WATERMELON AND FETA SALAD



Watermelon and Feta Salad image

1 clove garlic, minced or grated
1 small Fresno chile or jalapeno pepper, seeded and minced
6 to 9 tablespoons extra-virgin olive oil (depending on how acidic you like your salad dressings)
3 tablespoons red wine vinegar
Kosher salt and freshly ground black pepper
1/4 cup finely torn or finely chopped fresh mint
3 cups large diced red seedless watermelon
1/2 cup diced English cucumber
1/4 cup finely sliced scallions
1/2 cup Greek feta cheese, crumbled

Steps:

  • Add the garlic, Fresno, olive oil and vinegar to a glass jar with a lid. Season with salt and pepper, then add the mint. Place the lid on and shake vigorously to combine. Set aside.
  • When ready to serve, combine the watermelon, cucumber and scallions in a large bowl. Dress with the vinaigrette and gently toss to combine. Sprinkle the crumbled feta on top. Serve chilled.

2 cucumbers, thinly sliced
12 leaves fresh mint, thinly sliced
¼ cup olive oil
2 tablespoons apple cider vinegar
coarse salt and ground black pepper to taste

Steps:

1/2 cup vegetable oil
1/4 cup cider vinegar
1/4 cup sugar
2 tablespoons finely chopped fresh parsley
1 teaspoon salt
1/4 teaspoon hot pepper sauce
1 cup sliced almonds
1/3 cup sugar
1 head iceberg lettuce
1 head romaine lettuce
2 cups chopped celery
2 (11 ounce) cans mandarin oranges, drained
1 cup thinly sliced red onion

Steps:

  • Shake first 6 dressing ingredients in a jar and refrigerate.
  • Stir almonds and sugar in a small pan over medium heat until sugar melts and starts to caramelize and almonds are very lightly toasted.
  • Scrape into metal bowl and cool to room temperature.
  • Break up and store covered at room temperature.
  • Just before serving, put chopped lettuces in a large bowl.
  • Add celery, oranges, onions and almonds.
  • Shake dressing well and pour over salad.
  • Toss to mix and coat.

  • In a skillet, combine chicken, water, vinegar, brown sugar, 1 tablespoon oil, soy sauce and bouillon. Cook and stir over medium heat for 15-20 minutes or until chicken is tender and liquid has evaporated. , Meanwhile, for dressing, whisk mayonnaise, honey, lemon juice, parsley, mustard, onion and remaining oil until blended. Arrange salad greens on a platter. Top with oranges, chicken mixture and chow mein noodles. Sprinkle with green onion and almonds. Serve with dressing.
