The Best Classic Low Sodium Chili - This hearty chili recipe made with ground beef, lots of beans, onion and a simple homemade blend of chili seasoning.

3 pound 90% lean ground beef (or meat of choice)
3 tablespoon olive oil
1 large green pepper
3 medium yellow onion -diced
6 Tbs chili powder
4 tsp ground cumin
4 Tbs dark brown sugar (or white sugar)
1 Tbsp smoked paprika
1.5 tsp ground black pepper
0.75 tsp ground cayenne pepper
2 tsp roasted cinnamon
3 Tbs pre-minced garlic
6 Tbs tomato paste no salt added
3.5 cups beef broth no salt added or water
1 28 oz. Muir Glen fire roasted tomatoes no salt added
3 15.5 oz. can red kidney beans no salt added (drained)
1 28 oz. can crushed tomatoes no salt added
1 15 oz. can sweet corn no salt added
1 10 oz. can Ro*Tel diced tomatoes and green chilies no salt added

Steps:

  • Add the olive oil to a large soup pot and preheat over medium-high heat. Add the ground beef to the pot. Allow to cook then start to break it apart to smaller bits. Cook for 6-7 minutes, until the beef is mostly browned, stirring occasionally. Add onion, green pepper when beef is about 3/4 done and stir to mix.
  • Add the broth or water, and the remaining canned ingredients. Stir well.
  • Add the chili powder, cumin, sugar, pre-minced garlic, smoked paprika, cinammon, pepper, and optional cayenne. Stir until well combined.
  • Bring the mix to a low boil for about 5 minutes. Then, reduce the heat (low to medium-low) to gently simmer, covered, for 20-25 minutes, stirring occasionally.
  • To really let the flavor develop and make a far superior chili, let simmer for two hours, stirring occasionally.
  • Remove the pot from the heat. Let the chili rest for 5-10 minutes before serving.
  • Let cool completely before storing in airtight containers in the fridge.

12 dried hatch chiles, medium (Mesilla Valey) or 12 hatch chiles, hot (Mesilla Valey)
3 1/2 cups water
2 garlic cloves, whole
2 teaspoons salt
2 tablespoons oil
1 tablespoon flour
1 teaspoon oregano leaves, dried, crushed

Steps:

  • Rinse chile pods, remove stems and seeds.
  • Place water and pods in a pan and heat to boiling.
  • Reduce heat and allow to simmer until pods are soft and pulpy (about 20 minutes).
  • Remove pods and place in a blender, setting aside cooking liquid.
  • (Add salt, garlic gloves & Oregano in blender at this time as well -- ).
  • Run through blender until pods form a smooth paste.
  • In a large skillet, heat 2 Tbsps. oil.
  • Add flour and brown lightly.
  • Remove from heat, add chiles to flour mixture, contining to stir until lumps are dissolved.
  • Return to heat, stir enough of the cooking liquid to make a gravy like consistency.
  • Simmer for about 10 minutes.
  • May be frozen for future use.

1 lb lean ground beef
1 can no-salt-added pinto beans
1 can no-salt-added kidney beans
1 can low-sodium crushed tomatoes
1 can low-sodium tomato puree
4 teaspoons oregano
4 tablespoons paprika
2 tablespoons garlic powder
1 tablespoon onion powder
2 teaspoons Tabasco sauce
1/4 teaspoon salt
1 1/2 teaspoons black pepper
1 teaspoon cayenne pepper
2 teaspoons ground cumin
2 teaspoons minced garlic
1 1/2 cups chopped onions
1 1/2 cups chopped green peppers

Steps:

  • Brown ground beef, rinse under water.
  • Brown peppers, onion and garlic.
  • Mix all ingredients in crock pot.
  • Let cook at low heat for 4- 8 hours.
  • Ready when you get home from work!

Every Christmas my mom makes tamales and pozole and I can't have either without her red chili. So simple and so much better than canned, but be careful when blending because this can be messy and red chili stains!

1 (9 ounce) bag red dried New Mexico chiles
2 teaspoons garlic powder, divided
4 -6 teaspoons salt, divided
water, to cover

Steps:

  • Remove stems and using a small knife slice the chilies lengthwise.
  • Remove seeds and veins.
  • Rinse with hot water.
  • Put chilies in a large pot and cover with water, bring to a low boil.
  • Let chilies boil until they turn bright red and soft, approximately 10 minutes.
  • Remove from water and let cool; reserve water for later use.
  • Working in batches fill a blender less than half way up with chilies and add about 2 cup of the water from the pot. Cover and blend on high (careful here, this stuff tends to splatter).
  • Once the blender is going remove the lid and add more chilies and water depending on the consistency, you don't want it too thick or too thin. you'll know its the right consistency when you can see a spinning vortex while blending.
  • These amounts will yield approximately 2 blenders full. Each batch should have approximately 4 oz chilies, 1 tsp garlic powder and 3 teaspoons sea salt. Add salt one tsp at a time and taste for preference.
  • Let blend on high for approximately 10 minutes each batch.
