A popular frozen dessert from India, try making this kulfi with a malt twist alongside delicious caramelised bananas - the perfect end to an Indian meal

130g jaggery (palm sugar)
300g evaporated milk
300g double cream
20g Horlicks or Ovaltine
1 tsp salt
100g salted peanuts , chopped
30g sugar
60g honey
10g coconut oil
2 bananas , cut into slices 1cm thick

Steps:

  • Melt the jaggery over a medium heat, stirring to stop it catching. Add the evaporated milk, cream and Horlicks. Whisk well, then reduce to a simmer and cook for about 5 mins until thickened. Add the salt and whisk it through. Take off the heat and cool to room temperature, then either pour it into a plastic container and freeze for at least 6 hrs, or pour into freezer-proof bowls, cover with cling film and freeze. Will keep for two weeks in the freezer.
  • Melt the sugar, honey and oil together in a pan over a low heat and cook until you have a dark caramel. Add the banana and glaze it in the caramel for 2 mins on each side. Remove and tip onto baking parchment, being careful as the slices will be very hot. Spoon the kulfi into bowls and top with the caramel bananas and salted peanuts.

Kesar kulfi is a creamy delicious ice cream dessert that is made from thickened milk, sugar and other flavoring ingredients.

2 cups full fat milk
1 cup milk ((mix with corn starch or arrowroot powder))
2 teaspoons corn starch ((white corn flour or arrowroot powder))
¼ cup organic sugar
¼ teaspoon cardamom powder ((elaichi))
1 Pinch saffron ( strands or kesar (optional) (about 10))
10 to 15 pistachios ((or almonds & cashews))
¼ cup cream (or malai or mawa (optional, tastes rich))
4 chopped pistas ( for garnish)

Steps:

  • Bring 2 cups milk to a boil in a heavy bottom pot. Allow it to boil further for 10 mins on a medium flame. Keep stirring often to prevent the milk solids getting burnt at the bottom.
  • Meanwhile add pistachios along with saffron to a blender jar and make a slightly coarse powder. Set this aside.
  • After 10 minutes of boiling the milk, add sugar and continue to boil for another 10 to 12 mins. Keep stirring often to prevent the milk getting scorched at the bottom.
  • Add corn flour to 1 cup milk and stir well. Make sure there are no lumps.
  • Lower the flame completely and pour this to the pot. Keep stirring and boil.
  • Add the nuts powder and cardamom powder. Mix well and make sure there are no lumps.
  • Pour cream if using and Cook for 6 to 8 minutess more. Keep stirring. Under 8 mins it turns thick. It should be of pouring consistency.
  • Switch off the stove & Cool this completely. The mixture thickens further upon cooling.
  • Pour this to kulfi molds, steel cups or Popsicle molds. Cover with a foil and gently insert a ice cream stick.
  • Freeze overnight. Immerse these in a bowl filled with water for 1 min or rub the moulds in between your palms for 30 seconds.
  • Gently hold the stick and demould it. Sprinkle chopped pistas and serve kesar pista kulfi immediately.

For the caramel:
1 cup sugar
2 tablespoons salted butter, cut into pieces and at room temperature
1/2 cup heavy cream, warmed
1 tablespoon bourbon
1 teaspoon fresh lemon juice
3/4 teaspoon kosher salt
For the bread pudding:
Salted butter, for the baking dish
1 1-pound loaf brioche, crusts removed, cut into 1/2-inch cubes (about 13 cups)
5 large eggs
3/4 cup sugar
1/2 teaspoon kosher salt
4 cups whole milk
1 cup heavy cream
1 tablespoon vanilla extract
3 bananas, halved lengthwise and sliced 1/2 inch thick
Sea salt, for sprinkling

Steps:

  • Make the caramel: Combine the sugar and 1/4 cup water in a medium saucepan over medium heat, stirring just until the sugar dissolves. Cook, gently swirling the pan but not stirring, until amber, about 10 minutes. Brush any sugar crystals off the side of the pan with a wet pastry brush. Remove from the heat and carefully whisk in the butter, heavy cream, bourbon, lemon juice and kosher salt (the mixture will bubble). Pour into a bowl and set aside.
  • Make the bread pudding: Preheat the oven to 350 degrees F and butter a 9-by-13-inch baking dish. Spread the bread cubes on a rimmed baking sheet and bake until dry and golden, about 20 minutes. Let cool completely.
  • Whisk the eggs, sugar and kosher salt in a large bowl, then whisk in the milk, heavy cream and vanilla until smooth. Fold in the toasted bread and the banana slices. Transfer half of the mixture to the prepared baking dish and spread in an even layer. Drizzle with 1/2 cup of the caramel, then top with the remaining bread mixture. Cover with plastic wrap and refrigerate at least 1 hour or overnight. Cover and refrigerate the remaining caramel until ready to serve.
  • Preheat the oven to 350 degrees F. Sprinkle the bread pudding with sea salt and bake until golden brown and set, about 1 hour, 15 minutes. Warm the remaining caramel and drizzle on top.
