MANGO CREAM CHEESE BEAN DIP

This mango cream cheese bean dip is the combination of refried beans mixed with mild spices, Jack and Cheddar cheese, scrumptious cream cheese, and mango-pineapple salsa to create a memorable, delicious hot dip!

1 (4 ounce) package cream cheese, softened
⅓ cup sour cream
1 tablespoon taco seasoning mix
1 teaspoon taco seasoning mix
1 teaspoon onion powder
3 drops hot pepper sauce
4 green onions, chopped, divided
1 (16 ounce) can refried beans
1 cup shredded Cheddar cheese, divided
1 cup shredded Monterey Jack cheese, divided
½ cup mango-pineapple salsa (such as Trader Joe's® Island Salsa)
2 tablespoons apricot jam
1 (14.5 ounce) package tortilla chips, warmed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Blend cream cheese, sour cream, 1 tablespoon plus 1 teaspoon taco seasoning mix, onion powder, and hot pepper sauce together in a bowl. Fold in all but 1 tablespoon green onions; add refried beans, 1/2 cup Cheddar cheese, 1/2 cup Jack cheese, salsa, and apricot jam. Transfer mixture to an 8x12-inch baking dish. Top with remaining Cheddar and Jack cheeses.
  • Bake in the preheated oven until mixture is bubbling and cheese is slightly browned, 20 to 30 minutes. Garnish the top with the remaining green onions and serve with warm tortilla chips.

This is my adopted recipe from Recipe Zaar's foundling children. But it's something I have been making for a long time. This is an appetizer that you can put together on a moment's notice with just two ingredients. But it tastes so good that it's hard to believe how easy it is to prepare! If it's too much work to blend the 2 ingredients, just plop the cream cheese on a plate & "frost" it with the chutney, and use it as a spread for crackers.

1 cup cream cheese, Softened (8 oz block)
1/2 cup mango chutney

Steps:

  • Beat the cream cheese to a smooth and creamy consistency and blend in the mango chutney, mixing well. Chop up any large chunks of fruit in the chutney.
  • Cover and chill.

ISLAND QUESADILLAS WITH LIME SOUR CREAM AND PUREED MANGO DIP



Island Quesadillas with Lime Sour Cream and Pureed Mango Dip image

Number Of Ingredients 15

Cooking spray
1 1/4 pounds large or jumbo shrimp, peeled and deveined
Salt and freshly ground black pepper
2 teaspoons ground cumin
4 pineapple rounds, fresh or canned in juice, about 1-inch thick
8 flour tortillas
1 1/2 cups Monterey Jack cheese, shredded
1/3 cup roasted red peppers, chopped
1/4 cup scallions, chopped
1/2 cup light sour cream
2 teaspoons finely grated lime zest
2 teaspoons garlic powder
1 mango, peeled and seeded
1 tablespoon fresh lime juice
1 tablespoon fresh cilantro, chopped

Steps:

  • Preheat oven to 400 degrees F.
  • Heat a stove-top grill pan or griddle to medium-high heat and coat with cooking spray. Season shrimp all over with salt, black pepper and cumin. Place shrimp on the hot pan and cook 2 minutes per side, until bright pink and cooked through. Place pineapple on grill next to shrimp and cook 2 minutes per side, until golden brown. Remove shrimp and pineapple from grill and cut both into 1-inch chunks.
  • Arrange 4 tortillas on a flat surface. Top with, shrimp, pineapple, cheese, red peppers, and scallions. Place second tortilla on top. Transfer with hands or with a spatula, to a baking sheet. Place a second baking sheet on top to weigh down the tortillas. Bake for 10 minutes, or until cheese is melted and tortillas are golden brown.
  • While the quesadillas are baking, in a small bowl, using a spoon, combine sour cream, lime zest and garlic. Mix well to combine.
  • In a food processor, combine mango and lime juice. Puree until smooth and remove from food processor and place in a bowl. Using a rubber spatula, stir in cilantro.
  • Remove quesadillas from the oven. Cut quesadillas into wedges and serve with lime sour cream and pureed mango on the side.
