MIXED GREENS WITH MANGO VINAIGRETTE



Mixed Greens with Mango Vinaigrette image

This sweet and spicy salad makes the perfect weeknight appetizer.

Number Of Ingredients 8

1 ripe mango
1/2 cup freshly squeezed lemon juice, 2 lemons
3 tablespoons olive oil
1/4 teaspoon crushed red-pepper flakes
Salt and freshly ground black pepper
4 ounces Boston lettuce, 1 small head
4 ounces frisee
1 Kirby cucumber, thinly sliced into rounds

Steps:

  • Make the vinaigrette: Peel the mango, and slice sides away from pit; use a paring knife to remove the peel. Slice one side into 1/8-inch-thick slices, and reserve. Chop remaining half, place in blender with lemon juice, and puree until smooth. Transfer to a medium bowl, and whisk in olive oil. Add red-pepper flakes, and season with salt and pepper.
  • Combine lettuce, frisee, mango slices, and cucumber slices in a large bowl, and toss to combine. Toss with a few spoonfuls ofmango vinaigrette.

1 cups frozen mango defrosted (or fresh mango) ($1.50)
1 medium lime, juiced ($0.33)
1 tbsp. apple cider vinegar ($0.06)
1 tbsp. olive oil ($0.22)
1/4 cup cilantro ($0.65)
1/2 tsp. salt ($0.03)
1/2 tsp. ground cumin ($0.05)
1/2 tsp. garlic powder ($0.05)

Steps:

  • In a food processor or blender combine all the ingredients and blend on high. If needed, add water by the tablespoon to thin it out.
  • Store in an air tight container for up to a week in the fridge.

2 chiles, minced
2 limes, juiced
1 lemon, juiced
2 cups extra-virgin olive oil
Salt and freshly ground white pepper
4 mangoes, peeled and julienned
3 Maine lobster tails, cooked, shelled and cut lengthwise
12 prawns, cooked, peeled, and deveined
4 ounces fresh snow peas, julienned
Chopped cilantro, for garnish
Leeks, julienned and fried, for garnish

Steps:

  • For the dressing, mix all ingredients in a blender and place in bowl.
  • Toss mangoes with the dressing.
  • To finish the dish, place mango salad in the center of chilled plates. Top each with 1/2 lobster tail, 2 prawns, and snow peas. Finish with cilantro and fried leeks.

4 green mangoes - peeled, pitted, and cut into matchsticks
1 medium red onion, thinly sliced
1 medium red bell pepper, thinly sliced
¼ cup chopped mint
¼ cup cilantro, chopped
1 Thai chile (bird's eye) pepper, seeded and sliced
2 tablespoons fish sauce
1 teaspoon white sugar
½ cup dry roasted peanuts
1 squeeze lime juice

Steps:

  • Mix mangoes, red onion, bell pepper, mint, cilantro, and chile pepper together in a bowl.
  • Mix fish sauce and sugar together in a bowl until dissolved. Pour dressing over salad. Refrigerate at least 2 hours.
  • Top with peanuts and lime juice just before serving.
