CAULIFLOWER "MAC" AND CHEESE CASSEROLE

1 large head cauliflower, cut into small florets
Vegetable oil spray
1 cup heavy cream
2 ounces cream cheese, cut into small pieces
1 1/2 teaspoons Dijon mustard
1 1/2 cups shredded sharp Cheddar, plus 1/2 cup for topping the casserole
1/4 teaspoon freshly ground black pepper
1/8 teaspoon garlic powder

Steps:

  • Preheat oven to 375 degrees F. Bring a large pot of water to a boil. Season the water with salt.
  • Spray the baking dish with vegetable oil spray.
  • Cook the cauliflower in the boiling water until crisp-tender, about 5 minutes. Drain well and pat between several layers of paper towels to dry. Transfer the cauliflower to the baking dish and set aside.
  • Bring the cream to a simmer in a small saucepan, and whisk in the cream cheese and mustard until smooth. Stir in 1 cup of the cheese, salt, pepper and garlic and whisk just until the cheese melts, about 1 to 2 minutes. Remove from heat, pour over the cauliflower, and stir to combine. Top with the remaining 1/2 cup cheese and bake until browned and bubbly hot, about 15 minutes. Serve.

Salt
2 tablespoons extra-virgin olive oil, divided
1 package beef or pork hot dogs, chopped into 1-inch pieces
1 tablespoon butter
1 medium onion, finely chopped
2 tablespoons all- purpose flour
1/2 cup beer, 1/3 of a bottle - whatever you have on hand, chicken broth can be substituted
2 cups milk
Pepper
1 rounded tablespoon spicy mustard
2 rounded tablespoons ketchup
3 cups yellow sharp Cheddar, shredded, divided (Buy preshredded cheese. You will need 1 1/2 sacks of 10-ounce packages.)

Steps:

  • Boil a large pot of water for macaroni. Salt water and under cook macaroni, cook about 7 minutes until just under al dente in doneness.
  • Preheat broiler and set rack 12 inches from heat.
  • While pasta works, heat a large deep nonstick skillet over medium-high heat. Add 1 tablespoon extra-virgin olive oil, 1 turn of the pan, then add hot dogs and brown on both sides, 4 minutes total. Remove the dogs with a slotted spoon to a paper towel lined plate. Add another tablespoon extra-virgin olive oil, 1 turn of the pan, and the butter. When butter melts, cook onions 4 to 5 minutes, then add flour and cook another minute. Add beer and cook off completely, 1 minute. Whisk in milk and bring to a bubble, then season the sauce with salt and pepper and stir in the mustard and ketchup. Lower heat and add 2 cups of the cheese. Stir to melt, 1 minute. Adjust mustard, ketchup, and salt and pepper, to your taste.
  • Drain pasta well. Combine pasta and hot dogs with sauce and coat evenly then pour into large casserole and top with remaining cheese. Melt and brown cheese under broiler, 2 minutes. Serve.

¼ cup butter
¾ cup milk

1 (5 ounce) can chunk light tuna, drained and flaked
1 cup shredded mild Cheddar cheese
1 ⅓ cups French-fried onions

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with nonstick spray.
  • Bring 6 cups water to a boil in a medium saucepan. Stir in macaroni from the box and cook for 7 minutes. Drain macaroni, then rinse under cold water and drain again. Set cheese sauce packet aside.

1 medium head cauliflower, cut into bite-sized florets
1 1/2 cups milk
2 tablespoons unsalted butter, softened
2 tablespoons all-purpose flour
2 1/2 cups shredded Cheddar cheese
1/8 teaspoon dried minced onion
1 pinch garlic powder, or to taste
salt and ground black pepper to taste
3 cups chopped cooked ham
2 cups french-fried onions

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a 9x13-inch baking pan.
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until tender yet firm to the bite, 2 to 6 minutes.
  • While cauliflower steams, heat milk in a saucepan over medium-low heat. Mix softened butter and flour together until it forms a ball. 1 cup drained canned corn or 1 cup frozen corn

  • Preheat oven to 350 degrees F. Brown and drain the hamburger, set aside.

1 box kraft mac and cheese
1 can(s) cream of mushroom soup, undiluted
1 pkg hot dogs (cut up)

Steps:

  • 1. Cook the macaroni as directed.
  • 2. Cut the hot dogs into bite sized pieces
  • 3. Put the soup into a large bowl, along with the cut up hot dogs 1/2 cup milk, and the cheese sauce from the box. Stir, cover, and place in microwave (or into pain on the stove) and heat until the hot dogs are hot. (around 3 minutes)
  • 4. Once the macaroni is ready, put the recommended amount of butter in it, let it melt, and add it to the bowl with the soup and hot dogs. Stir, cover and place in microwave again for another 2 minutes. Let sit for a minute, then stir and serve!

1 pkg. (7-1/4 oz.) KRAFT Macaroni & Cheese Dinner
1 lb. lean ground beef
1 pkg. (1 oz.) TACO BELL® Taco Seasoning Mix
1 egg
4 oz. Queso Blanco VELVEETA, cut into 1/4-inch cubes, divided
1/2 cup TACO BELL® Verde Salsa

Steps:

  • Heat oven to 350°F.
  • Prepare Dinner as directed on package. Meanwhile, cook meat with seasoning mix as directed on package.
  • Add egg and half the Queso Blanco VELVEETA to prepared Dinner; mix well. Spoon into 8-inch square baking dish sprayed with cooking spray; cover with meat mixture, salsa and remaining VELVEETA.
  • Bake 20 min. or until heated through.

4 oz. (1/2 of 8-oz. pkg.) Vermont sharp white cheddar cheese, shredded
4 oz. (about 2/3 of 7-oz. pkg.) Havarti cheese, shredded
3 Tbsp. flour
2 cups milk, divided
2 cups elbow macaroni, cooked
6 slices OSCAR MAYER Bacon, cut into 1/4-inch-thick slices, cooked
1/4 cup panko bread crumbs

Steps:

  • Heat oven to 400ºF.
  • Combine cheeses. Bring 1-1/2 cups milk just to boil in medium saucepan on medium heat. Whisk flour and remaining milk in small bowl until blended; gradually whisk into heated milk. Cook 2 to 3 min. or until thickened, stirring constantly. Remove from heat.
  • Add 1-1/2 cups cheese mixture; stir until melted. Stir in pasta, macaroni and bacon.
  • Spoon into 8-inch square baking dish sprayed with cooking spray; top with remaining cheese mixture and bread crumbs.
  • Bake 12 to 15 min. or until macaroni mixture is heated through and bread crumbs are lightly browned.

This was a total experiment. For my first try it actually didn't come out too bad. It was a little dry so I think for next time I will omit one egg, add more milk (or even some fat free half and half), and not sure if I want to add the ricotta again. The recipe you see below though is exactly the amounts that I used. Try it and play around with the ingredients as much as you like. I found this recipe on Johanna's Recipe Blogg. I have not tried this recipe, but I'm posting it for safe keeping.

16 ounces dreamfields elbow macaroni (cooked al dente, and drained completely)
1 lb ground turkey (I use jenny o's 97% fat free ground turkey)
1 ounce Lipton Onion Soup Mix (1/2 packet)
15 ounces part-skim ricotta cheese (1 package)
1 1/2 cups nonfat milk
4 large eggs
2 cups shredded cheese, of your choice (regular Cheddar is good, but you can get quite creative with some of the stronger cheeses)
1/2 teaspoon paprika
salt and pepper (to your liking)
parmesan cheese
progresso breadcrumbs

Steps:

  • Preheat the oven to 350° F.
  • Grease a 13x9 casserole dish, and set aside.
  • In a large saute pan brown ground turkey. Once completely brown add packet of the Lipton onion soup mix. (may add more salt and pepper to your liking) Set aside and let cool.
  • Mix ricotta, 1 egg, 1/2 tsp salt, and 1/2 pepper.
  • Whisk together the remaining eggs, milk, salt, and paprika in a bowl.
  • Add a little bit of of ground turkey mixture to ricotta to temper eggs. Once done add ricotta mixture to the ground turkey mixture and mix completely.
  • Mix cooked macaroni and ground turkey mixture together.
  • Layer the cooked macaroni mixture with 1 1/2 cups of the cheese in the casserole dish. Pour milk, egg and spice mixture over everything. Top with the remaining cheese, and sprinkle a liberal amount of Parmesan cheese and add a little sprinkle of breadcrumbs.
  • Bake it for 40 to 45 minutes or until the mixture is set in the middle.
  • This is the finished product. Yum!

1 cup frozen peas
1 cup KRAFT Shredded Sharp Cheddar Cheese
2 slices OSCAR MAYER Bacon, cooked, crumbled
1 cup milk
1/4 cup KRAFT Grated Parmesan Cheese
2 Tbsp. dry bread crumbs

Steps:

  • Heat oven to 400ºF.
  • Prepare Dinners in large saucepan as directed on package. Stir in peas, shredded cheese, bacon and milk.
  • Spoon into 2-qt. casserole sprayed with cooking spray.
  • Combine Parmesan and bread crumbs; sprinkle over macaroni mixture.
  • Bake 25 min. or until macaroni mixture is heated through and topping is lightly browned.
