CUCUMBER MANGO SALAD



Cucumber Mango Salad image

Mixed with flavorful Asian dressing, this light and refreshing cucumber mango salad is the perfect side for grilled meats and roasted salmon.

2 tablespoons lemon juice
2 tablespoons soy sauce
1 tablespoon honey
2 teaspoons toasted sesame oil
2 teaspoons sesame seeds
½ teaspoon black pepper
chili oil to taste (optional)
1 English cucumber (Note 1)
1 mango (Note 2)
¼ cup loosely-packed fresh cilantro (chopped)

Steps:

  • To make the dressing, whisk together all the dressing ingredients in a small bowl.
  • Cut cucumber and mango into cubes. (TIP: Check out my easy method of cutting mango into cubes in the post above.)
  • Transfer into a medium bowl along with cilantro. Pour the dressing and toss to combine.
  • Refrigerate the salad for 20 minutes before serving to let the flavors meld together. But don't mix the salad more than half an hour before serving, or it'll become soggy and sad.

1 large shallot, thinly sliced into rings
3 garlic cloves, finely grated
1/2-1 Scotch bonnet chile or habanero chile, thinly sliced crosswise, seeds removed if less heat is desired
1/4 cup fresh lime juice
1 teaspoon kosher salt
2 ripe but firm mangoes, peeled, cut into ½-inch-thick spears
1 English hothouse cucumber, halved lengthwise, seeds removed, thinly sliced crosswise
1/2 cup chopped cilantro
Freshly ground black pepper

Steps:

  • Toss shallot, garlic, chile, lime juice, and salt in a medium bowl. Add mangoes and cucumber and toss again. Cover; let sit at room temperature until shallot and cucumber are softened and juicy and flavors come together, 45-60 minutes.
  • To serve, add cilantro to chow and toss well; season generously with pepper.
  • Do Ahead
  • Chow (without cilantro) can be made 3 hours ahead. Cover and chill.

3 mangos - peeled, seeded and diced
1 cucumber - peeled, seeded, and diced
2 jalapeno peppers, seeded and finely chopped
1 large onion, finely diced
1 clove garlic, minced
¼ cup chopped fresh cilantro
1 tablespoon lime juice, or to taste
salt and pepper to taste

Steps:

  • Stir together the mango, cucumber, jalapeno pepper, onion, garlic, and cilantro in a mixing bowl. Season with lime juice, salt, and pepper. Refrigerate at least 2 hours before serving to allow the flavors to blend.

1 1/2 tablespoons sugar
1 (750 ml) bottle sauvignon blanc wine
1 cucumber, peeled, cut into 1/4-inch rounds
1 mango, peeled pitted and finely diced
12 sprigs of fresh mint, divided
1 cup ginger ale

Steps:

  • Stir sugar and 1 1/2 tablespoons hot water in a large pitcher until dissolved.
  • Add wine, cucumber, and mango. Be sure the mango is firm.
  • Remove leaves from 6 sprigs of mint; stir into pitcher.
  • Cover and chill for at least 3 hours and up to 6 hours. When the fruit sinks, the wine is ready.
  • Stir ginger ale into pitcher.
  • You can serve over ice or ladle it out so everyone gets mango and cucumbers in their glass.
  • Garnish with remaining 6 mint sprigs.

4 cups chopped peeled mangoes (about 3 medium)
2/3 cup sugar
1/2 teaspoon ground cinnamon
2 tablespoons cornstarch
1 tablespoon cold water
1 tablespoon butter
TOPPING:
1 cup self-rising flour
1 tablespoon sugar
3 tablespoons shortening
1/2 cup 2% milk

Steps:

  • In a large saucepan, combine the mangoes, sugar and cinnamon. Cook and stir until mixture comes to a boil. Combine cornstarch and water until smooth; stir into pan. Cook and stir for 2 minutes or until thickened. Transfer to a greased 11x7-in. baking dish. Dot with butter., In a small bowl, combine flour and sugar. Cut in shortening until mixture resembles coarse crumbs. Stir in milk; mix well. Drop by tablespoonfuls onto hot fruit. Bake, uncovered, at 400° for 20-25 minutes or until bubbly and golden brown. Serve warm.
