1-1/2 cups sugar
2/3 cup unsweetened applesauce
1/3 cup canola oil
2 egg whites
1 egg
2 teaspoons vanilla extract
3 cups all-purpose flour
2 teaspoons ground cinnamon
1-1/2 teaspoons baking powder
1 teaspoon salt
3/4 teaspoon ground nutmeg
1/2 teaspoon baking soda
2 cups shredded zucchini
1 can (8 ounces) unsweetened crushed pineapple, drained
1/3 cup chopped walnuts

Steps:

  • In a large bowl, beat the sugar, applesauce, oil, egg whites, egg and vanilla until well blended. Combine the flour, cinnamon, baking powder, salt, nutmeg and baking soda; gradually beat into sugar mixture until blended. Stir in the zucchini, pineapple and walnuts. , Transfer to two 8x4-in. loaf pans coated with cooking spray. Bake at 350° for 50-60 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.

1 cup packed brown sugar
1 teaspoon vanilla extract
2 cups shredded zucchini
1 cup grated peeled apples
1/2 cup chopped pecans

Steps:

  • In a large bowl, combine the flour, baking soda, cinnamon, nutmeg and salt. In a large bowl, beat the eggs until frothy. Add the oil, applesauce, sugars and vanilla; beat until blended. Lightened my usual recipe by using less oil, sugar and eggs. Using some whole wheat flour does make the loaves a little more dense.

Number Of Ingredients 15

3 c all-purpoe flour (can substitute 1 cup with whole wheat flour)
1/2 tsp baking soda
2 tsp baking powder
2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp cloves
1/4 tsp salt
2 eggs
1/3 c canola oil
1/2 c unsweetened applesauce
1 1/2 c sugar
1 tsp vanilla
2 c shredded zucchini
1/2 c chopped nuts
1/2 c raisins (soak in boiling water for 10 minutes to soften and then drain)

Steps:

  • 1. In a large bowl, combine the first 7 ingredients.
  • 2. In another large bowl, beat the eggs until frothy. Add the oil, applesauce, sugar and vanilla. Beat until blended.
  • 3. Stir into the dry ingredients until just moistened. (Will seem dry) Fold in the zucchini, raisins and nuts. (I used golden raisins for the color.)
  • 4. Divide among three 8 x 4 loaf pans that have been sprayed with regular or baking PAM.
  • 5. Bake at 350° for 40 - 50 minutes or until loaves test done. Cool for 10 minutes, remove from pans and cool completely on wire racks.
