MAMA BEAR'S PORRIDGE (OATMEAL) COOKIES

Steps:
- 1. Preheat the oven to 350º F. Grease two cookie sheets.
- 2. Sift the flour, baking soda, nutmeg, cinnamon, and salt into a big bowl. Add the oats and mix well.
- 3. Beat together the butter, brown and white sugar, egg, milk, and vanilla extract in another bowl. Add the sugar mixture to the flour and oatmeal mixture, and mix until all ingredients are moist.
- 4. Fold into the well-mixed batter: 1 cup of raisins, and 1/2 cup walnuts. (For variations, you can mix and match the same amounts of coconut, peanuts, and/or chocolate chips.)
- 5. Drop mixture by tablespoons onto greased cookie sheets. Bake for 8-12 minutes, or until golden brown. Makes 40 cookies.
GRANDMOTHER'S OATMEAL COOKIES
This is the best Oatmeal Cookie I have ever tasted and is my family's favorite. This is a recipe that I have had for years that a friend of mine gave me.

- Beat eggs, and stir in raisins and vanilla. Refrigerate for at least an hour.
- Preheat oven to 350 degrees F (175 degrees C).
- Cream together shortening, brown sugar, and white sugar until light and fluffy. Combine flour, baking soda, salt, and cinnamon; stir into the sugar mixture. Mix in raisins and eggs, then stir in oats and walnuts. Roll dough into walnut sized balls, and place 2 inches apart on ungreased cookie sheets.
- Bake for 10 to 12 minutes in preheated oven, or until edges are golden. Cool on wire racks.

MAMA BEAR'S PORRIDGE
This is almost like rice pudding, it's a stick-to-your-ribs breakfast! Don't worry about adding raw eggs, they will cook completely in the porridge! This can also be made in the microwave, but you will need to remove a couple of times to stir.

Steps:
- In a large heavy-bottomed saucepan bring 3 cups water to a boil.
- In another bowl mix together powdered milk, oats, cinnamon and sugar (if using, can use white or brown sugar) quickly stir into the boiling water; return to a boil, then reduce heat and simmer for about 6-10 minutes or until the mixture is desired thickness.
- Remove from heat and mix in the raisins and vanilla.
- Beat in eggs one at a time, mixing well after each addition (the hot porridge will cook the eggs completely).
- Divide the porridge between 3 or 4 bowls, then top with a teaspoon of butter (or more to taste) and then about 1/4 cup of cream or milk.
- Drizzle with honey as desired.
MAMA'S CHEWY OATMEAL COOKIES
Chewy and delicious. Everyone that tries my oatmeal cookies gets hooked! I recreated this recipe from memory from my childhood. They are so good, they have a place in every woman's cookbook in my family.

- Beat brown sugar, shortening, milk, egg, and vanilla extract in a bowl until mixture is creamy. Stir oats, flour, baking soda, and salt into moist ingredients. Drop dough by spoonful onto ungreased baking sheets.
