Summertime Stove-Top Meatloaf image

Have you ever had a hankering for meatloaf but it's just too hot to turn the oven on? My SIL gave me this recipe for just such occasions.

Time 1h50m

Yield 3 loaves, 6-8 serving(s)

Number Of Ingredients 11

1 (8 ounce) can tomato sauce
8 -16 ounces water
1 (16 ounce) can tomatoes
3 -4 bay leaves
2 lbs ground sirloin
1 chopped onion
2 -3 carrots, shredded
2 beaten eggs
1/2 cup flour (a handful, not crumbs)
garlic powder
salt and pepper

Steps:

  • In a dutch oven, combine the tomato sauce, water and tomatoes. Mix well. Sauce should be diluted until like soup. You want 2-3 inches of liquid in pot. Add the bay leaves.
  • In a bowl combine and mix well: the ground sirloin, onion, carrots, and eggs. Sprinkle the flour over the meat to hold everything together. Add seasonings to taste. Mix well.
  • Shape the meat mixture into three "loaves" or balls. Place in Dutch oven.
  • Bring to a boil, reduce heat and simmer slowly, covered, about 1-1/2 hours or until done. Check occasionally to make sure sauce is not getting real thick. Add water as necessary.
  • This freezes nicely.
