LOW-FAT YOGURT PUDDING

Steps:
- I've used a strawberry flavored soy yogurt.
- Pour the gelatin leafs into a cold water for 3 - 4 minutes.
- Meanwhile combine the yogurt with the sugar into a medium saucepan and heat over medium heat about a minute, stirring to dissolve the sugar.
- Squeeze the softened gelatin leafs from the water and dissolve into a small saucepan with 2 tbsp of water over low heat. Remove from the heat and add to the yogurt mixture, stir well. Divide the mixture into an individual silicon pudding caps and pour into the refrigerator. Chill at least 4 hours or overnight.
- Turn onto a serving dishes and serve with a whipped whipping cream or melted chocolate.

LOW FAT/HIGH PROTEIN YOGURT PUDDING
Simple, high protein, low cal, low fat snack / light meal. Create any flavor you like. The protein content will vary with your powder. I consider a serving of protein powder to be 30 to 40 grams, but if you need more or less by all means make the adjustment. Please don't use a food processor or blender for this as you need to beat some air into the mix. Over-processing will thin the mixture.

- Place all ingredients in a large bowl, beat (or whisk) until it starts to thicken slightly. Place back in containers and refrigerate 4 hours (or so) .
