A very easy and quick recipe for all you mushroom lovers. I sometime add a 3.8 oz can of sliced black olives (drained) just for a change. I usually serve with crusty bread and a salad and a glass of wine. Enjoy!

1 tablespoon butter
1/4 cup olive oil
3 tablespoons balsamic vinegar
1 lb mushroom (any type you like)
3 cloves garlic, minced
1/8 teaspoon crushed red pepper flakes
1 1/2 cups chicken broth
1/2 cup white wine (chablis, chardonnay, etc.)
1 chicken bouillon cube
2 teaspoons parsley
1/4 teaspoon salt
1 (16 ounce) box macaroni
1/2 cup freshly grated parmesan cheese

Steps:

  • Melt butter in large skillet; add olive oil.
  • Add mushrooms, garlic and red pepper flakes;saute over medium heat for 10 minutes.
  • Add broth, wine, balsamic vinegar and bouillon cube to the mushroom mixture; increase heat to high cooking for 10 minutes more.
  • Remove from heat and stir in parsley and salt.
  • While sauce is cooking, cook macaroni as directed on package; drain well and return macaroni to pot.
  • Add mushroom sauce to macaroni and stir well; add cheese and toss to mix.

1 (16 ounce) package elbow macaroni
1 tablespoon butter
⅓ cup milk
1 (10.75 ounce) can condensed cream of mushroom soup
1 pound processed cheese food, cubed

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Preheat oven to 350 degrees F (175 degrees C).
  • In medium saucepan over medium heat, combine butter, milk, mushroom soup and processed cheese. Stir until cheese is melted and mixture is smooth. Stir in cooked pasta. Pour into 2 quart baking dish and bake 20 minutes or until top is golden brown. Let stand 10 minutes and serve.

1 (8 ounce) package elbow macaroni
1 (10 ounce) can cream of mushroom soup
1 cup mayonnaise (I use Hellmans)
2 cups shredded sharp cheddar cheese
1 (4 ounce) jar pimientos
3/4 cup crushed Ritz cracker (15 crackers)
1 tablespoon melted butter

Steps:

  • Cook macaroni according to directions on the bag.
  • Combine cooked macaroni, soup and next 3 ingredients, stir.
  • Add pimentos.
  • Spoon into lightly greased 2 quart casserole.
  • Combine cracker crumbs and melted butter and sprinkle evenly over macaroni mixture.
  • Bake in 300 degree oven for 30 minutes.

I have texture issues - so this macaroni and cheese is my favorite due to the low "slime" factor! It's more like macaroni and cheese souffle since it has eggs. I adapted this from a church cookbook recipe my mom used to have - but it was very labor intensive. This way works fine for me! I like it because it's quick to throw together and put in the oven. I usually throw in a green bean casserole with it. If you want to try a new version of an old classic - give this a try!

1 cup uncooked elbow macaroni
1 cup breadcrumbs
1 cup shredded cheese
1 cup milk
1/4 cup butter or 1/4 cup margarine, melted
3 eggs
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 350 degrees. In a bowl, whisk the 3 eggs. Add the remaining ingredients to combine. Poor into a greased pan (I use either a bread pan or a 9x13 pan.) Cover with foil and bake for 45 minutes. Take off the foil and bake for another 15 minutes. Remove and let it rest for about 5 minutes. Cut and serve.
  • You can also use seasoned bread crumbs and add onions or onion powder, garlic powder and/or ham. Sometimes I put the macaroni and a bowl with water and microwave for about 5 minutes - just to soften them a bit more. Yum! My husband swears this tastes better the next day - so he's happy to have leftovers -- .

FOR THE MACARONI LOAF
1 cup(s) macaroni
1 cup(s) bread pieces
1 cup(s) light cream
1/2 cup(s) melted butter
3 large eggs
salt, to taste
3/4 cup(s) cheddar cheese, grated
2 ounce(s) pimento
1 tablespoon(s) parsley, chopped
FOR THE MUSHROOM SAUCE
2 tablespoon(s) unsalted butter
1 1/2 teaspoon(s) olive oil
10 ounce(s) mushrooms, sliced
2 garlic cloves, minced
1/4 cup(s) white wine
1/2 cup(s) chicken broth
1 cup(s) cream
1/2 cup(s) parmesan cheese, finely grated
2 teaspoon(s) fresh thyme, chopped

Steps:

  • Prepare the loaf: Preheat oven to 350F,. Grease a 5x9 inch loaf pan - set aside
  • Cook macaroni according to package directions. Drain. Gently combine all ingredients and pour into the prepared pan.
  • Place loaf pan in pan of water inside oven. Bake 1 hour or until a knife inserted in the center of the loaf come out clean.
  • Meanwhile, For the Sauce: Heat oil and butter in a large skillet. Add mushrooms and cook until golden brown. This will take about 5 minutes. During the last minute, add the garlic and a pinch of salt.
  • Add the wine and stir to deglaze the pan, stirring up all the brown bits from the bottom of the pan. Cook until most of the wine evaporates.
  • Add broth, cream and parmesan cheese. Stir and bring to a simmer. Simmer for 3-4 minutes until slightly thickened. Stir in the thyme. Taste and adjust seasoning if needed.
