Soy-Marinated Chicken Breast with Watercress-Pasta Salad and Mango-Lime Purée image

1/4 cup soy sauce
1 tsp chili paste
4 scallions, chopped, green and white parts kept separate
1/4 cup red wine
3 cloves garlic, peeled and minced
1 tbsp minced ginger
1/4 tsp black pepper
4 boneless chicken breast halves (1 lb)
8 oz linguine
2 tbsp Dijon mustard
2 tbsp rice vinegar
1 tbsp sesame oil
3 tbsp canola oil
1 red bell pepper, cored, seeded and julienned
3 bunches watercress
2 mangoes, cubed
2 tsp fresh lime juice
Vegetable-oil cooking spray

Steps:

  • Preheat broiler. For marinade, combine soy sauce, chili paste, scallion whites, red wine, garlic, ginger, and black pepper in a bowl. Add chicken and let marinate. Cook pasta in salted boiling water until al dente; drain. For dressing, whisk together mustard, vinegar, sesame oil, and 2 tbsp canola oil. Toss pasta, red pepper, watercress and all but 2 tbsp scallion greens with dressing. In a blender, puree mangoes, lime juice, and remaining 1 tbsp canola oil. Coat broiler pan with cooking spray and add chicken in a single layer. Broil 6 to 7 minutes per side, until browned and cooked through. Cut breasts diagonally in half. On each plate, place 1/4 pasta and 2 pieces chicken. Drizzle with mango puree and garnish with remaining scallion greens.

Crust
1 1/2 cups Graham Cracker Crumbs
1/2 grated coconut
1/4 cup sugar
6 TBSP melted butter
Filling
3 8oz packages cream cheese, softened
1 1/4 cups sugar
2 tsp. vanilla extract
4 large eggs
2 cups pureed mango (I use the frozen mango chunks from Trader Joe's. 1 bag yields exactly 2 cups.)
2 TBSP Tajin chili powder
1/2 tsp chili powder
zest from 3 limes
juice from 3 limes
Sauce:
6 oz fresh raspberries
2 TBSP sugar
1-2 TBSP lime juice
2 TBSP silver tequila

Steps:

  • Make Crust: Preheat oven to 325 degrees F. Spray nonstick springform pan. Cover bottom and outside of pan with foil. Stir together dry crust ingredients in bowl. Add butter mix until mixture is moist. Press evenly and firmly into bottom of pan. Bake until crust is set, about 12 min. Maintain oven temperature. For Filling: Beat cream cheese, sugar, and vanilla in large bowl until smooth. Add eggs, 1 at a time, and beat until well incorporated. Add pureed mango. Add zest, lime juice, Tajin, and chili powder. Pour filling into springform pan. Bake in a water bath in the oven until the center is almost set, about 90 minutes. (The center should still move when pan is gently shaken.) Carefully remove from water bath. Cool cheesecake on wire rack. After 10 min, run knife around edges. Refrigerate uncovered overnight. Remove pan sides before cutting. To cut, warm a sharp knife under hot water. To obtain the cleanest slices, wipe the blade after every cut, and rewarm under hot water. For Sauce: Puree raspberries, sugar, water, lime juice and tequila. Adjust sugar, lime juice and tequila according to taste. Strain the sauce through a fine mesh strainer, pushing on solids. Serve sauce over a slice of cheesecake.

1/4 cup black peppercorns, freshly cracked
1 tablespoon salt
2 lbs fresh mango
1/3 cup brown sugar
2 tablespoons red wine vinegar
2 tablespoons cider vinegar
1/8 cup sherry wine
2 tablespoons fresh ginger, grated

Steps:

  • FOR THE PORK:.
  • Trim any excess fat or "grisle" off the loins. Mix the salt and cracked pepper and coat the loins with the mixture. Roast in a 350 degree oven for about 40 minutes, or to desired doneness.
  • FOR THE PUREE:.
  • Combine all ingredients in the med-large sauce pan. Simmer for 15 minutes or until the mango is very tender.
  • Puree the mixture either in a blender or with an emulsion blender.
  • Slice the pork tenderloin and top with the puree.

Butter for greasing the pans
Flour for dusting the pans
6 egg whites
1/2 teaspoon salt
1 1/2 cups superfine sugar
3 teaspoons cornstarch
3 teaspoons cider vinegar
2 large ripe mangos
2 cups whipping cream
1 pint cleaned blueberries
1 pint cleaned raspberries

Steps:

  • Preheat the oven to 250 degrees.
  • Butter and flour a cookie sheet and the ring of a bottomless nine-inch springform mold. Set the ring in the center of the cookie sheet.
  • Beat the egg whites and the salt in a mixing bowl until foamy. Add the sugar, one tablespoon at a time, while continuing to beat the egg whites, until shiny and stiff. Do not overbeat or they will be dry and grainy.
  • Dissolve the cornstarch with the cider vinegar in a small bowl. Fold the mixture into the egg whites.
  • Spoon the egg-white mixture into the prepared mold and build it up along the sides approximately one inch thick, leaving a one-inch depression in the center.
  • Bake for one and one-half hours and cool. The meringue will sink away from the crust while cooling; do not be concerned. When the meringue is completely cool, unmold by removing the ring gently, and loosen the bottom of the meringue shell from the cookie sheet with a knife or spatula. Put the shell on a serving plate.
  • Peel the mangos and cut the flesh away from the pits. Puree it in a food processor or blender.
  • Whip the cream in a chilled mixing bowl until it forms a stiff peak.
  • Fill the depression in the middle of the meringue with the mango puree. Spread the whipped cream on the meringue, starting from the sides and leaving a three-inch circle of the mango puree exposed in the center. Garnish the edge and sides of the cake with the blueberries and raspberries.

CHILLED BLACK BEAN PURéE WITH BASMATI AND MANGO



Chilled Black Bean Purée With Basmati And Mango image

8 ounces small dry black beans
5 cups filtered water
1 small bay leaf
1 teaspoon dried oregano
1 large clove garlic
1 small onion, peeled and halved
1 small carrot, peeled and halved
1/2 stalk celery, halved
1 chipotle chili in adobo or small dried ancho chili
1 teaspoon sugar
Salt
1/2 cup basmati rice
1 tablespoon minced scallion
2 teaspoons chopped cilantro
1/8 teaspoon black pepper
1 ripe mango or avocado
Juice of 1/2 lime

Steps:

  • Soak black beans in cold water for 2 hours. Drain. Combine beans, water, herbs, vegetables, chili and sugar in 1 1/2-gallon stock pot, cover, and bring to simmer over medium heat. Reduce heat to low, and cook, covered, stirring occasionally, until beans are tender, 45 minutes to an hour.
  • Remove carrot, celery, onion and bay leaf from soup with tongs. Ladle half the soup into blender and purée until smooth. Transfer to a bowl (not plastic). Purée remaining soup and transfer to bowl. Stir in 1 1/2 teaspoons salt. Cover, and refrigerate, or stir over ice water bath at room temperature until very cold (about 5 hours in refrigerator, about 1 hour over ice).
  • Bring 3 cups salted water to a boil over high heat in medium saucepan. Stir in rice, lower heat, cover, and simmer, stirring occasionally, until rice is tender, about 30 minutes. Drain rice, rinse with cold water, shake dry, transfer to bowl, cover, and refrigerate until ready to use.
  • To serve, taste soup and adjust seasoning. Stir scallion and cilantro into rice. Season lightly with salt and pepper. Peel, and dice mango or avocado, toss with lime juice and salt. Spoon 1/4 cup seasoned rice into center of 6 chilled soup plates. Ladle soup over it. Top with mango or avocado.

1/2 c. vegetable oil
1/4 c. honey
2 c. mango puree
2 c. flour
2 tsp. (or more) cinnamon
2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. vanilla extract
1/2 c. chopped nuts
1/2 c. raisins

Steps:

  • MANGO BREAD 2 eggs 1/2 c. sugar 1/2 c. vegetable oil 1/4 c. honey 2 c. mango puree Beat eggs until fluffy. Beat in sugar, then oil and gradually add honey. Add mango puree. In another bowl, combine flour with cinnamon, baking soda and salt. Beat into mixture gradually. Stir in vanilla, walnuts and raisins. Pour into 2 lightly greased and floured loaf pans and let stand at room temperature 20 minutes. Preheat oven to 350 degrees. Bake 50 to 60 minutes, or until bread tests done. Delicious sliced, toasted and served with sweet unsalted butter.
