This is so easy and so good. It's always the hit of the party and it's gone before anything else on the table.

5 avocados - peeled, pitted, and mashed
2 tablespoons fresh lemon juice
¾ cup minced green onion
½ cup minced fresh cilantro
salt and pepper, to taste

Steps:

  • Stir together the avocado and lemon juice in a serving bowl; add the green onion and cilantro; mix well. Season with salt and pepper. Serve immediately or store covered in refrigerator with avocado pits in the bowl to keep from browning.

This is great to eat as a dip, or better yet served with Tacos or Taco Salads...

2 ripe avocados, chopped
1/2 c dukes mayonnaise {different mayo changes the taste}
2 Tbsp fresh sqeezed lime juice
1 clove garlic, minced
1 dash(es) texas pete
1large pinch chili powder

Steps:

  • 1. Mash avocados with fork in small bowl, then add the remaining ingredient and mix well. Chill. Serve with Crackers or Tortilla's, Garnish with diced red tomatoes, makes for a nice Christmas presentation.
  • 2. I also serve this with colored corn chips.

Simple ingredients in perfect proportion make a this dip a crowd-pleasing favorite for any event. We decided not to use tomato in ours -- it makes the guac watery -- and included both onion and garlic for extra zip. A healthy dose of fresh lime juice balances and brightens the flavors.

1/2 small red onion, diced small
1 tablespoon distilled white vinegar
4 ripe Hass avocados
1/4 cup lime juice (about 2 limes)
1 jalapeno, minced (seeds and membranes included if you prefer heat or removed for a milder version)
1 clove garlic, grated
1 teaspoon kosher salt
1/2 cup lightly packed cilantro leaves, finely chopped (about 1/4 cup finely chopped)
Tortilla chips, for serving

Steps:

  • Put the diced onion into a small strainer and rinse under cold running water. Transfer to a small bowl and cover with 1 cup cold water. Stir in the vinegar and let sit for 10 minutes.
  • Slice the avocados in half, remove the pits and scoop the flesh into a medium bowl. Pour the lime juice over the avocado. Using a fork or potato masher, mash the avocado until creamy with some chunks remaining. Drain the onions well and add to the bowl, along with the jalapeno, garlic, salt and cilantro. Stir to combine.
  • Serve immediately with tortilla chips. Or press a piece of plastic wrap directly against the surface of the guacamole to prevent discoloration and refrigerate until ready to serve.

This great dip is always the first to go at our barbeques. It's a simple guacamole, perfect for dipping tortilla chips or serving with tacos. To prevent browning, leave an avocado seed in it until serving.

2 teaspoons salt, or to taste
1 large tomato, diced
1 onion, diced
2 jalapeno peppers, chopped
½ tablespoon chopped fresh cilantro
2 tablespoons fresh lime juice

Steps:

  • In a medium bowl, mash the avocados and stir in salt to taste. Mix in the tomato, onion, jalapeno, cilantro and lime juice. Cover and chill in the refrigerator at least 30 minutes before serving.
