I enjoy Asian foods of all kinds and Recently found myself going out to eat . I often buy Mandarin salads or Strawberry salads.. they are over sized expensive and I love them.. I was too tired to go out and wanted one. so I scrounged thru my pantry and fridge and had the makings.. I made up my Own asian dressing as i had none already bottled. I loved the salad filling and Crunchy noodles together.. as many of you may not have all the ingrediants at home.. improvise! Use other vegetables or sauces or fruit.. make something CLICK .. its one of my favorites Pam Toll

1 bag(s) mixed salad greens asian or otherwise
1 can(s) crunchy chinese noodles
1 small persian cucumber
1 package(s) mushrooms fresh( canned ok too)
1 package(s) shredded carrots
1 can(s) mandarin oranges drained
1 can(s) pineapple chunk fresh or canned
COMBINE LETTUCE SHREDDED CARROTS SLICED CUCUMBERS DRAINED MANDARIN ORANGES AND PINEAPPLE CHUNKS AND TOSS LIGHTLY , TOP WITH CRUNCHY CHINESE NOODLES CANNED OR PACKAGED.
DRESSING
1/2 cup(s) orange juice( fresh)
1/4 cup(s) rice wine vinegar
1/4 cup(s) soy sauce
6 teaspoon(s) terriakyi sauce or orange sauce
WHISK TOGETHER AND TOSS OVER SALAD LIGHTLY COVERING THE SALAD OR ADD A FAVORITE ASIAN SALAD DRESSING OF YOUR OWN.
1 medium green pepper chopped coarsely

Steps:

  • OPEN PACKAGE DUMP INTO LARGE BOWL. CHOP VEGGIES AND CHUNK PINEAPPLE, PEEL AND CLEAN MANDARIN ORANGES OR POUR OUT CAN AND RESERVE LIQUID IN A MEASURING CUP. TOSS ALL SALAD ITEMS TOGETHER , TOP WITH CRUNCHY CHINESE NOODLES
  • DRESSING IN MEASURING CUP USE ORANGE JUICE MANDARIN ORANGE CANNED JUICE PINEAPPLE JUICE FROM CAN mix in 3 TABLESPOONS OF SOY SAUCE RICE WINE VINEGAR AND USE TERRiAKI or ORANGE SAUCE . WHISK TOGETHER DRIZZLE OVER THE TOP OF SALAD.. SERVE IN LARGE BOWL LET PEOPLE SERVE THEMSELVES. Make sure you have enough of the Crunchy noodles to share. This can also be done with cooked chow mein noodles served cold. The Salad should be chilled when served. Its a good meal with a side of pot stickers or egg rolls. Or pita chips! If you choose you can buy an asian salad dressing and use on top of the salad as well.I have also used just the mandarin orange reserved juice and orange juice mixed simply together.

This Mandarin Orange Salad is the summer side dish that goes with everything. Sweet oranges, crunchy almonds and a zingy bite from a quick homemade vinaigrette that comes together in minutes.

1/4 cup oil (I like avocado oil)
2 Tbs sugar
2 Tbs vinegar
1/2 tsp salt
dash pepper
dash hot sauce
1/4 cup sliced toasted almonds
1 15oz can mandarin oranges, juice drained
16 oz fresh spinach

Steps:

  • In a jar or salad dressing container, combine the 1/4 cup oil, 2 Tbs sugar, 2 Tbs vinegar, 1/2 tsp salt, a dash of pepper and a dash of hot sauce. Whisk to combine and stir up / shake right before serving as the oil and vinegar will separate.
  • Heat a dry pan over medium high heat on your stovetop. Add 1/4 cup sliced almonds to the pan and move pan in circular motions so the nuts move around and get toasted evenly. Keep an eye on the almonds so they don't burn! Once toasted and fragrant, transfer the toasted nuts to a cup or plate until you're ready to assemble your salad.
  • Combine 16 oz fresh spinach with 1 15oz can drained mandarin oranges in a large salad bowl. Add the toasted almonds to the salad. Add as much dressing as desired to the salad and toss to evenly coat the spinach leaves.
  • Serve immediately!

Number Of Ingredients 6

1 can (20 ounces) pineapple chunks
1 can (15 ounces) mandarin oranges segments
1 package (3 ounces) tapioca pudding mix
1 package (3 ounces) cook-and-serve vanilla pudding mix
1 jar (6 ounces) maraschino cherries, drained
2 medium firm bananas, sliced

Steps:

  • Drain pineapple and oranges, reserving juices; set fruit aside. Add water to juices to equal 3 cups; pour into a large saucepan. Add pudding mixes; cook over medium-high heat, stirring constantly until thickened and bubbly, 5-10 minutes. Remove from the heat; cool. , Place the pineapple, oranges and cherries in a 2-qt. bowl; pour dressing over and stir to coat. Chill for several hours. Add bananas just before serving.
