20-Minute Crispy Pierogies with Broccoli and Sausage image

This is a kid-friendly twist on the classic Italian combination of broccoli rabe and sausage. We discovered that cooking mini pierogies pot-sticker style in a hot skillet saved time (no waiting for water to boil) and left them both crispy and tender.

3 tablespoons olive oil
One 12.84-ounce box frozen mini potato-cheese pierogies
1/2 pound sweet Italian sausage (about 3 links)
2 cloves garlic, smashed and roughly chopped
Pinch red pepper flakes
1 pound frozen broccoli spears, thawed (split any spears that are very large)
1 cup low-sodium chicken broth
2 tablespoons grated Parmesan, plus more for serving

Steps:

  • Heat 2 tablespoons of the oil in a large nonstick skillet over medium-high heat. Arrange the pierogies snugly flat-side down in the skillet (there may be some overlapping). Cook until the bottoms just begin to brown, about 3 minutes. Pour in 1/2 cup of water and simmer until the pierogi dough is tender and the water has completely evaporated, 4 to 5 minutes. Lower the heat to medium and continue cooking until the bottoms are golden brown, 2 to 3 minutes more; watch carefully as they can go from golden to burnt quickly. Remove from the heat.
  • While the pierogies cook, heat the remaining 1 tablespoon oil in a large skillet over medium heat. When the oil is shimmering, squeeze the sausage out of the casings into the skillet. Cook the sausage, stirring frequently and breaking it up into bite-size pieces, until browned, 5 to 6 minutes. Add the garlic and pepper flakes and stir until the garlic begins to brown, about 30 seconds. Stir in the broccoli. Stir in the broth, scraping the bottom of the pan to release any browned bits. Sprinkle with the Parmesan. Reduce the heat and simmer, uncovered, until the liquid is reduced by half and the broccoli is tender, 4 to 5 minutes. Remove from the heat.
  • Transfer the pierogies to a large, shallow serving dish and top with the sausage and broccoli mixture. Toss everything to combine and sprinkle with extra Parmesan.

1/3 cup chopped onion
1 tablespoon butter
3/4 cup milk
1 (3 ounce) package cream cheese
3 eggs
1 cup shredded cheddar cheese
1/2 teaspoon Worcestershire sauce
1/2 teaspoon salt (use less if the sausage is salty)
1/8 teaspoon pepper
1 (9 inch) deep dish pie shells, partially baked and cooled

Steps:

  • Preheat the oven to 375°.
  • In a heavy skillet over medium heat, crumble the sausage with a fork.
  • Sauté the sausage until completely cooked.
  • Drain off the fat, remove the sausage, and set aside.
  • Melt the butter in another skillet over medium heat.
  • Sauté the onions in the butter until tender.
  • Add the milk and heat until steam rises, but do not boil the milk.
  • Cut the cream cheese into small pieces, add it to the onion mixture, and remove the pan from the heat.
  • In a large bowl, beat the eggs, then add the cheddar, the onion mixture, the Worcestershire, salt, and pepper.

1/2 small white onion, chopped

Steps:

  • Heat olive oil in a skillet; add sausage, garlic and onions and saute until brown.

6 tablespoons unsalted butter
1 pound mild Italian sausage, casing removed
2 cloves garlic, minced
3 tablespoons all-purpose flour
3 cups milk
12 ounces shredded whole milk mozzarella (about 3 cups)
8 ounces shredded fontina cheese (about 2 cups)
Kosher salt and freshly ground black pepper
1 pound meze rigatoni
12 ounces broccoli, trimmed and cut into small florets (from 1 medium bunch)
1 cup panko breadcrumbs
2 tablespoons chopped parsley
1/4 cup freshly grated Parmesan

Steps:

  • Preheat the oven to 425 degrees F. Bring a large pot of water to a boil over high heat.
  • Melt 1 tablespoon of the butter in a large pot or Dutch oven over medium-high heat. Add the sausage and cook, breaking up the sausage with a wooden spoon into small pieces, until browned and cooked through, about 6 minutes. Use a slotted spoon to transfer the sausage to a medium bowl, then reduce the heat to medium.
  • Add 3 more tablespoons of the butter and the garlic to the same pot. Cook until the butter has melted and the garlic is softened slightly, about 1 minute. Whisk in the flour and cook until it's bubbling all over and no longer raw, about 2 minutes. Slowly whisk in the milk, then bring to a steady simmer. Simmer until it has thickened slightly, about 2 minutes. Whisk in the mozzarella and fontina until smooth. Season with 1 1/4 teaspoon salt and a few good grinds of pepper. Keep warm over low heat.
  • Meanwhile, season the pot of boiling water generously with salt (it should taste like the ocean). Add the pasta and cook until al dente, adding the broccoli florets during the last 4 minutes of cooking, about 8 minutes total.
  • Use a spider to transfer the pasta and broccoli into the cheese sauce and stir until evenly coated. Stir in the sausage. Transfer to a 9-by-13-inch baking dish.
  • Melt the remaining 2 tablespoons butter in a small saucepan. Stir in the breadcrumbs and parsley then sprinkle evenly over the pasta. Top with the Parmesan. Bake until the sauce is bubbling around the sides and the breadcrumb topping is golden brown, 12 to 15 minutes. Let sit 10 minutes before serving.

  • In a skillet, fry sausage over medium heat until no longer pink; drain, and reserve.
  • In the same skillet, cook garlic in olive oil until golden.

1 recipe pizza dough (see above)
12 ounces broccoli
4 tablespoons olive oil
2 cloves garlic
1 teaspoon red pepper flakes
4 Italian butcher sausages or coarse-cut pork sausages
2 large ripe tomatoes
salt and pepper

Steps:

  • Preheat oven to 425 degrees. Divide the dough into two parts, one slightly larger than the other. Roll out the larger piece into a 12-inch circle and let it rise on a flat oiled pizza tin. Roll out the second piece into a slightly smaller circle and leave it on a floured work surface.
  • Trim the broccoli, cook in salted boiling water until almost tender, drain and chop into pieces the size of small walnuts. In a saute or frying pan, heat two tablespoons of the olive oil and warm the garlic, sliced, and the red pepper flakes. Do not let these burn. Add the broccoli and turn it until it has absorbed the flavors.
  • In another pan, heat another tablespoon of oil and gently brown the sausages, skinned and crumbled into small pieces. Mix the broccoli and cooked sausage, taste to check the seasoning and let the mixture cool.
  • Spread the filling over the larger circle of dough, leaving a border around the edge. Peel and thinly slice the tomatoes and arrange them over the filling, then salt and pepper to taste. Take the smaller circle of dough and place it on top of the filling. Bring the edges of the bottom circle up and over the top circle, pinching them together to tightly seal. Paint on the remaining olive oil and bake for 20 to 25 minutes until the crust is golden and crisp.
