These cookie bars are simply heavenly. Easy to make and delicious.

1 cup butterscotch chips
¼ cup butter
2 eggs
½ teaspoon vanilla extract
¾ cup all-purpose flour
1 teaspoon baking powder
¾ teaspoon salt
1 cup brown sugar
1 cup semi-sweet chocolate chips
½ cup chopped walnuts
½ cup raisins

Steps:

  • Place butterscotch chips and butter into a glass bowl. Heat in the microwave for about 3 minutes, stirring at 30 second intervals until smooth. Set aside to cool until firm.
  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan.
  • In a large bowl, beat the butterscotch chip mixture with eggs and vanilla until well blended. Combine the flour, baking powder, and salt; stir into the batter until evenly mixed. Mix in the brown sugar, chocolate chips, walnuts, and raisins. Spread the batter evenly in the prepared pan.
  • Bake for 25 minutes in the preheated oven, just until the bars begin to pull away from the sides of the pan. Cut into squares while warm.

This recipe was in a Family Circle magazine back in 2009 and was from Margaret Grubb, North Charleston, SC. It's a keeper.

1/2 c butter
1/3/4 c light brown sugar
2 eggs
2 c self-rising flour
1 tsp rum extract (calls for butter rum extract)
1 c chopped pecans
confectoners sugar for dusting

Steps:

  • 1. Preheat oven to 350 degrees. Coat a 13X9X2-inch baking dish with nonstick cooking spray; set aside.
  • 2. Melt butter in medium-sized saucepan. Remove pan from heat and add sugar, eggs and flour to saucepan and mix until well blended. Stir in extract and pecans.
  • 3. Pour into prepared baking dish and bake for about 25 minutes or until toothpick inserted into center comes out clean.
  • 4. Cool completely and dust with confectioners sugar. Cut into 24 squares and serve.

These melt-in-your mouth bars were served at a function I recently attended. The malted milk powder adds a tasty twist to these bars. A great accompaniment to a cup of coffee or cold glass of milk!

1 c all purpose flour
1/2 c powdered malted milk
1 tsp baking powder
1/2 tsp salt
1/3 c shortening, melted
1 c brown sugar
2 eggs
2 Tbsp milk
1 tsp vanilla extract
1/2 c chopped pecans

Steps:

  • 1. 350 degree oven. Coat a 9x 13" pan with cooking spray.
  • 2. In medium bowl, sift together flour, malted milk powder, baking powder, and salt. In a large bowl, add melted shortening to sugar. Add eggs; mix well. Add milk, vanilla, nuts, and flour mixture. Mix well and pour into prepared baking dish.
  • 3. Bake 25 - 30 minutes. Mark into bars while hot. Remove from pan when cool. Note: Add 1 cup butterscotch chips for a truly rich flavor. DELISH!
