3 potatoes
1 onion
4 ounces luncheon meat
little egg
salt
pepper
1 pinch herbs
oil
knob butter

Steps:

  • Peel and thickly slice the potatoes. Cook them in boiling, salted water for 10 minutes, until soft. Drain them and mash well.
  • Peel and finely chop or grate the onion. Chop the luncheon meat.
  • Mix together the potato, onion, luncheon meat, and bind together with the well-beaten egg, adding sufficient egg to hold it all together. Season with the salt, pepper, and herbs. Form the mixture into 3-4 equal portions. Shape each into a ball and then flatten to form 'beefburger' shapes about 3/4in (2cm) thick.
  • Heat the oil and butter in a frying pan, and fry over a moderate heat for 3-4 minutes, turning to cook both sides, until crisp and golden brown. Serve with fresh or fried tomatoes and/or a couple of fried eggs, if you're really hungry.

A friend and I discovered this recipe together and both consider it a staple menu item. I fix the moist, mild-tasting patties often for family and friends. We love them with mashed potatoes, rice or noodles and the gravy, which gets great flavor from fresh mushrooms.

1 egg
2 green onions with tops, sliced
1/4 cup seasoned bread crumbs
1 tablespoon prepared mustard
1-1/2 pounds ground beef
1 jar (12 ounces) beef gravy
1/2 cup water
2 to 3 teaspoons prepared horseradish
1/2 pound fresh mushrooms, sliced

Steps:

  • In a bowl, beat the egg; stir in onions, bread crumbs and mustard. Add beef and mix well. Shape into four 1/2-in.-thick patties. , In an ungreased skillet, cook patties for 4-5 minutes on each side or until meat is no longer pink; drain. , In a small bowl, combine gravy, water and horseradish; add mushrooms. Pour over patties. Cook, uncovered, for 5 minutes or until mushrooms are tender and heated through.
