PAPAYA AND MANGO JAM

Number Of Ingredients 4

1 lb firm ripe fresh papaya, peeled,seeded and cut into 1/2-inch cubes (about 3 cups)
1 1/2 lbs firm ripe fresh mangoes, peeled,cut away from stone and cut into 1/2" cubes
3 cups sugar
3 tablespoons fresh lime juice

Steps:

  • Combine all ingredients in saucepan.
  • Bring to boil over moderate heat, stirring frequently.
  • Reduce heat.
  • Simmer uncovered for 30 or 40 minutes until most of the liquid has cooked away and mixture is thick, stirring often.
  • Spoon jam into hot sterilized canning jars.
  • Fill jar to within 0.125 in from top.
  • Seal quickly and tightly.

FRESH MANGO AND PAPAYA SORBET PARFAIT

2 1/2 cups diced ripe mango
2 1/2 cups diced ripe papaya
2 1/2 cups sugar
5 cups water
1 1/2 pints fresh strawberries
Splash orange liqueur (recommended: Grand Marnier), optional
1 store-bought angel food cake, cubed
Fresh mint sprigs, for garnish

Steps:

  • In 2 separate non-reactive saucepans, place the mango in 1 and the papaya in the other. Add 1 cup of sugar and 2 1/2 cups of water to each pan. Place over medium heat and bring to a boil. Cook for 2 minutes. Remove from the heat and cool completely.
  • In a blender, puree the mango mixture until smooth. Remove and strain through a fine mesh strainer. Set aside. Wash out the cup of the blender and puree the papaya mixture until smooth. Remove and strain through a fine mesh sieve. In an ice cream maker, process each mixture, separately, according to manufacturer's directions.
  • Slice the strawberries and place in a mixing bowl. Add the remaining 1/2 cup of sugar and a splash orange liqueur, if using, and mix well. Cover and refrigerate for at least 30 minutes. To serve, lay some of the cubed angel food cake over the bottom each balloon wine glass or serving bowls. Place 2 small scoops of the mango sorbet over the cake. Spoon some of the berries over the top. Repeat with the remaining cake, papaya sorbet and berries. Garnish with a sprig of fresh mint.

1 1/2 lbs mangoes, peeled, stone removed, diced, ripe but still firm
1 1/2 lbs papayas, peeled seeds removed, ripe but still firm
2 onions, chopped
2 -3 red chilies, seeds removed, chopped fine
2 tablespoons fresh grated ginger (or 3 teaspoons dried ground ginger)
5 garlic cloves, minced
2 -3 teaspoons curry powder
1 teaspoon ground cumin
1 teaspoon ground allspice
1 teaspoon turmeric
1 cup raisins
2 tomatoes, seeded, chopped
3 cups brown sugar
2 cups white wine vinegar
1 tablespoon salt
3 tablespoons dark rum
1 tablespoon lemon juice

Steps:

  • Put all ingredients in a large pot, except for the rum and the lemon juice.
  • Bring to the boil, turn heat to medium, cook for approximately an hour, stirring often, until the mixture has reduced and thickened.
  • Turn off the heat and stir in the rum and lemon juice.
  • Transfer to clean warm jars and seal.

2 large ripe mangoes
1 1/4 cups heavy cream
8 dried apricots, halved
2/3 cup orange juice or 2/3 cup water
1 ripe papaya

Steps:

  • Take one thick slice from the mango and, while still on the skin, slash the flesh with a sharp knife in a criss-cross pattern to make cubes.
  • Turn the piece of mango inside-out and cut away the cubed flesh from the skin.
  • Place in a bowl, mash with a fork to a pulp, and then add the cream and mix together well. Spoon into a freezer container and freeze for about 1-1 1/2 hours, or until half frozen.
  • Meanwhile, put the apricots and orange juice in a small saucepan. Bring to a boil and then simmer gently until the apricots are soft, adding a little more juice or water if necessary, so that the apricots remain moist. Remove the pan from the heat and set aside to cool.
  • Chop or dice the remaining mangoes and place in a bowl.
  • Cut the papaya in half, remove the seeds and peel. Dice the flesh and add to the mango.
  • Pour the apricot sauce over the fruit and gently toss to coat.
  • Stir the half-frozen mango cream a few times until spoonable, but not soft.
  • Serve the fruit topped with the mango cream.

4 alphonso mangoes, peeled,pitted,and chopped coarse (you can use any mango, about 1 1/2 pounds)
1 medium papaya, peeled,seeded,and chopped coarse
2 cups plain yogurt
1 1/2 cups ice cubes
2 tablespoons fresh lime juice
3 tablespoons honey, to taste
1/2 teaspoon cumin powder
1/4 teaspoon almond extract
4 slices limes, for garnish

Steps:

  • In a blender blend all ingredients except the garnish till smooth add more ice cubes if you like the consistency a little thinner.
  • Pour into 4 glasses and garnish with lime slices.

1/2 medium mango, sliced
1/2 small papaya, seeded and sliced
1 tablespoon orange liqueur or fresh orange juice
1/2 cup fat-free ricotta cheese
1 tablespoon sugar
1/4 teaspoon grated lime zest
2 tablespoons sweetened flaked coconut, toasted

Steps:

  • In a medium bowl, stir together the mango, papaya, and liqueur. Let stand at room temperature for 30 minutes, stirring occasionally.
  • Meanwhile, in a food processor or blender, process the ricotta and sugar until smooth. Transfer to a small bowl. Stir in the lime zest. Cover and refrigerate until the mango mixture has macerated.
  • To serve, spoon the mango mixture into shallow dishes. Drizzle each serving with the ricotta cream. Sprinkle each with coconut.
