This is an unbelievable Hawaiian recipe that utilizes native ingredients to create a succulent hot and sweet entree.

2 ounces macadamia nuts
4 ounces plain bread crumbs
6 (6 ounce) mahi mahi fillets
4 ounces butter
2 ounces shallots, diced
4 cups chicken stock
4 ounces pineapple, rough chopped
4 ounces papaya, rough chopped
4 ounces mango, rough chopped
1 tablespoon shredded coconut
2 habanero peppers, seeded
salt and pepper to taste
white sugar to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a food processor or blender, pulse together macadamia nuts and breadcrumbs until finely ground. Pour nut mixture onto a plate, and coat fish fillets on both sides.
  • Heat butter in a large skillet over medium heat. Fry fillets on both sides until nuts are golden brown. Remove to a baking pan.
  • Add shallots to skillet, and cook until translucent. Stir in chicken stock. Mix in pineapple, papaya, mango, coconut, and habanero peppers. Season with salt, pepper, and sugar to taste. Simmer until sauce is thick, about 30 minutes. Strain to remove peppers, fruit, and shallots. Reserve sauce in a pan over low heat.
  • Bake mahi mahi in preheated oven about 10 minutes, until internal temperature reaches 140 degrees F. Remove fish, and lightly coat with sauce.

1 cup panko bread crumbs
3/4 cup macadamia nuts
1/4 teaspoon salt
1/4 teaspoon white pepper
1 egg
2 teaspoons water
1/3 cup all-purpose flour
4 mahi mahi fillets (4 ounces each)
1/4 cup canola oil
2 tablespoons brown sugar
2 tablespoons reduced-sodium soy sauce
2 teaspoons minced fresh gingerroot

Steps:

  • Place the bread crumbs, nuts, salt and pepper in a food processor; cover and pulse until nuts are finely chopped., In a shallow bowl, whisk egg and water. Place flour and nut mixture in separate shallow bowls. Coat fillets with flour, then dip in egg mixture and coat with nut mixture., In a large skillet, heat oil over medium heat; cook fillets for 3-4 minutes on each side or until golden brown., Meanwhile, in a small microwave-safe bowl, combine the brown sugar, soy sauce and ginger. Microwave, uncovered, on high for 30-60 seconds or until sugar is dissolved. Drizzle over fish.

1 10-ounce mahimahi fillet (1 inch thick), skinned, halved crosswise
1/2 cup fresh lime juice
1/3 cup panko*
1/4 cup chopped macadamia nuts
1 teaspoon minced fresh cilantro
1/8 teaspoon salt
4 tablespoons (1/2 stick) unsalted butter, melted
*Japanese-style breadcrumbs, found in the oriental section of most supermarkets.

Steps:

  • Place mahimahi in shallow dish. Pour lime juice over. Marinate 1 hour, turning fish over occasionally.
  • Preheat oven to 350°F. Combine panko and next 3 ingredients in small bowl. Mix in 2 tablespoons butter. Season generously with pepper. Pour remaining 2 tablespoons butter into shallow baking dish. Remove mahimahi from marinade and place in baking dish, turning to coat with butter. Spoon panko mixture atop fish, dividing evenly. Press topping gently to adhere. Bake until fish is cooked through, about 20 minutes. Transfer to plates and serve.

5 ounces (approximately 1 1/4 cups) roasted macadamia nuts, ground
1/2 cup panko (Japanese-style bread crumbs)
1/4 cup sugar
2 tablespoons all-purpose flour
1/4 teaspoon salt
3 tablespoons butter, melted

Steps:

  • In a medium mixing bowl, combine the nuts, panko, sugar, flour, and salt. Add the melted butter and stir to combine.
  • Press the mixture into the bottom of a 9 or 10-inch cake, pie, or springform pan as a crust for a cheesecake or cream pie. Bake according to instructions for cheesecake or pie. If baking for a precooked pie filling, preheat the oven to 375 degrees F. Place on the center rack of the oven and bake for 20 to 25 minutes.

4 6 oz. fish fillets, approximately 1/2-inch thick
sea or kosher salt and fresh-ground pepper
2 eggs
olive oil for frying
1/4 c macadamia nuts, crushed
1/4 c plain white bread crumbs
1 tsp orange zest
1 tsp lime zest
1 tsp garlic, minced
1 tsp chives, minced
1 tsp basil, chopped

Steps:

  • 1. Firmly press the flesh side of each filet into the crust mixture, until evenly crusted.
  • 2. Season both sides of the fish fillets with the sea or kosher salt, and fresh-ground pepper.
  • 3. In a bowl, beat the eggs. Dip the flesh side of each fillet into the egg mixture - not the skin side.
  • 4. In a large pan, add about 1/4 inch of olive oil and heat to medium-hot.
  • 5. Saute the fillets, crust side down, until they are golden brown and the crust is firmly set, approximately 2 to 3 minutes. Turn and saute the skin side for approximately 1 minute.
  • 6. Remove the fillets from the pan, pat off any excess oil. Place on a baking sheet and bake in oven for 3-4 minutes, until fish is just cooked through.
  • 7. Serve with papaya salsa or your favorite sauce.

2 tablespoons finely chopped shallot
1-1/2 teaspoons minced fresh gingerroot
1 small garlic clove, minced
1 can (13.66 ounces) light coconut milk
1 teaspoon sugar
1/8 teaspoon salt
Dash pepper
1 tablespoon butter
MAHI MAHI:
6 mahi mahi fillets (3 ounces each)
1/4 teaspoon salt
1/8 teaspoon pepper
4 teaspoons grated orange zest
1 tablespoon orange juice
1-1/2 teaspoons minced fresh gingerroot
2 teaspoons garlic powder
2 teaspoons ground cumin
3/4 cup panko bread crumbs
1/2 cup chopped macadamia nuts
3 tablespoons olive oil

Steps:

  • In a small saucepan, combine the orange juice, shallot, ginger and garlic. Bring to a boil over medium-high heat. Cook for 3 minutes. Stir in the coconut milk, sugar, salt and pepper. Simmer, stirring occasionally until mixture is reduced by half, about 20 minutes. Remove from the heat and whisk in butter., Pat fish dry; place on a parchment-lined baking sheet. Sprinkle with salt and pepper. , In a small bowl, combine the orange zest, juice, ginger, garlic powder and cumin. Spoon over fish. Let stand for 10 minutes. Combine the bread crumbs, nuts and oil; mound onto each fillet., Bake, uncovered, at 425° for 14-16 minutes or until fish just turns opaque and crumb mixture is golden brown. Cover loosely with foil if crust browns too quickly. Serve with sauce.
