IPA MAC AND CHEESE



IPA Mac and Cheese image

3 cups heavy cream
1 teaspoon coriander seeds
1 teaspoon fennel seeds
1 teaspoon black peppercorns
2 fresh bay leaves
1 cup shredded sharp Cheddar
Hot sauce, such as Tapatio
Cracked black pepper
3 cups elbow macaroni, cooked
1 cup peas, cooked
1/4 cup shredded braised ham hock
1/4 cup West-Coast style IPA
Salt
1 tablespoon chopped bacon
1/4 cup breadcrumbs

Steps:

  • Preheat the oven to 400 degrees F.
  • In a saucepan, add the cream, coriander seeds, fennel seeds, peppercorns and bay leaves. Turn the heat up to high and bring to a boil. Once a boil is reached, reduce the heat to medium and stir regularly to prevent burning and boil-over.
  • Once the cream is reduce by three-quarters, strain through a fine mesh strainer into another saucepan. Return the pan with the strained cream to a medium flame and stir in the Cheddar. Once the Cheddar is fully incorporated, add hot sauce and cracked black pepper to taste.
  • Add the macaroni, peas and ham hock to the pan and stir well. Add the IPA and continue stirring until hot. Add salt to taste and place in large ramekin. Top with the chopped bacon and breadcrumbs. Bake until the breadcrumbs become golden brown and crispy.

Who said macaroni and cheese is just for kids? It may have been during our adolescent days in the lunchroom where we fell in love with this all-American comfort dish, but this is not the macaroni and cheese of your childhood! Our version includes savory veggies, a rich medley of grown-up cheeses, and just enough cayenne to take this simple comfort food to a new gourmet delight. Makes a complete meal on its own or is a great side for just about anything, but we suggest serving it with some creamy tomato soup. Delish!

Yield makes 8 servings

Number Of Ingredients 13

1 1/2 cups dried elbow macaroni
2 1/2 cups fresh or frozen broccoli florets
1/2 cup sun-dried tomatoes
2 tablespoons unsalted butter
1/3 cup sliced green onions, green parts only
2 tablespoons all-purpose flour
2 teaspoons cayenne
1 1/2 teaspoons dried basil
1 teaspoons salt
1 3/4 cups whole milk
6 ounces sharp Cheddar cheese, shredded (1 1/2 cups)
4 ounces Gruyère cheese, grated (1 cup)
4 ounces Gouda cheese, grated (1 cup)

Steps:

  • Preheat the oven to 350°F.
  • Cook the macaroni according to package instructions. If you are using fresh broccoli, blanch in hot salted water for 5 minutes, then drain. If you are using frozen broccoli, thaw and drain it. Add the broccoli to the macaroni. Set aside.
  • Meanwhile, place the sun-dried tomatoes in a small bowl and add enough warm water to cover. Let stand for 10 minutes or until softened. Drain well, then chop into 1/4-inch pieces and set aside.
  • Melt the butter in a medium saucepan set over medium heat. Add the green onions and cook until tender, about 5 minutes. Stir in the flour, cayenne, basil, and salt. Add the milk, and cook, stirring, until slightly thickened and bubbly. Add 3/4 cup of the Cheddar, the Gruyère, and Gouda, a little at a time, stirring well after each addition, until the cheeses are melted. Stir in the macaroni and broccoli mixture and the softened sun-dried tomatoes. Transfer to a 9 x 13-inch casserole dish and sprinkle the top of the casserole with the remaining 3/4 cup Cheddar cheese.
  • Bake for about 30 minutes or until the cheese is melted and the casserole is heated through.

SUPER SPICY MAC AND CHEESE



Super Spicy Mac and Cheese image

1 pound macaroni
2 tablespoons salted butter
1 teaspoon crushed red pepper
2 jalapenos, seeded and finely diced
2 cloves garlic, minced
1 small onion, finely diced
2 cups whole milk, plus more if needed
8 ounces queso blanco-style processed cheese, cubed
1 cup grated Monterey Jack
1 cup grated pepper jack
1 teaspoon freshly ground black pepper
1/2 teaspoon kosher salt
1/4 teaspoon seasoned salt
Hot sauce, as desired

Steps:

  • Bring a large pot of water to a boil. Cook the macaroni according to the package instructions. Drain and set aside.
  • Heat the butter in a large saucepan over medium heat. Add the crushed red pepper, jalapeno, garlic and onion and cook, stirring, until the veggies have softened, about 5 minutes. Add the milk and heat until starting to bubble around the edges. Add the processed cheese and stir until melted. Add the Monterey Jack and pepper jack cheeses, pepper, kosher salt, seasoned salt and hot sauce to taste. Stir until the cheese is melted. Taste and adjust the seasoning. Add a splash of milk if the sauce seems too thick. Fold in the cooked macaroni and serve.
  • Reheating instructions: Preheat the oven to 350 degrees F. Put the mac and cheese in a baking dish, cover with foil and heat until warmed through, about 25 minutes.

8 ounces Cheddar, 1/2 cubed, 1/2 shredded
8 ounces Colby cheese, cubed
8 ounces Monterey pepper jack cheese, cubed
2 teaspoons all-purpose flour
1/2 teaspoons salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon cayenne pepper
1/2 teaspoon dry mustard
1/8 teaspoon freshly ground nutmeg
4 tablespoons sour cream
1 large egg, beaten
1 cup heavy cream
1 cup half-and-half
1/4 cup finely grated onions
4 slices bread
1 tablespoon butter
Special equipment: 2-quart baking dish

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large bowl, toss together the pasta with the cheese cubes and pour into the baking dish.
  • In a large bowl, mix together the flour, salt, black pepper, cayenne pepper, dry mustard, nutmeg. Add the sour cream, egg, heavy cream, half-and-half and onions. Pour over the pasta and cover with the shredded Cheddar. Bake uncovered until the top is just beginning to brown, about 35 minutes.
  • Meanwhile, cut the bread into crouton-size squares. In a skillet over medium heat, melt the butter, add the bread cubes and toast until golden. Sprinkle the bread cubes on top of the macaroni and cheese and bake until golden brown, about 10 minutes more.

4 cups elbow macaroni, cooked and drained
2 cups grated cheddar cheese
3 eggs, beaten
1/2 cup sour cream
4 tablespoons butter, cut into pieces
1/2 teaspoon salt
1 cup milk

Steps:

  • Preheat oven to 350°F.
  • Once you have the macaroni cooked and drained, place in a large bowl and while still hot and add the cheddar.
  • In a separate bowl, combine the remaining ingredients and add to the macaroni mixture.
  • Pour macaroni mixture into a casserole dish and bake for 30 to 45 minutes.
  • Top with additional cheese if desired, and bake a few minutes more until cheese is melted.
