SZECHUAN SPICY PEANUTS (黄飞鸿花生, HUANG FEI HONG SPICY PEANUTS)
Szechuan spicy peanuts are an addictive beer accompaniment. Crunchy, salty, slightly sweet, and fiercely hot, with the citrusy tingle of numbingness. You won't able to stop once you pop the first peanut into your mouth.

Steps:
- Cover peanuts with warm water. Let soak for 30 minutes to 4 hours. Peel and discard the skin. Drain and pat dry peanuts with paper towel.
- Combine all the ingredients for the spice mix in a small bowl.
- Add peanuts into a wok and oil to cover. Turn on medium heat. Cook until the peanuts start to sizzle. Turn to medium low heat. Cook and stir occasionally until the surface turns pale yellow. Transfer peanuts using a colander onto a plate layered with paper towels. Remove extra oil from the wok and reserve just 1 teaspoon.
- (Optional) Add chili peppers and Sichuan peppercorns into the same wok. Cook and stir until fragrant.
- Return peanuts to wok. Add the spice mix. Stir to mix well so the peanuts are evenly covered with spices. Transfer peanuts onto a big plate to cool. Don't worry if the peanuts are not crispy enough when they're still warm. They'll crisp up and become crunchy once completely cooled.
- Serve immediately as a snack or store in an air-tight container.
FRIED PEANUTS
This is a recipe that my mother would make for "refreshment" night. Saturday night was a special night for our family. We would all have our own glass bottle Coca Cola and whatever was the refreshment for that night. We would then sit down and watch Saturday Night Movies on channel 10.

- 1. Heat oil.
- 2. Place peanuts in the hot oil.
- 3. Stir constantly until they just begin to turn red. If you cook them any longer, they will taste scorched.
- 4. Remove from pan (a black skillet works best). Place on paper towels to drain.
- 5. Salt to taste.
- 6. Store any leftovers in an air-tight container. Leftovers were never a problem at the Sugg household.

FRIED PEANUTS
Fried peanuts will amaze your guests with their crunch and fresh, distinctive flavor. Add different kinds of nuts if you like, as long as they are "raw" to begin with (the industrial shelling process uses enough heat to cook the nuts, at least a little bit). The best raw peanuts are usually found in the fall (peanuts are an exception; the best season for other nuts is spring), when they are fresh and tender. Like any nuts, these are great with drinks, especially beer.
Yield makes 2 cups, enough for 8 as a snack

- Put at least 1 inch of oil in a deep, fairly narrow saucepan and turn the heat to medium-high. When the oil reaches 300°F (this is on the cool side for frying; be careful not to overheat), add the peanuts and cook, stirring occasionally, until they are a rich golden brown, about 5 minutes.
- Remove the peanuts with a slotted spoon, drain on paper towels, and sprinkle with salt. Strain and save the oil (covered and refrigerated) for another use; it will be great for using in stir-fries. Serve at room temperature.
- Cook the peanuts with 6 unpeeled garlic cloves and 4 small dried red chiles. Drain and season with salt and fresh lime juice to taste.
- Combine 1 teaspoon curry powder (pages 592-593), 1/2 teaspoon superfine sugar, and salt and cayenne to taste. Cook the peanuts as directed and sprinkle on the spice mixture. Taste and adjust the seasoning.
- Combine 1 teaspoon garam masala (page 594) with salt and cayenne to taste. Cook the peanuts as directed and sprinkle on the spice mixture. Taste and adjust the seasoning.
