MAMA'S LOVE LEMON BARS
I'm obsessed with lemon and over the years perfected this lucious gooey lemon bar recipe. Everyone that tries it is instantly hooked and just as obsessed. They are simple to make but i usually only make them for people I love because I don't want to part with them!

Steps:
- 1. Preheat oven to 325 degrees. Mix the first three ingredients together and press into greased 9x13 pan. Bake for 25 minutes.
- 2. While the crust is baking mix all other ingredients together EXCEPT for the baking powder.
- 3. After the crust is done baking take it out. Immediately add the baking powder to the lemon mixture, mixing it well, then pour it into the pan, on top of the crust. Bake for another 25 min. Remove from oven to cool.
- 4. Let bars cool then dust with powdered sugar. Cut into squares at desired size and enjoy!

Steps:
- Mix crust ingredients together.
- Pat mixture into a 9x13-inch pan.
- Bake 20 minutes at 350°F.
- While crust is baking, combine these filling ingredients first: beaten eggs, sugar, and lemon juice.
- Gradually add flour and baking powder to the mixture.
- Mix well until "frothy".
- Immediately after taking crust out of oven, pour in filling.
- Bake 20-25 minutes at 350°F
- Tip: Watch filling at 20 minutes - it should turn a little brown spotted on top, but not a lot.
- Sprinkle with powdered sugar when cool.
MAMA'S LEMON SOUR COOKIE BARS
These were my Mama's best loved bar cookies. Everybody who had them for the first time always wanted the recipe, and the people who had tasted them before always begged for more.

Steps:
- Preheat the oven to 350°.
- Mix the flour and butter together until it resembles a very fine crumb.
- Sprinkle evenly into the bottom of an 11 X 7" pan, and pat lightly to smooth out any lumps.
- Bake for 10 minutes at 350°.
- Meanwhile beat the eggs, and mix in the brown sugar, nuts, coconut, vanilla and baking powder.
- Spread this mixture onto the baked crust as soon as you take it from the oven.
- Return the pan to the oven and bake for an additional 20 minutes at 350°.
- Mix the lemon rind and juice with the confectioner's sugar to make a creamy glaze.
- Spread the lemon glaze evenly over the top of the hot cookie mixture as soon as you take it from the oven.
- Cool completely before cutting into squares.
- Store in an airtight container as the lemon glaze will dry out if left out for more than a day.
- (This is not usually a problem because there are never any leftovers!)**I use the Angel Flake coconut in the can or the bag.
- Any brand of moist, flaked coconut will do, but you do not want to use the dry, shredded coconut for this recipe.
