Southern-Style Meatloaf Sandwich image

A popular southern way to make meatloaf sandwiches is to use butter or margarine instead of mayo. This great sandwich is a favorite for lunches and picnics. You can add lettuce, if you like, but it's good without "adornment".

1 slice of leftover meatloaf, thick, straight from the fridge
ketchup, drizzled over slice
bread and butter pickles
2 slices bread, I like white bread
butter
salt and pepper

Steps:

  • Slather both slices of bread with butter.
  • Add the meatloaf slice and additional seasonings.
  • Cut in half and pack in a lunch or eat right away!

Macho Meatloaf Sandwich image

Yield 1 sandwich

Number Of Ingredients 6

2 slices sourdough bread or white bread
2 teaspoons each: spicy mustard, ketchup, and/or mayonnaise, or to taste
1 slice meatloaf, cut 1/3 inch thick (your favorite recipe)
2 teaspoons olive oil, divided
1 slice Monterey Jack cheese
2 slices tomato (optional)

Steps:

  • Spread bread with condiments of choice. Brown meatloaf slice on both sides in 1 teaspoon olive oil in skillet. Put browned meatloaf slice on one slice of bread. Add cheese and tomato, if desired. Cover with remaining slice of bread. Heat remaining 1 teaspoon olive oil in skillet or on griddle. Grill over medium heat on both sides, until golden.

Trying to make a meatloaf tonight and tired of the same old meatloaf and thought I would use Paul Deens recipe but I put a spin on it and came up with my own.

1 lb lean ground beef
1 lb jimmy dean mild sausage
2 eggs beaten
1 1.25 oz. package of taco seasong mix
1 c corn and black bean salsa
1 c mild enchilada suace
2 c crushed doritos nacho cheese chips
2 c sharp cheddar cheese shredded
pam cooking spray
bacon
2 9x5 loaf pans

Steps:

  • 1. IN ONE LARGE MIXING BOWL I MIXED THE BEEF AND SUASGAE THEN MADE A WELL ADDED IN THE BEATEN EGGS. MIXED WELL TOGETHER.
  • 2. ADDED IN ALL THE OTHER INGREDIENTS AND MIXED WELL. PREHEAT YOUR OVEN 375 DEGREES
  • 3. I SPRAYED TWO LAOF PAN WITH PAM, 9 X 5, THEN FORMED THE MEAT LOAF AND PLACED IN PANS AND POURED SOME ENCHILIDA SAUCE ON TOP THEN CUT TWO SLICES OF BACON INTO 4 PIECES AND PLACED ON TOP.
  • 4. BAKED IN CENTER OF OVEN FOR APPX. 1HR AND 25 MIN ON 375 DEGREES, BUT BE SURE TO CHECK THAT YOU DO NOT OVER COOK SEEING ALL OVENS ARE DIFFERNT AND I DID USE CENTER OF THE OVEN TO BAKE MINE.
  • 5. WHEN I SERVED THE MEATLOAF I DRIZZED SOME MORE ENCHILDA SAUCE ON TOP OF SLICE AND SERVED WITH A MEXICAN MAC AND CHEESE DISH BUT YOU COULD SERVE WITH RICE AND BEANS.

But I was polite...i ate it, and it took me ten years to really want to give it a second chance. My wife makes a great Italian meatloaf... My father-in-law...

MEAT LOAF
2 lb ground beef
1 medium yellow onion
2 Tbsp minced garlic
2 eggs, whisked
1 c ritz crackers, crushed
2 Tbsp parmesan cheese, grated
1 tsp salt
2 tsp black pepper
1/2 tsp crushed red pepper flakes
1 tsp dried oregano
1 tsp dried parsley flakes
THE SAUCE
2 c tomato sauce
1/2 c water
2 Tbsp apple cider vinegar
2 tsp yellow mustard
2 tsp worcestershire sauce
1/2 tsp oregano, dried
1/2 tsp basil, dried
1/2 tsp garlic powder
1/2 tsp parsley flakes, dried
1/4 tsp salt
1/2 tsp black pepper

Steps:

  • 1. Chop Onion, whisk egg, crush Ritz Crackers, add all ingredients in large mixing bowl
  • 2. Mix well with hands, adding more Ritz Crackers if needed
  • 3. Mix all sauce ingredients together in separate bowl with a whisk until well blended
  • 4. Spray non stick cooking spray in crock pot, put a little sauce in middle
  • 5. Put meatloaf on top of sauce and pour remaining sauce on top
  • 6. Cook on high for 3 hours
  • 7. Or put in Dutch oven, following same steps as above, at 375° for 2-2 1/2 hours
