This sounded so weird that I had to save it. One of these lazy Sunday's I will get up the nerve to make it. If you do please let me know how it is.

2 ounces fresh lasagna sheets
canola oil cooking spray
1/2 cup pure fine unbleached cane sugar, plus
1 tablespoon pure fine unbleached cane sugar
3 fresh strawberries
1 cup chevre cheese
1 cup cream cheese
1 teaspoon lemon zest
1 teaspoon lemon juice
2 tablespoons strawberry-raspberry preserves

Steps:

  • Using a round 2-inch mold, cut lasagna sheets into 6 circles and boil for 2 minutes with 1/2 cup sugar. Coat the lasagna noodles in canola oil spray and dust with sugar, set aside. Slice strawberries, coat in sugar, and set aside. Fold chevre and whipped cream cheese together. Add 1/2 cup sugar, lemon zest, lemon juice, to taste.
  • Assembly: place round 2-inch mold on lasagna circles, place strawberry slice at bottom, fill halfway with cheese mixture, add jam, top with more cheese and pat cheese down. Pull mold off, place strawberries on top and sprinkle with sugar.

After reading descriptions of Semolina's Macaroni & Cheese Cake, I went on search for a recipe.... finding this one. Will be trying it this coming weekend when the kids are here.

4 ounces elbow macaroni
1 teaspoon margarine
1/4 cup breadcrumbs
2 (8 ounce) packages cream cheese, softened
4 eggs
1 (8 ounce) container sour cream
2 tablespoons flour
1 tablespoon dried basil, crumbled
1/4 teaspoon salt
2 cloves garlic, finely chopped
1/2 teaspoon crushed red pepper flakes
2 cups shredded cheddar cheese

Steps:

  • Preheat oven to 325 degrees.
  • Cook macaroni following directions; drain and set aside.
  • In skillet, melt margarine until sizzling.
  • Stir in breadcrumbs, saute over medium heat for 4 minutes or until browned.
  • Sprinkle in bottom of spring form pan.
  • In large mixing bowl beat cream cheese,at medium speed until smooth.
  • Continue to beat, adding 1 egg at a time.
  • Gradually add sour cream, flour, basil, salt and garlic;mix until smooth.
  • Stir in macaroni and cheese.
  • Pour on top of crumbs in spring form pan.
  • Bake 50- 60 minutes or until slightly set in middle.
  • Let stand 5 minutes.
  • Remove side of pan and slice with serrated knife.

Number Of Ingredients 10

1 Mexican zucchini, cut lengthwise into 1/4-inch-thick slices
2 tsp. oil
1/4 tsp. garlic powder
1 clove garlic, unpeeled
1 pkg. (7-1/4 oz.) KRAFT Macaroni & Cheese Dinner
1/3 cup tomato sauce
2 ancho chiles, hydrated
2 Tbsp. HEINZ Distilled White Vinegar
1/4 tsp. ground cumin
1/2 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese

Steps:

  • Brush zucchini slices with oil; sprinkle with garlic powder. Cook in skillet on medium-high heat 2 to 3 min. on each side or until lightly browned. Add garlic clove; cook 2 min. or until tender.
  • Prepare Dinner as directed on package. Meanwhile, line parchment-lined 9x5-inch loaf pan with zucchini slices, with ends extending over sides of pan.
  • Blend tomato sauce, ancho peppers, vinegar, cumin and peeled garlic clove in blender until smooth; pour into small saucepan. Cook 5 min., stirring occasionally. Add to prepared Dinner; mix well.
  • Spoon Dinner mixture into zucchini-lined pan. Press firmly into pan with back of spoon. Let stand 10 min. Invert onto platter; remove parchment. Top Dinner mixture with mozzarella.
