grammes either way.
- Bake on desired setting according to your bread machine.
- Carefully remove pan from the machine when the cooking cycle has finished.
- Cool slightly before slicing and spreading with lashings of butter -- Mmmmmmmmm!
- (Don't forget to check BEFORE slicing if the mixing paddle is still inside the loaf - remove gently if it is.).
- Great toasted next day and also great for Cheese & Pickle Sandwiches on the same day -- or Cheese and Ham, or Cheese & Chutney, or Cheese & Onion -- anything in fact!

EASY FARMHOUSE MULTI-GRAIN BREAD (FOR BREAD MACHINE)
I LOVE whole grain breads but hate paying three and a half bucks for a loaf. I cobbled this together to have as a quick and easy recipe using a minimum of things one would have to run to the store for. I have pretty much every ingredient on this list on hand most of the time. The only "special" item is the rolled whole grain hot cereal. I can find Bob's Red Mill quite easily and inexpensively, and a bag of it will make several loaves of bread. You can use seven-grain or ten-grain or 100-grain cereal if you want, of course. This makes a really nice, soft, delicious loaf- perfect for sandwiches, with the nubby texture of the whole grains that I Iove so much. UPDATE: I also thought this bread just need a little "something" and now add 1/2 cup apple sauce. Put the apple sauce in your liquid measure first, then add the milk until they both together measure just under one cup.

- Place all in bread machine pan in order given unless instructed otherwise by your machine's manufacturer. Bake on regular setting, medium or light color.
- Either use a scant cup of milk or add a couple or three tablespoons of flour to this to get the doughball the right texture. Keep your flour out and handy just in case, and watch the doughball after it's kneaded for a few minutes.
- Tip: If you have a kitchen scale, measuring flour by weight instead of by volume is not only much more accurate, it's faster and easier too.
- Tip: Never just throw the ingredients into a bread machine and leave it, if you can help it. Let the doughball form, then let the machine work it about five minutes more, then see what it looks like. If the paddle smushes through the bottom of the dough with every turn your dough is too wet. If your dough just spins around on top of the paddle or doesn't form at all, your dough is too dry. The ideal texture is soft enough to smush some of the time but firm enough to spin sometimes, then go off-center and smack the sides of the bread pan a lot.
