ONE-SKILLET CHEESY BEEF AND MACARONI
This is total comfort food; a one dish recipe, with even the pasta cooking in the same skillet.

Steps:
- Heat a very large skillet (for this full recipe, it should be a deep 12-inch pan) over medium high heat and brown the beef, stirring until no pink remains, about 5 minutes. Drain the beef and set aside.
- Wipe out the skillet, add the oil, and heat it over medium heat. Add the peppers, carrots, onion and garlic and sauté until almost tender, about 5 minutes.
- Add the ground beef back to the skillet, as well as the basil, oregano, tomatoes with their juice, water, Worcestershire sauce, and chili powder if using. Season with salt and pepper, turn the heat to high, and bring to a simmer. Add the pasta, stir and cover. Lower the heat to medium and simmer covered, stirring occasionally, until the pasta is tender, and most of the liquid is absorbed, 8 to 10 minutes. Taste and season again if needed.
- Sprinkle the cheese over the casserole then cover for just 1 more minute until the cheese is melty, and serve. Serve this right out of the pan.

MACARONI AND CHEESE CASSEROLE WITH GROUND BEEF RECIPE
Steps:
- Gather the ingredients.
- Cook macaroni in boiling salted water and then drain following package directions.
- Preheat oven to 350 F. Butter a 2-quart baking dish or casserole dish.
- In a large saucepan, combine 1/4 teaspoon salt, onion, green pepper, garlic, butter, black pepper, and ground beef. Cook, stirring frequently until the beef is browned. Add the bay leaf and tomatoes, and simmer over low heat for 20 minutes; stir in 1 1/2 cups of the Cheddar cheese.
- Spoon about half of the cooked and drained macaroni into a buttered 2-quart casserole. Top with cooked meat mixture then remaining macaroni. Sprinkle with the reserved 1/2 cup of shredded cheese.
- Bake the casserole, uncovered, for 30 minutes.

- Cook the macaroni according to package directions; drain and set aside. Heat the oil in a skillet; add the peppers, onion, and garlic, and sauté until soft. Add the ground beef and sauté until browned. Add the tomatoes, salt and pepper to taste, and the basil, cumin, and oregano. In a large bowl, combine the macaroni and the beef mixture. Spread this mixture into a 9 x 13-inch baking dish. Top with the cheese and bake at 350°F for 20 to 25 minutes, or until the cheese is lightly browned and bubbly.
- Cook's Note: Ground turkey or chicken can be used in place of beef, if desired.

- Using a large deep saute pan heat oil and saute onion,garlic& red pepper for about 2 minutes.
- Crumble in the ground beef and cook about 10 minutes or until cooked thoroughly.
- Heat the beef broth on the stove or in the microwave.
- Add hot broth,macaroni,tomatoes,& seasonings to the ground beef mixture.
- Simmer about 10 minutes or until it has reduced and macaroni is cooked.

- In a large pot on medium-high heat, bring 2 quarts of salted (1 teaspoons salt) water to a boil.
- Add macaroni to boiling water and cook until tender.
- Drain off the water from the macaroni.
- On low heat add butter, milk and cheese. Stir until cheese is melted.
- Remove from heat and set aside.
- In a deep skillet on medium heat cook the ground beef, salt, pepper and garlic powder until the ground beef is no longer pink, making sure that the ground beef is finely broken up.
- Add the diced tomatoes to the ground beef, without any juice from the tomatoes.
- Add the ground beef mixture to the pot that contains the macaroni. Stir for 1 minute on low heat. Serve and enjoy.
