OLD FASHIONED BUTTER ROLLS

2 cups self-rising flour
1/2 cup shortening
1/2 cup cold water
1/2 cup unsalted butter, very soft
1/4 cup sugar
1/2 teaspoon ground nutmeg (or cinnamon)
2 cups milk
2/3 cup sugar
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350°F and lightly spray a 9x13-inch baking dish with nonstick cooking spray.
  • In a large bowl, cut the shortening into the flour using a pastry blender or two forks. The goal is to get the shortening cut into tiny pea-size pieces.
  • Add the water and stir until combined. Use your hands to gently knead the dough until it holds together.
  • Turn the dough out onto a lightly floured surface and roll the dough into a thin rectangle that is about 10x16-inches. Spread the soft butter to cover the dough then sprinkle with the sugar and nutmeg (or cinnamon). Carefully and tightly roll the dough up jelly roll style and pinch to seal the long edge. Cut the dough into 12 even rolls and place them into the prepared dish.

2 cups all-purpose flour
½ teaspoon salt
1 cup shortening
½ cup water
¾ cup butter, softened
¼ cup white sugar
½ teaspoon ground nutmeg
2 cups milk
⅔ cup white sugar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 7x11 inch baking pan.
  • In a large bowl, mix together flour and salt. Cut shortening in thoroughly with a pastry blender until mixture resembles breadcrumbs. Stir in water and press dough together with your hands. Roll out pastry into a large rectangle. Spread the butter evenly over the pastry, then sprinkle on 1/4 cup sugar and nutmeg. Roll up the dough jelly roll style and pinch to seal. Cut into 12 even slices. Place the rolls in the prepared pan.
  • In a small saucepan, heat milk, 2/3 cup sugar and vanilla until mixture begins to bubble. Pour milk mixture over rolls.
  • Bake in preheated oven until brown, about 30 to 40 minutes.

¾ cup milk
¼ cup butter
¼ cup white sugar
1 teaspoon salt
4 ½ teaspoons active dry yeast
1 teaspoon white sugar
½ cup warm water (110 degrees F/45 degrees C)
3 ½ cups bread flour, divided, or as needed
1 egg, lightly beaten
1 tablespoon all-purpose flour, or more as needed, for dusting

Steps:

  • Pour milk into a glass 2-cup measuring cup and heat in the microwave until it starts to boil and climb the sides, about 1 minute. Add butter, 1/4 cup sugar, and salt to the scalded milk; set aside to cool until it gets below 110 degrees F (45 degrees C).
  • Dissolve yeast and 1 teaspoon sugar in warm water in a large bowl. Let stand until the yeast softens and begins to form a creamy foam, about 10 minutes.
  • Pour milk mixture into the yeast mixture; add 2 cups bread flour and egg. Stir the mixture with a wooden spoon until smooth. Add remaining flour, 1/2 cup at a time, mixing thoroughly after each addition, until the dough is smooth and a little tacky.
  • Turn dough out onto a sheet of flour-dusted waxed paper and lightly knead to pull dough together; shape into a ball. Place dough in a large, lightly-oiled bowl, and turn to coat. Cover with a towel and let rise in a warm place for about 30 minutes.
  • Line a baking sheet with parchment paper. Divide dough into thirds. Break each third into six evenly sized balls and arrange onto prepared baking sheet. Cover balls with a towel to rise further for another 30 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Bake in preheated oven until browned, about 15 minutes.

MOM'S CABBAGE ROLLS

My mom made the best Ukrainian cabbage rolls, simply filled with rice and bacon and cooked in a tomato sauce. This recipe is the closest I could find to hers.

1 cabbage
1 cup long-grain rice
3/4 lb bacon, finely chopped
2 onions, finely chopped
salt
1 (19 ounce) can tomato juice

Steps:

  • With a large, sharp knife, cut out the core from the cabbage.
  • Place the cabbage in a deep pot and pour boiling water into the core until the cabbage is completely covered.
  • Let stand until the outer leaves can be separated, then parboil or steam the leaves just until soft and pliable.
  • Continue with the remainder of the cabbage.
  • In a saucepan, bring 2 cups of water to a boil; add the rice.
  • Reduce the heat to low and cook, covered, for 15 minutes; drain.
  • Meanwhile, in a separate saucepan, cook the bacon over medium heat until all the fat is drawn out.
  • Add the onions; cook until lightly browned.
  • Add to the cooked rice; season with salt to taste.
  • Line a roasting pan with the outer cabbage leaves.
  • Place a spoonful of the rice mixture onto each inner cabbage leaf; roll up, tucking in the ends, and place in the pan.
  • If necessary, trim out the centre rib of the leaf to make rolling easier.
  • Pour tomato juice over the cabbage rolls.
  • Cover with more cabbage leaves.
  • Cover and bake in a 350 degree F oven for 1-1/2 to 2 hours or until tender.

Number Of Ingredients 12

pie curst ingredients=
2.5 c. all-purpose flour
1.5 sticks cold unsalted butter cut into small pieces
1/4 c. crisco shortening chilled
1/2 tsp. salt
4 to 6 Tbs. ice water
hand held pastry blender or two lg. forks for blending mixture
filling ingredients=
one stick melted butter
1 c. sugar
1.5 tsp. vanilla
1 c. whole milk

Steps:

  • Blend flour, butter, shortening, and salt in bowl with blender or forks until coarse meal consistency. Add 4 Tbs. ice water and gently mix until blended. If dough doesn't stick together when squeesed add more ice water a Tbs. at a time until blended and able to just form a ball. Be careful not to overwork or pastry will be tough. Turn out mixture on lightly floured surface, roll out with a rolling pin into a rectangle jellyroll shape and roll pie thin. Can divide and make smaller rectangles if space is limited. Spread half the melted butter over the rolled pie dough. Sprinkle 1/2 cup of the sugar evenly over the butter. Start at one short end and roll jellyroll fashion to the other end. Cut into one inch sections and transfer to a pan and lay flat. Add the milk, remaining sugar, remaining butter, and vanilla together in a bowl and wisk to blend. Pour evenly over rolls. Bake at 400 degrees until light golden brown on top and filling is no longer soupy but more like a stiff pudding. This will take approximately 40 minutes. Serve warm from the oven.
