This Keto 7 Layer Dip is the perfect low carb appetizer for all of your Mexican-themed party needs - or if you just have an insane craving for 7 layer dip but don't want to blow your carb budget on beans.

4 cups cooked cauliflower florets, well drained
2 tablespoons sugar free mayonnaise
1 teaspoon Creole seasoning (you can get this in the spice aisle or on Amazon)
3 tablespoons heavy whipping cream
1/2 teaspoon ground cumin
3 tablespoons canned chipotle in adobo sauce
1 tablespoon avocado oil (or other light tasting oil)
2 cups mashed avocado
2 teaspoons lime juice
1/2 teaspoon kosher salt
1/4 teaspoon ground black pepper
2 cups full fat sour cream
1 teaspoon Creole seasoning
1 cup chopped tomatoes
1 cup finely shredded cheddar cheese
1/2 cup chopped scallions
1/4 cup sliced black olives
2 tablespoons chopped cilantro (optional)

Steps:

  • Combine the cooked cauliflower, mayonnaise, Creole seasoning, heavy whipping cream, cumin, chipotle, and avocado oil in a blender or food processor.
  • Blend until mostly smooth and thick.
  • Mash the avocados with a fork until a slightly chunky consistency is reached.
  • Stir in the lime juice, salt and pepper.
  • In an 8 inch trifle bowl or casserole dish, spread the cauliflower layer evenly over the bottom.
  • Spread the sour cream layer over the cauliflower layer.
  • Drop the avocado mixture by spoonfuls over the sour cream layer and carefully spread out until fully covered.
  • Sprinkle the Creole seasoning over the avocado layer.
  • Spread the chopped tomatoes over the avocado layer.
  • Sprinkle the shredded cheese evenly over the tomatoes.
  • Toss the scallions on over the tomato layer.
  • Dot the olive slices evenly over the top of the scallions.
  • Garnish with chopped cilantro if using.
  • Serve immediately, or store covered in the refrigerator for up to 5 days. Do not freeze.

1 (8 ounce) container fat-free sour cream
2 cloves garlic, minced
1 fresh jalapeno pepper, finely diced
1 tablespoon chopped fresh cilantro
1 (1 ounce) packet taco seasoning
5 dashes hot pepper sauce
1 lemon, juiced
2 avocados - peeled, pitted, and mashed
3 cups shredded lettuce
1 (15 ounce) can black beans, rinsed and drained
2 (11 ounce) cans Mexican-style corn, drained
1 cup chunky salsa
1 cup shredded Mexican cheese blend
1 (2.25 ounce) can sliced black olives, drained
ΒΌ cup sliced green onions
1 Roma (plum) tomato, chopped

Steps:

  • Mix together the sour cream, garlic, jalapeno pepper, cilantro, taco seasoning, hot pepper sauce, and 1/2 of the lemon juice in a bowl until well blended.
  • In another bowl, mash the avocado with the remaining lemon juice; set aside.
  • Spread the shredded lettuce over a 12-inch serving platter.
  • Layer the black beans evenly on top, followed by the Mexican-style corn.
  • Spread the prepared sour cream mixture over the corn.
  • Gently spread the avocado mixture on top of the sour cream.
  • Pour the salsa evenly over the avocado mixture.
  • Sprinkle the Mexican cheese blend, olives, green onions, and tomato on top.

Also called 7 Layer Dip. This recipe came from Family Circle Magazine sometime around the late 70's, it also said it appeared in the Ft. Worth Star-Telegram which I use to read faithfully. This has been my sons favorite dip for years.

3 medium ripe avocados
2 tablespoons lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper
1 (8 ounce) sour cream
1/2 cup mayonnaise
1 (1/4-1 1/8 ounce) package taco seasoning mix
2 (10 1/2 ounce) cans bean dip
1 bunch green onions with top, chopped (1 cup)
3 medium tomatoes, cored, halved, seeded and coarsely chopped (2 cups)
2 (3 1/2 ounce) cans pitted ripe olives, drained, coarsely chopped
1 (8 ounce) package sharp cheddar cheese, shredded
tortilla chips

Steps:

  • Peel, pit and mash avocados in a medium-size bowl with lemon juice, salt and pepper.
  • Combine sour cream, mayonnaise, and taco seasoning mix in a bowl.
  • To assemble: Spread bean dip on a large shallow serving platter; top with seasoned avocado mixture; layer with sour cream-taco mixture.
  • Sprinkle with chopped onions, tomatoes and olives; cover with shredded cheese.
  • Serve chilled or at room temperature with round tortilla chips.
