1/2 lb large shrimp, shells removed and reserved
2 cups water
3 tablespoons olive oil
2 carrots, chopped
2 onions, chopped
1 fennel bulb, chopped
2 celery ribs, chopped
6 garlic cloves, minced
1/2 cup dry white wine
3 1/2 cups bottled clam juice
2 1/2 cups canned crushed tomatoes in puree (from a 28-ounce can)
1/4 teaspoon dried red pepper flakes
5 tablespoons chopped fresh parsley
1/2 teaspoon dried thyme
1 teaspoon salt, depending on the saltiness of the clam juice (or more)
2 bay leaves
2 lbs moderately firm white fish fillets, such as cod, halibut, ocean perch, orange roughy, pollack, red snapper (use a mixture of 2 or 3 kinds) or 2 lbs tilapia fillets, cut into 1-by-1-inch pieces
1/8 teaspoon fresh ground black pepper

Steps:

  • Put the shrimp shells and the water in a small pot; bring the water to a boil. Reduce the heat and simmer, covered, for 15 minutes. Strain the shrimp stock into a bowl. Discard the shells.
  • In a large pot, heat the oil over moderate heat. Add the carrots, onions, fennel, celery, and garlic; cook, stirring occasionally, until the vegetables start to soften, about 5 minutes.
  • Add the wine; cook until it almost evaporates, about 5 minutes. Stir in the shrimp stock, clam juice, tomatoes, red-pepper flakes, 4 tablespoons of the parsley, the thyme, salt, and bay leaves.
  • Bring to a boil. Reduce the heat and simmer, partially covered, for 25 minutes. Taste for salt and, if needed, add more.
  • Remove the bay leaves.
  • Add the fish, shrimp, the remaining tablespoon parsley, and the pepper to the pot and bring to a simmer.
  • Simmer until the fish and shrimp are just done, about 2 minutes.

When we lived in Norway we used to eat lots of fish...this recipe reminds me of a fish soup which was very common there. You can use other fish and shellfish. The potatoes and tomatoes are ingredients I have been adding over the years and listed them as optional.

2 1/2 tablespoons butter
2 1/2 tablespoons plain flour
4 -5 cups fish stock or 4 cups vegetable stock
1 medium carrot, finely chopped in strips
1 -2 cup leek, finely chopped in strips
1 -2 potato, peeled and cut into small cubes (optional)
1 (14 ounce) can chopped tomatoes (optional)
12 peeled raw shrimp (approx)
12 mussels (approx) or 12 small scallops (approx)
4 -6 ounces catfish (or fish of your own choice)
1/2 cup heavy cream
1/4 cup chopped fresh parsley
salt and pepper
2 tablespoons sour cream (optional)
2 teaspoons lumpfish caviar (optional)

Steps:

  • Melt 2 tablespoons of the butter, add the flour, stir for about 2 minutes without browning the flour.
  • Add the fish stock at intervals, stirring all the time, let it boil gently for 5-10 minutes.
  • Melt the rest of the butter and saute the carrots and leek and potatoes, if using, for approx 10 minutes.
  • Add the tomatoes (if using) and simmer for another 5 minutes, then add the shrimps, mussels, fish and the cream.
  • Simmer for another 5 minutes, or until the fish and shellfish are tender.
  • Add the parsley and salt and pepper to taste.
  • Serve garnished with sour cream and the lumpfish caviar.

BASQUE FISH SOUP

I just re-found this recipe while going through my Mom's old file box. She used to make this quite often when I was a child. She probably found the recipe in the newspaper. This is a quick, easy and delicious recipe using ingredients that I usually have on hand. It's also very versatile as for substituting....I didn't have fresh parsley so I used dried. I only had 1 can of diced tomatoes so I used the can of Ro-tel, which I did have on hand. Also, use any combo of fish/shellfish...tonight I made this using 2 small tilapia fillets and 1/2 lb. of bay scallops, it was a nice combo. This is a great cold weather soup....it will give you the warm fuzzies. I served it with freshly baked dinner rolls, though a crusty bread would be nice too.

1 medium onion, chopped
1/2 cup chopped celery, with leaves
1 large garlic clove, minced
2 tablespoons butter
2 (14 1/2 ounce) cans diced tomatoes, undrained
1/2 cup dry white wine
1/2 cup minced fresh parsley
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/4 teaspoon thyme
1 lb frozen fish fillet, thawed, cut into chunks (can use any combo of fish or shrimp or scallops)

Steps:

  • In a large saucepan, saute onions, celery and garlic in butter until tender, about 7 minutes.
  • Stir in tomatoes, wine, parsley, salt, pepper and thyme. Cover and simmer 30 minutes.
  • After the 30 minute simmer you can refrigerate or freeze the tomato mixture, if desired and continue as directed below**.
  • Add the fish and simmer 7-10 minutes or until the fish is opaque and flakes easily.
  • **reheat tomato mixture by covering and simmering for about 10 minutes or until hot. Continue as directed in step #4.

2 lbs fish bones, heads and trimmings of various kinds of white-fleshed fish
2 quarts water
2 large trimmed celery ribs
1 large thickly-sliced onion
3 sprigs parsley
2 large ripe tomatoes, peeled seeded,and diced
salt
1 clove crushed garlic
2 sprigs finely minced parsley, additional
Tabasco sauce
1 lb crabmeat
1/2 lb squid, prepared (for cooking)
6 mussels, well-scrubbed
1 lb lobster (double crab meat if unavailable) (optional)
6 clams, well-scrubbed
1 1/2 lbs halibut or 1 1/2 lbs sea bass, fish and the like cut into 1 1/2 pieces

Steps:

  • Place the first 7 ingredients except the salt in a 6.
  • quart pot.
  • Bring to a boil, cover, lower the heat, and simmer for 1 hour.
  • Skim if necessary.
  • Cool slightly and pour through a fine strainer lined with several layers of clean cheesecloth.
  • Papertowels can be substituted.
  • Season with salt very delicately so as not to overpower the flavor of fish.
  • Add the garlic, parsley, and tabasco sauce to the fish broth to give it a piquant flavor.
  • Add the seafood and simmer, half-covered, over the lowest possible heat for 2 hours.
