1-1/2 teaspoons ground coriander
1 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon sugar
1/2 teaspoon ground chipotle pepper
1/2 teaspoon smoked Spanish paprika
2 pork tenderloins (3/4 pound each)
MANGO RELISH:
1 medium mango, peeled and chopped
2 plum tomatoes, seeded and chopped
1/3 cup chopped onion
1/3 cup chopped seeded peeled cucumber
1/4 cup minced fresh cilantro
1 jalapeno pepper, seeded and chopped
3 tablespoons lime juice

Steps:

  • In a small bowl, combine the first 6 ingredients. Set aside 1/2 teaspoon for relish; rub remaining spice mixture over tenderloins. Place in a lightly greased 13x9-in. baking pan. Bake, uncovered, at 350° for 45-50 minutes or until a thermometer reads 160°. Let stand for 5 minutes., Meanwhile, in a small bowl, combine the mango, tomatoes, onion, cucumber, cilantro and jalapeno. Combine lime juice and reserved spice mixture; add to mango mixture and toss to coat. Slice pork; serve with relish.

1 (9-ounce) jar mango chutney (such as Major Grey's), any large pieces chopped
1/2 cup chopped red onion
1/4 cup chopped fresh cilantro
1 tablespoon Dijon mustard plus additional for serving
8 beef hot dogs
8 hot dog buns, opened

Steps:

  • Mix chutney, onion, cilantro, and 1 tablespoon mustard in bowl. DO AHEAD_Can be made 1 day ahead. Cover; chill._
  • Prepare barbecue (medium-high heat). Grill hot dogs and buns until heated through and grill marks form, 2 to 3 minutes per side for hot dogs and about 1 minute per side for buns. Transfer buns to plate. Place 1 hot dog in each bun. Add mustard and relish; serve.

2 cups fresh mango juice or canned mango nectar
2 cups fresh carrot juice
1 tablespoon toasted whole fennel seeds
2 tablespoons toasted whole coriander seeds
1 habanero chile
Salt and freshly ground pepper
6 tablespoons olive oil
1 medium red onion, diced
2 jalapenos, diced
2 pounds lump crabmeat, picked over
3 tablespoons prepared horseradish, drained
1/4 cup Dijon mustard
3 tablespoons creme fraiche, sour cream or yogurt
1 large egg, lightly beaten
Salt and freshly ground pepper
2 cups finely crushed blue corn chips
1/4 cup thinly sliced green onion
Mango-Green Onion Relish, recipe follows
2 ripe mangoes, peeled, seeded and diced
2 green onions, finely sliced
1 serrano pepper, finely sliced
2 tablespoons lime juice
2 tablespoons olive oil
Salt and freshly ground pepper

Steps:

  • Carrot Mango Broth: Place all ingredients in a medium saucepan and boil over high heat until reduced by 1/2. Strain and season with salt and pepper to taste.
  • Crab cake: In a skillet over low to medium heat, heat 2 tablespoons olive oil and saute the onion and jalapenos until translucent. Remove from the heat and set aside. In a mixing bowl, combine the crab, onion mixture, horseradish, mustard, creme fraiche, egg and salt and pepper, to taste. Refrigerate, covered for 1 hour or up to 1 day. Form the chilled crab mixture into 12 (2-inch) patties 1/2-inch thick and dredge in the corn chips. Heat the remaining 4 tablespoons olive oil in a large skillet over medium heat and fry the cakes for about 3 minutes on each side, or until crusty and lightly browned. Ladle some of the carrot-mango broth into medium shallow bowls. Place 2 crab cakes in the bowl and garnish with green onion and serve with mango relish.
  • Combine all ingredients in a medium bowl and season with salt and pepper.

4 cups canned coconut milk
1/2 cup cornstarch
2/3 cup sugar
1 tablespoon orange blossom water
1/2 teaspoon coarse salt
Mango-Kumquat Relish, for garnish
Mint leaves, for garnish

Steps:

  • Rinse six 6-ounce ramekins under running water. Place on a baking sheet; set aside.
  • Place 3/4 cup coconut milk and cornstarch in a small saucepan; stir until cornstarch is dissolved. Add remaining coconut milk, sugar, orange blossom water, and salt. Cook over medium-high heat, stirring constantly.
  • When mixture starts to thicken, reduce heat and continue cooking until it coats the back of a spoon, 8 to 9 minutes. Immediately pour mixture into prepared ramekins. Refrigerate, covered with plastic wrap, until cooled completely and set, at least 3 hours.
  • Invert each ramekin onto a serving plate. Top each tembleque with mango-kumquat relish and garnish with a mint leaves. Serve immediately.

Hash Brown-Crusted Halibut with Mango Mint Relish image

4 skinless halibut fillets, 3 to 4 ounces each, about 1/2 inch thick
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/8 teaspoon granulated garlic
2 cups refrigerated shredded hash browns, such as Simply Potatoes
1 large egg, whisked in a shallow dish
2 tablespoons butter, melted and cooled slightly
1 tablespoon vegetable oil
Mango-Mint Relish, recipe follows
2 tablespoons thinly sliced fresh mint
Zest and juice of 2 limes
1 ripe medium mango, diced
1 Fresno chile, half of the seeds and ribs removed, diced
1 small shallot, minced
Kosher salt and freshly ground black pepper

Steps:

  • Sprinkle both sides of the halibut with the salt, pepper and granulated garlic. Compress the hash browns between 2 paper towels until they are flat and about the size of all 4 fillets. Eyeball the size and shape of the fillets and cut out hash brown "hats" to fit the top of each fillet. Dip the presentation side of each piece of halibut into the egg, then press a hash brown "hat" onto the egg.
  • Put the melted butter and oil into a cold, 12-inch nonstick pan. Place the fillets hash brown-side down directly into the butter and oil. Place on a burner and turn the heat to medium low. Cook, undisturbed, until the hash browns are golden brown, 8 to 10 minutes. Gently flip using a fish spatula and finish cooking until the fish registers 125 degrees F, about 5 more minutes. Serve immediately with the Mango-Mint Relish.
  • Mix together the mint, lime zest and juice, mango, chile and shallot in a bowl; season with salt and pepper.

4 x 150g thick line-caught skinless cod fillets
1 green chilli , finely chopped - seeds in or out, it's up to you
1 small ripe mango , finely diced
1 tsp ground cumin
½ finger-length piece fresh root ginger , grated
large handful mint leaves, shredded
1 tbsp mango chutney
juice ½ lime
85g crustless stale white bread
1 tsp garam masala
½ tsp turmeric
1 tbsp olive oil

Steps:

  • Heat oven to 200C/180C fan/gas 6 and put the fish fillets in a roasting tin. Combine the chopped chilli, mango, cumin, ginger, mint, mango chutney and lime juice. Spoon a quarter of the relish on top of each fillet and pat it down into an even layer with your fingers.
  • Put the bread in a food processor with the garam masala and turmeric and whizz to fine crumbs. Add the olive oil and give the processor one final pulse to mix everything together.
  • Spoon the crumbs over the relish-topped fillets. Cover the tin with foil and bake for 10 mins. Remove the foil and continue cooking for another 5 mins until the fish flakes easily and the crumbs have crisped on top. Serve with a green salad - see recipe, below.

1 ripe mango, peeled, pitted, and diced medium
1 small cucumber, peeled, seeded, and diced medium
1/4 cup fresh basil leaves, coarsely chopped
Juice from 1 lime
2 tablespoons extra-virgin olive oil
Coarse salt and ground pepper
4 mahi mahi fillets (6 ounces each), skin off, or other firm, flaky fish
1 tablespoon vegetable oil

Steps:

  • In a medium bowl, toss together mango, cucumber, basil, lime juice, and olive oil. Season relish with salt and pepper.
  • Heat a cast-iron skillet or grill pan over medium-high. Using a paper towel, blot fish dry. Season both sides with salt and pepper. When pan is hot, add vegetable oil, then gently add fish, working in batches if necessary (do not overcrowd pan). Cook fish, undisturbed, until fillets release easily from pan, about 6 minutes. Flip and cook until opaque throughout, 4 to 6 minutes. Serve fish with relish.

Preheat the grill on high for 10 minutes,when ready to grill the scallops,turn down the heat to medium-high.Grill the scallops for about 7 minutes or until the scallops are opaque.Turning once and baste with marinade. 1 teaspoon coarsely chopped sage leaves
1 tablespoon coarsely chopped cilantro
1 egg
1/2 cup chicken stock

1 cup fresh cranberries
1/4 cup brown sugar
1 large mango, peeled, seeded and coarsely chopped
3 tablespoons finely diced red onion
1 tablespoon minced jalapeno
1/4 cup coarsely chopped cilantro
1/4 cup fresh lime juice

2 tablespoons unsalted butter
2 tablespoons olive oil

Steps:

  • Preheat the oven to 350 degrees F. In a medium saute pan over medium heat, melt the butter and cook the chorizo, garlic, celery, onion, carrot and poblano for 3 minutes or until lightly browned. Transfer to a mixing bowl and add the cornbread, thyme, sage, cilantro, egg and stock and mix well. Place in 12 by 15-inch baking pan and bake for 25 minutes.
  • In a hot skillet combine cranberries and brown sugar, cook until berries start to pop. Add all other ingredients, except cilantro, and heat, (add a spoon of water if sauce appears dry). Just before serving, toss in the cilantro.
  • Preheat the oven to 450 degrees F.
  • In a hot roasting pan, melt the butter and oil. Season the hens with salt and pepper to taste and sear until browned all over. Place, breast side down in the pan and roast for approximately 12 to 14 minutes. Check for doneness by seeing if juices run clear when bird is tipped. Remove from the oven and let rest for 5 minutes. Plate hens alongside of the dressing and serve with the relish.

ALAN WONG'S PINEAPPLE-MANGO-MACADAMIA NUT RELISH



Alan Wong's Pineapple-Mango-Macadamia Nut Relish image

This relish is so good, our friends have been known to beg us to allow them keep the leftovers. Serve with grilled fish, chicken, or even by itself as a salad. The relish can be used immediately, but I like to refrigerate it for an hour or two to allow the flavors to mingle. You can be pretty liberal with the hot sauce because the pineapple and mango balance the fire, but use caution if you use habanero peppers together with an extreme sauce such as Dave's Insanity. The original recipe was published in The Seattle Times c. 1993

vegetable oil (for brushing)
marinade
4 cloves garlic, chopped
1 tablespoon grated ginger
1 tablespoon lemon juice
1 tablespoon garam masala (an Indian spice blend) or 1 tablespoon curry paste
2 tablespoons vegetable oil
1/4 cup plain yogurt
relish
1 large mango, peeled
3 green onions, finely chopped
1 tablespoon grated ginger
1 teaspoon finely chopped jalapeno pepper
2 tablespoons lime juice
2 tablespoons chopped mint leaves
salt

Steps:

  • Combine marinade ingredients in a small bowl& spread on salmon; refrigerate for an hour.
  • Dice mango into 1/2 inch cubes& combine with remaining relish ingredients; refrigerate until needed.
  • It can be made up to 12 hours ahead.
  • Brush salmon with oil, then grill for 2 minutes- flesh side down.
  • Turn over, close lid& grill for another 5 minutes or until white juices appear.
  • Serve relish on the side.

2 tablespoons fat-free plain yogurt
2 teaspoons honey
2 garlic cloves, minced
1 teaspoon white wine vinegar
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon ground turmeric
1/8 teaspoon ground cloves
1/8 teaspoon ground cinnamon
1/8 teaspoon cayenne pepper
1/2 teaspoon minced fresh gingerroot
4 boneless pork loin chops (4 ounces each)
MANGO RELISH:
1 large mango or 2 small peaches, peeled and diced
3/4 cup chopped red onion
3/4 cup chopped seeded tomatoes
4 teaspoons chopped seeded jalapeno pepper
2 teaspoons lime juice
1/4 teaspoon salt

Steps:

  • In a large resealable plastic bag, combine the first 11 ingredients; add pork. Seal bag and turn to coat; refrigerate for at least 2 hours. , Meanwhile, combine the relish ingredients in a large bowl. Let stand at room temperature for 1 hour; refrigerate until serving., Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. , Grill pork chops, covered, over medium heat or broil 4-5 in. from the heat for 4-5 minutes on each side or until a thermometer reads 145°. Let stand for 5 minutes before serving. Serve with mango relish.

Jumbo Shrimp with Mango Papaya Relish in Butter Lettuce Cups image

1 medium-sized Mexican or Hawaiian papaya, diced
1 large mango, semiripe
1/2 small red onion, diced small
1medium-sized beefsteak tomato, diced
1 teaspoon crab boil seasoning (recommended: Old Bay)
1 handful fresh cilantro leaves, coarsely chopped
2 tablespoons freshly squeezed orange juice
Olive oil
1 1/2 pounds jumbo fresh shrimp, or frozen and thawed, peeled (tail off) cut in half
1/2 teaspoon red pepper flakes
1 package butter lettuce

Steps:

  • In a medium-sized bowl, use a rubber spatula to mix the papaya, mango, red onion, tomato, 1/2 teaspoon crab boil seasoning, cilantro, and orange juice until incorporated.
  • In a 10 or 12-inch skillet over medium-high heat, add 2 tablespoons of olive oil. In a medium-sized mixing bowl add the chopped shrimp and remaining 1/2 teaspoon of crab boil seasoning and a 1/2 teaspoon of red pepper flakes. Use a rubber spatula to mix until incorporated. Transfer the shrimp to the skillet and cook through. If the shrimp is raw cook 3 to 5 minutes, or cook until hot if the shrimp were pre-cooked, about 1 to 2 minutes. Set aside.
  • Wash lettuce and pull it apart into 8 large pieces, which will serve as your "lettuce cups". With a large spoon, scoop a spoonful of the mango and papaya relish into each lettuce cup followed by a tablespoon or so (4 or 5 pieces) of shrimp. Best served at room temperature.
