MANDARIN NAPOLEONS WITH SUGARED WONTON WRAPPERS

Steps:
- Preheat the oven to 400 degrees F. Coat a large baking sheet with cooking spray.
- Arrange the wonton wrappers on the sheet and spray them with cooking spray. Sprinkle them evenly with the granulated sugar, and then bake until golden brown, about 5 minutes.
- Remove from the oven and arrange 4 of the wontons on a serving platter or individual dessert dishes. Top each one with 2 tablespoons of the whipped topping and then one-eighth of the mandarin sections. Top each with a second wonton wrapper. Repeat the layers (whipped topping, mandarin oranges, wonton wrapper). Sift the confectioners' sugar over the top layer and serve.
MANDARINE NAPOLEON
Delicious Corsican drink to honor Napoleon, who was born on Corsica. Mandarine Napoleon liqueur was created to honor Napoleon while he was alive (by a social-climbing chemist), considered a French liqueur, but it is actually produced in Belgium. It is an (38% alcohol) orange-flavored liquor with a cognac base, with a spicy orange bouquet and pale orange color. It is made with Mandarin peel from Sicily chopped fine and steeped in cognac, then filtered, then added to alcohol, sugar, 21 herbs and spices (supposedly include clove, coriander, cumin and green tea). The alcohol is distilled 3 times and aged 3 years before bottling. If you can't find Mandarine Napoleon, I would substitute Grand Marnier for the best taste, then Cointreau, or, if desperate, triple sec. But if you want to honor the great little man, buy the real stuff. Hmm, the Mandarine Napoleon has a unique taste, sweet without being cloying, but not too "sophisticated". I heartily recommend this cocktail, and spring for the real deal, you'll be glad you did.

- Pour into a highball glass three-quarters filled with broken ice. Garnish with a slice of lime. Serve with a straw.
MANDARIN ORANGE NAPOLEONS
Chinese five-spice powder, sprinkled throughout the layers of phyllo dough, and an orange-cream cheese filling give this dessert a wonderful aroma.

- Put oven rack in middle position and preheat oven to 375°F.
- Whisk together five-spice powder and 2 tablespoons granulated sugar in a small bowl.
- Cover phyllo with overlapping sheets of plastic wrap and a dampened kitchen towel. Arrange 1 phyllo sheet on a large baking sheet, then brush with some butter and sprinkle with one third of spiced sugar. Make 2 more layers in same manner. Top with remaining phyllo sheet and brush with remaining butter. (For a corrugated look, invert a large rectangular cooling rack and place it on top of phyllo.)
- Bake until golden, 12 to 15 minutes. Carefully remove cooling rack (if using) and transfer phyllo (in 1 piece) with 2 metal spatulas to another rack to cool.
- While phyllo cools, blend together cream cheese, lemon juice, vanilla, 2 tablespoons reserved orange syrup (discard remainder), and remaining 2 tablespoons granulated sugar in a food processor until smooth. Transfer to a bowl and fold in oranges.
- Break phyllo with your hands or cut with a serrated knife into 12 pieces. Arrange 1 piece of phyllo on a plate and top with a dollop of orange cream. Repeat layering and top with another piece of phyllo. Make 3 more napoleons in same manner. Dust with confectioners sugar.
