One-Pot Cheeseburger Macaroni image

Nostalgic for the boxed cheeseburger macaroni dinner from your childhood? Then whip up this homemade version of Hamburger Helper that's just as satisfying as the classic. The recipe is super quick and budget-friendly, leaning on pantry ingredients you probably already have on hand. 2 tablespoons vegetable oil
1 large onion, diced
2 cloves garlic, minced
1 tablespoon chili powder
1/2 teaspoon smoked paprika
Pinch crushed red pepper flakes, optional
Kosher salt and freshly ground black pepper
1 pound ground beef, 80/20
2 tablespoons tomato paste
1 tablespoon Dijon mustard
5 cups low-sodium chicken stock or broth
10 ounces elbow macaroni
2 cups shredded Cheddar, about 8 ounces
4 ounces cream cheese
1 cup flat-leaf parsley leaves and tender stems, chopped, plus more for garnish, optional

Steps:

  • Heat the oil in a large pot over medium-high heat. Add the onion and cook, stirring occasionally, until softened 6 to 7 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Stir in the chili powder, smoked paprika, red pepper flakes (if using), 1 teaspoon salt and a few grinds of black pepper and stir to combine. Add the beef and break it up into small pieces with a large spoon; cook, stirring occasionally, until beef is cooked through and no longer pink in the center, 6 to 7 minutes. Stir in the tomato paste and Dijon until combined. Pour in the chicken stock and 1 teaspoon salt, stir to combine and bring to a boil, 6 to 7 minutes. Add the elbow macaroni and cook, stirring occasionally, until the sauce has thickened and the pasta is al dente, 9 to 11 minutes. Remove from the heat and stir in the Cheddar and cream cheese until smooth. Fold in the parsley. Garnish with more parsley, if desired.
  • Store leftovers in an airtight container in the refrigerator for up to 5 days.

1/2 teaspoon salt
1 cup shredded Cheddar cheese (4 oz)
1/2 cup Original Bisquick™ mix
1 cup milk
2 eggs

Steps:

  • Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray.
  • In 10-inch skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain. Stir in salt. Spread in pie plate. Sprinkle with cheese.
  • In small bowl, stir remaining ingredients with fork or wire whisk until blended. Pour into pie plate.
  • Bake about 25 minutes or until knife inserted in center comes out clean.

I made this the other night from leftovers, and it was such a hit, that my husband has claimed it a family favorite lol Please note, I've just come across a recipe that is almost identical to this, in "Sandra Lee's Semi-homeade" Recipes. Her's calls for meatloaf, and deli mac n cheese.

1 package(s) meatballs (flavor of your choice)
2 tablespoon(s) ketchup
3 tablespoon(s) yellow mustard
1 can(s) golden mushroom soup
1 package(s) homestyle mac n cheese (i use kraft)
2 - frozen roll out pastry dough
1-2 cup(s) your favorite cheese (i used colby jack shredded)
1 large can frenches frenchfried onions (do not use generic, it's not as good)

Steps:

  • Pre heat oven to 350 F
  • Cut thawed meatballs into quarters, mix with the ketchup, mustard, and soup, and set aside.
  • Cook your mac and cheese, while this is cooking, roll out your pastry dough, and line a 9x11 clear baking dish with it. Cut pieces to fill the "holes". So that it covers the whole baking dish, much like you would a pie plate.
  • After the mac n cheese is done (you've followed the directions on the box), Layer the meatball mixture over the bottom of the pastry covered baking dish, follow with a layer of cheese, then the mac n cheese, then cheese again, and top with french fried onions.
  • Bake uncovered until the onions are brown, and pie dough is done, aprox. 10-15 min.
  • You can add bacon bits/pieces to the mac n cheese as an added flavor.

Dough for single-crust deep-dish pie
1 pound ground beef
1 medium onion, finely chopped
1 garlic clove, minced
1/4 cup all-purpose flour
1/2 teaspoon salt
2 cups shredded process cheese (Velveeta)
1/2 cup chopped dill pickles
1/3 cup dill pickle juice
1/3 cup 2% milk
Optional: chopped avocado, tomato, lettuce, and bacon

Steps:

  • On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. deep-dish pie plate. Trim to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes. Preheat oven to 425°. , Line unpricked crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake on a lower oven rack until edge is light golden brown, 15-20 minutes. Remove foil and weights; bake until bottom is golden brown, 3-6 minutes longer. Cool on a wire rack., Meanwhile, in a large skillet, cook beef, onion and garlic over medium heat until meat is no longer pink; drain. Sprinkle with flour and salt; stir until blended. 10 3/4 ounces Campbell's Golden Mushroom soup
3 tablespoons french's yellow mustard
2 tablespoons Heinz ketchup
9 inches frozen pie shells (Deep-Dish Can Be Used)
1/3 cup hormel real crumbled bacon
1 lb deli macaroni and cheese
1 cup canned French's French fried onions

Steps:

  • Preheat oven to 375. In a medium bowl, stir together chopped meatloaf, soup, mustard, and ketchup; press into bottom of unbaked pie shell. Set aside.
  • Stir bacon crumbles into macaroni and cheese. Spoon evenly over meat mixture; top with french fried onions. Bake in preheated oven for 35-40 minutes. Slice and serve hot.
