Try Alton Brown's take on the Southern classic ambrosia, a holiday fruit salad with clementines, pineapples, maraschino cherries and even marshmallows.

1/2 cup heavy cream
1 tablespoon sugar
4 ounces sour cream
6 ounces homemade mini marshmallows, approximately 3 cups
1 cup clementine orange segments, approximately 6 clementines
1 cup chopped fresh pineapple
1 cup freshly grated coconut
1 cup toasted, chopped pecans
1/2 cup drained maraschino cherries

Steps:

  • Place the cream and sugar into the bowl of a stand mixer with the whisk attachment and whip until stiff peaks are formed. Add the sour cream and whisk to combine. Add the marshmallows, orange, pineapple, coconut, pecans and cherries and stir to combine. Transfer to a glass serving bowl, cover and place in the refrigerator for 2 hours before serving.

1 (6 ounce) can pineapple tidbits, drained

1 ounce active dry yeast
1 1/3 cups warm water (110°F)
3 extra large eggs
1/4 cup butter or 1/4 cup margarine, not spread or tub product,melted,plus
1 1/2 teaspoons butter or 1 1/2 teaspoons margarine
1/2 cup granulated sugar
1/3 cup nonfat dry milk powder
1/2 teaspoon salt
5 cups all-purpose flour
vegetable oil

Steps:

  • In large mixing bowl, dissolve yeast in warm water.
  • Add eggs and butter.
  • Using dough hook of electric mixer, beat on medium speed until well blended.
  • Add sugar, dry milk, and salt; mix well.
  • Add flour, 1 cup at a time, mixing until dough begins to pull away from side of bowl.
  • Lightly grease top of dough with oil.
  • Cover loosely and let rise in warm place 1 hour or until doubled in size.
  • Lightly grease 12 medium muffin cups.
  • Punch dough down.
  • Divide dough evenly into 12 pieces.
  • Divide each piece into 3 balls and place in muffin cup.
  • Let rise in warm place 1 hour.
  • While dough is rising for the second time, preheat oven to 350°F Bake 15 to 20 minutes or until golden brown.

4 cups apples, cubed (use a highly flavored variety such as Winesap or Granny Smith)
2 cups canned pineapple tidbits, drained
1 cup celery, chopped
1/2 cup mayonnaise
1/4 cup whipping cream
1 tablespoon powdered sugar
1 drop vanilla extract
1 tablespoon walnuts or 1 tablespoon pecans, chopped

Steps:

  • In large bowl, combine apples and next three ingredients ingredients; toss lightly to coat evenly.
  • In another bowl, whip cream at high speed with an electric mixer just until stiff peaks form, taking care not to overbeat. Blend in sugar and vanilla.
  • Fold into fruit.
  • Cover and refrigerate at least 2 hours. Garnish with walnuts.

1 cup carrot, peeled and sliced 1/8 inch thick
4 cups summer squash, slices 1/4 inch thick
4 cups zucchini, slices 1/4 inch thick
1/2 cup chopped onion
1 (10 1/2 ounce) can condensed cream of chicken soup
1/2 cup sour cream
1 teaspoon salt
1/2 teaspoon pepper
2/3 cup crumbled cornbread (leftover from the recipe of your choice)
2/3 cup dry white bread, torn or chopped in 1/4 inch pieces
2 tablespoons butter or 2 tablespoons margarine, melted (not spread or tub product)

Steps:

  • Preheat oven to 350°F and spray a 2 quart baking dish with cooking spray.
  • In medium saucepan, bring about 4 cups water to a boil.
  • Add carrots.
  • Reduce heat, cover and simmer 6 minutes.
  • Add squash, zucchini and onion.
  • Continue simmering uncovered 3-4 minutes or until carrots are tender crisp.
  • Drain and transfer to a large bowl.
  • In a small bowl stir together next four ingredients until well blended.
  • Pour over vegetables and mix well.
  • Transfer to a 2–quart baking dish.
  • Cover with foil.
  • Bake 30 minutes.
  • In medium bowl combine breads, add melted butter and toss together lightly to coat evenly.
  • Remove foil from the casserole dish.
  • Top vegetable mixture with bread/corn bread mixture and continue baking an additional five minutes.
  • Serve hot.

1 tablespoon flour
1/2 teaspoon ground nutmeg
1 cup half-and-half
2 tablespoons butter or 2 tablespoons margarine
4 eggs, slightly beaten
1 teaspoon lemon juice, fresh is best
1/2 teaspoon lemon rind, grated
1 unbaked 9-inch pie shell
whipped cream (optional)

Steps:

  • Preheat oven to 350°F.
  • In a large bowl, thoroughly blend sugar, flour and nutmeg.
  • Stir in half and half.
  • Add eggs; mix well.
  • Add lemon juice, peel and margarine.
  • Beat well to blend.
  • Pour into pie shell.
  • Bake for 45 minutes until center is almost firm (pie will continue to firm up during the cooling process).
  • If the pie crust edges brown too quickly, cover with strips of aluminum foil.
  • Serve with whipped cream.
