VANILLA MERINGUE COOKIES

These vanilla meringue cookies are perfect for the holidays and are definitely worth the expense of the vanilla bean. Served alone or alongside fresh fruit, they are the perfect melt-in-your-mouth, delicious dessert.

2 egg whites
⅛ teaspoon cream of tartar
½ cup white sugar
½ vanilla bean
1 tablespoon vanilla extract

Steps:

  • Preheat the oven to 225 degrees F (110 degrees C). Line a large baking sheet with parchment paper.
  • Place egg whites and cream of tartar into a large bowl; beat using an electric mixer at medium speed until soft peaks form. Increase speed to high and add sugar 1 tablespoon at a time while mixing until stiff peaks form. Scrape seeds from vanilla bean into the bowl and add vanilla extract; beat just until blended.
  • Spoon batter into a pastry bag and pipe mounds onto the prepared baking sheet.
  • Bake in the preheated oven until set, about 1 1/2 hours. Turn oven off; let cookies cool in the closed oven for 1 1/2 hours. Remove cookies carefully from paper.

These are a favorite staple for our "holiday cookie tray", as well as for "Sunday dinner" desserts, picnics, or any time I can be talked into making them ;) Cook time includes the "drying time" in the oven.

Number Of Ingredients 6

2 egg whites
1/8 teaspoon salt
1/8 teaspoon cream of tartar
1 teaspoon vanilla extract
3/4 cup sugar
1 (6 ounce) package chocolate chips (I prefer using the "mini" chocolate chips)

Steps:

  • Beat egg whites, salt, cream of tartar and vanilla until soft peaks form.
  • Add sugar gradually, beating well until sugar is dissolved and meringue peaks are stiff.
  • Fold in chocolate chips.
  • Line cookie sheets with cooking parchment (or greased waxed paper).
  • Drop mix by spoonful on to parchment, leaving a space of 1 inch between cookies.
  • Place in preheated 400°F oven; immediately reduce oven temperature to 275°F.
  • Bake for 10 minutes, then turn oven off.
  • Leave cookies in oven (to dry) without opening door for several hours or until oven is cool.
