1-1/3 cups butter, softened
2-2/3 cups sugar
4 large eggs, room temperature
3 teaspoons vanilla extract
2 cups all-purpose flour
1 cup baking cocoa
1/2 teaspoon salt
Confectioners' sugar, optional

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. Combine flour, cocoa and salt; gradually beat into creamed mixture. , Spread into a greased 13x9-in. baking pan. Bake until the top is dry and the center is set, 25-30 minutes. Cool completely in pan on a wire rack. If desired, dust with confectioners' sugar.

Steps:

  • Preheat the oven to 350°F (177°C). Line an 8x8-inch baking pan with aluminum foil, leaving some overhang on the sides for easy removal. Grease the foil and set aside.
  • Add the melted butter to a large mixing bowl. Whisk in the cocoa, eggs, sugar and vanilla until combined.
  • Stir in the flour and salt with a rubber spatula or wooden spoon until incorporated.
  • Fold in the walnuts. Pour the batter evenly into the prepared baking pan.
  • Bake for 20-25 minutes until set and a toothpick inserted in the center comes out with only a few moist crumbs.

1 stick unsalted butter, cut into large pieces
6 ounces bittersweet chocolate, chopped
1 1/2 cups sugar
3 large eggs
1/4 cup unsweetened Dutch-process cocoa powder
1/2 teaspoon coarse salt
1/2 cup plus 2 tablespoons all-purpose flour, sifted

Steps:

  • Preheat oven to 350 degrees. Line an 8-inch square baking pan with parchment paper, leaving a slight overhang on all sides. Melt butter and chocolate in a double boiler or a heatproof bowl set over a pot of simmering water, stirring until smooth. Remove from heat, and whisk in sugar. Whisk in eggs, one at a time, until combined. Whisk in cocoa and salt. Fold in flour until combined.
  • Pour batter into pan. Bake until set and a toothpick inserted into the center comes out with moist crumbs, 35 to 40 minutes. Let cool slightly in pan, about 15 minutes. Lift brownies from pan using parchment. Remove parchment and transfer to a wire rack. Let cool completely. Cut into 9 squares.

1/2 cup (115g) salted or unsalted butter*
two 4-ounce (226g) semi-sweet chocolate bars, coarsely chopped*
3/4 cup (150g) granulated sugar
1/4 cup (50g) packed light or dark brown sugar
3 large eggs
1 teaspoon pure vanilla extract
1/2 cup + 2 Tablespoons (79g) all-purpose flour (spoon & leveled)
2 Tablespoons (10g) unsweetened natural or dutch-process cocoa powder
1/4 teaspoon salt
1 cup (180g) semi-sweet chocolate chips
optional: chocolate buttercream

Steps:

  • Melt the butter and chopped chocolate in a medium saucepan on medium heat, stirring constantly. Or melt in a large microwave safe bowl in 20 second increments, stirring after each. Remove from the heat, pour in a large mixing bowl, then allow to slightly cool for 10 minutes.
  • Adjust the oven rack to the lower third position and preheat oven to 350°F (177°C). Line the bottom and sides of a 9×9 inch square baking pan* with aluminum foil or parchment, leaving an overhang on all sides. Set aside.
  • Whisk the granulated and brown sugars into the cooled chocolate/butter mixture. Add the eggs, one at a time, whisking until smooth after each addition. Whisk in the vanilla. Gently whisk in the flour, cocoa powder, and salt. Once combined, fold in the chocolate chips.
  • Pour/spoon batter into the prepared baking pan and bake for 35-36 minutes or until the brownies begin to pull away from the edges of the pan. A toothpick inserted in the center should come out with only a few moist crumbs when the brownies are done. All ovens are different, so keep an eye on them after 30 minutes and use the toothpick test to see when yours are finished.
  • Allow the brownies to cool completely in the pan set on a wire rack. Once cooled, lift the foil out of the pan using the overhang on the sides. Frost with chocolate buttercream, if desired. Cut into squares. For neat squares, I use a very sharp knife and wipe it clean with a paper towel after each cut.
  • Unfrosted brownies stay fresh in an airtight container at room temperature for 1 week. Frosted brownies stay fresh in an airtight container at room temperature for 2 days or in the refrigerator for up to 1 week.

Rich brownies! A combination of several recipes I have tried over the years. I love moist, gooey brownies and these are them! I like them topped with my Fluffy Butter Cocoa Frosting. Decadent!

1 cup margarine
1 cup baking cocoa
2 cups sugar
4 eggs
2 teaspoons vanilla
1 cup all-purpose flour
1/4 teaspoon salt
chopped nuts (optional)

Steps:

  • Set oven on 350.
  • Coat 11 1/2 x 7 1/2 glass pan with margarine or butter (or slightly larger for thinner brownies*might have to adjust cooking time*).
  • In a saucepan or glass bowl melt margarine.
  • Mix in by hand eggs and vanilla, then flour, salt, cocoa and sugar till moistened.
  • With mixer on low/med beat just till mixed.
  • Don't overbeat.
  • Fold in nuts and/or chocolate chips if desired.
  • Pour into prepared pan and level with spatula or spoon.
  • Bake 25-30 minutes, or test with toothpick.
  • I like mine gooey in the middle.
  • Cool and frost if desired.

85g dark chocolate , 70% cocoa solids, chopped into small pieces
85g plain flour
25g cocoa powder
¼ tsp bicarbonate of soda
100g golden caster sugar
50g light muscovado sugar
½ tsp coffee granules
1 tsp vanilla extract
2 tbsp buttermilk
1 egg
100g mayonnaise (I used Hellman's)

Steps:

  • Heat oven to 180C/fan 160C/gas 4. Pour enough water into a small pan to one-third fill it. Bring to the boil, then remove the pan from the heat. Put the chopped chocolate into a large bowl that will fit snugly over the pan without touching the water. Sit the pan over the water (still off the heat) and leave the chocolate to melt slowly for a few mins, stirring occasionally until it has melted evenly. Remove the bowl from the pan, then let the chocolate cool slightly.
  • Meanwhile, lightly oil and base-line a 19cm square cake tin that is 5cm deep. Combine the flour, cocoa and bicarbonate of soda. Using a wooden spoon, stir both the sugars into the cooled chocolate with the coffee, vanilla and buttermilk. Stir in 1 tbsp warm water. Break and beat in the egg, then stir in the mayonnaise just until smooth and glossy. Sift over the flour and cocoa mix, then gently fold in with a spatula without overmixing.
  • Pour the mixture into the tin, then gently and evenly spread it into the corners. Bake for 30 mins. When a skewer is inserted into the middle, it should come out with just a few moist crumbs sticking to it. If cooked too long, the mix will dry out; not long enough and it can sink. Leave in the tin until completely cold, then loosen the sides with a round-bladed knife. Turn out onto a board, peel off the lining paper and cut into 12 squares.
