ST MARY'S COUNTY STUFFED HAM image

Number Of Ingredients 12

16-20 bone in ham 12 spring onions whit and green parts
15 collard leaves
2 largge firm heads of cabbage 2 lbs of kale 1/2 lb watercress
10 large onions
1 bunch celery
1 tbs MSG (optional)
2Tbs cracked Black pepper or pepper corns
1 tbsp ground pepper
4 tabs cayenne
2 tabsp celery seeds
3 tabsp mustard seeds
3 tabsp dry mustard

Steps:

  • Chop fresh ingredients wrap in cheese cloth and immerse in boiling water for 7 min,while chopped ingredients cooking mix spices , After 7 min remove chopped ingredients from cheese cloth and let cool, keep covered pot simmering add bones (for boned ham),Make 2 in slits around ham total 16-18,Spreed stuffing in large pan add 1/2 spice mixture, repeat and mix well,Pack stuffing in boned central cavity and slits,Place ham in clean cheese cloth,Place in pot of water for 1 hour less than 20 min/lb.After cooking let ham sit in covered pot for 1 hour. Remove drain and place in refrigerator
