MAMMA'S SKINNY QUESADILLAS

These quick and easy quesadillas may be a lightened-up recipe, but they're big in flavor. The seasoning on the chicken is a typical Mexican seasoning, but adding Creole spice too gives it a little something different. Lime juice adds a nice zing. The chicken breasts alone are so good we found ourselves sneaking bites and hoping...

Number Of Ingredients 15

SPICE MIX FOR CHICKEN
1 tsp cumin
1 tsp paprika
1 tsp chili powder
1 tsp Creole seasoning
salt and pepper, to taste
1 lb chicken breasts
1 Tbsp olive oil
1/2 lime
SKINNY QUESADILLAS
5 whole wheat low-carb tortillas
2 c shredded Mexican blend cheese, low-fat
1 can(s) reduced sodium black beans (15 oz)
reduced fat sour cream
salsa (see my recipe for mamma's homemade salsa)

Steps:

  • 1. Mix together dry ingredients in spice mix.
  • 2. Sprinkle spice mix on both sides of the chicken breasts.
  • 3. Cook chicken on both sides in olive oil in a saute pan until done. Squeeze lime juice on chicken once cooked and turn off the heat.
  • 4. Clean out saute pan and cut the chicken into small pieces.
  • 5. Drain and rinse black beans and pat dry.
  • 6. Cook quesadillas one tortilla at a time. Fold tortilla in half. Place in saute pan and open. Sprinkle some cheese on half of the tortilla.
  • 7. Then add chicken.
  • 8. Sprinkle in some beans.
  • 9. Add more cheese.
  • 10. Fold the tortilla over so that both halves are surrounding them yummy chicken, beans, and cheese.
  • 11. Place lid on saute pan. Cook each tortilla covered for about 2 minutes. Then carefully flip, replace lid, and cook for about one more minute.
  • 12. Place each quesadilla on its own plate and top with sour cream and salsa. Cut in half, thirds, or quarters, and enjoy!

MAMA'S QUESADILLAS

This is how I make them at home! These are dsil's favorite- with no onion and tomato and extra sour cream! lol The great thing about quesadill's is you can tailor them to your exact tastes and it is a great way to sneak some veggies into those veggie haters. Try adding some tomato, avocado, spinach, mushrooms, etc.. inside the tortilla. Great way to introduce herbs too! Try cilantro, cumin, etc here! hope you enjoy!

4 ounces monterey jack cheese or 4 ounces monterey jack pepper cheese
1/4 cup green onion, chopped, white and green parts- about 4
1/2 cup cooked chicken, shredded (optional)
4 flour tortillas
salsa (optional)
sour cream (optional)

Steps:

  • Heat a skillet over medium high heat.
  • Meanwhile, sprinkle cheese, chicken- if using, and onion on top of one tortilla. Then sprinkle a little more cheese on top. Top with another flour tortilla to make a sandwich.
  • Spray hot skillet with cooking spray. Lay tortilla sandwich in pan and cook til browned.
  • Flip gently to other side and cook until browned. Remove to cutting board and let rest for about 2 minutes before cutting.
  • Slice with a knife into four pieces- like cutting a pie or a pizza.
  • Serve and enjoy!
