SUGAR FREE, LOW FAT OATMEAL COOKIES

3 medium ripe bananas
1/3 c applesauce
2 c oats
1/4 c almond milk
1/2 c raisins (optional)
1 tsp cinnamon
1 Tbsp vanilla extract

Steps:

  • 1. Using a fork, smash the ripe bananas in a medium bowl.
  • 2. Mix in applesauce and almond milk.
  • 3. Blend in cinnamon and vanilla.
  • 4. Stir in oats and raisins, just mixing until all ingredients are well incorporated.
  • 5. Spoon onto cookie sheet by Tablespoon and bake in preheated oven at 350 degrees for 15 mins.

modified oatmeal cookie recipe that is high in fiber, low in fat, low in sugar. they are not the most wonderful cookies in the world but if you are really wanting a cookie and you are trying to avoid sugar they do the trick and also are too filling to overdue it. Also, they have some omega 3 from the walnuts and some folic acid from the wheat germ.

1/4 cup butter, softened
1/2 cup brown sugar
1/4 cup granulated sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
2 eggs
1 3/4 cups flour
2 cups rolled oats
1 cup unsweetened applesauce
2 tablespoons wheat germ
1/4 cup shredded wheat cereal, crushed
2 tablespoons walnuts
1/4 cup raisins

Steps:

  • Mix softened butter and applesauce together with mixer. Add egg, baking powder, baking soda, cinnamon, cloves, brown sugar, and granulated white sugar, mix on low-medium for a couple minutes.
  • In separate bowl mix up dry ingredients: rolled oats, flour, wheat germ, and crushed Shredded Wheat Cereal, (set walnuts and raisins to the side).
  • Add the dry ingredients to the wet ingredients using the mixer until they cannot be mixed with mixer and then stir in with spoon.
  • Fold in nuts and raisins last.
  • Bake at 375°F on an ungreased cookie sheet for 8-10 minutes.
  • Makes 24 cookies (medium sized cookies).

1/4 cup butter or 1/4 cup margarine
1/4 cup applesauce (I recommend natural unsweetened applesauce)
1/3 cup brown sugar
1/8 cup granulated sugar
1 egg
3/4 teaspoon vanilla
3/4 cup all-purpose flour
1/2 teaspoon baking soda
3/4 teaspoon cinnamon
1 dash cardamom (optional)
1/4 teaspoon salt
1 3/4 cups oatmeal
3/4 cup raisins (or other dried fruit)

Steps:

  • Preheat oven to 350 degrees.
  • Cream butter and sugars together by beating on high speed for 1-2 minutes.
  • Add egg and vanilla. Continue beating until incorporated.
  • Combine flour, baking soda, cinnamon, cardamom (if using), and salt in separate bowl. While beating previous mixture, slowly add dry ingredients.
  • Using a large spoon, stir in oatmeal and raisins (dried fruits).
  • Dollop a Tbsp amount of cookie dough on ungreased cookie sheet.
  • Bake 10-12 minutes or until center appears to be set (may still look slightly moist in middle).
  • Let rest on cookie sheet for 1 minute, then transfer to a cooling wire rack.
  • Enjoy!

I used the "fruity birthday cupcake" recipe out of the Organic Baby and Toddler cookbook, and tweaked it to make some great cookies for my kids! Hope you guys enjoy these. My kids keep asking for more!

6 tablespoons organic yogurt (flavoring is your choice, but I use the Vanana from Trader Joe's)
3 organic bananas (I used very ripe ones, like the type you'd use for banana bread. I find they have great flavor)
2 organic eggs
1/4 cup organic milk (I use low fat)
4 tablespoons honey
1 2/3 cups whole wheat flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1 1/2 cups oats
1/2 cup organic raisins

Steps:

  • Preheat the oven to 400 degrees.
  • Cream together the yogurt and banans in a large bowl.
  • Gradually work the egg, milk, honey, flour, baking powder and soda, and oats into the mixture.
  • Stir in the raisins.
  • Drop batter by tablespoon fulls onto parchment lined baking sheet (get as many as you can on the sheet. These cookies don't spread out).
  • Bake for 7 minutes at 400 degrees.
  • Remove from the oven and cool.

1 cup unsalted butter, at room temperature
1/3 cup pure granulated fructose
1 egg
2 teaspoons vanilla extract
1 cup whole-wheat flour
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 teaspoon baking soda
2 cups rolled oats
1 cup chopped pecans or walnuts
1/3 cup raisins (optional)

Steps:

  • Preheat oven to 350° F. Line baking sheet(s) with parchment or spray with nonstick cooking spray. Using an electric mixer, cream butter and fructose until light and fluffy. Beat in vanilla. In a separate bowl, whisk together flour, cinnamon, nutmeg and baking soda. Gradually beat into butter mixture. By hand, stir in oats, nuts and raisins (if using). Drop by rounded teaspoonfuls onto prepared sheet(s). (The dough will be stiff. Use the back of the spoon to flatten each cookie slightly.) Bake for about 15 minutes, or until browned. Cool on sheets for a minute or two; then transfer to wire racks to cool completely.
