This recipe yields 3 hearty loaves of bread Here is what I love about this recipe. It's simple, uses few ingredients and you have great results every time. Don't be afraid of making this bread! This is my own take on a recipe my sister-in-law shared with me. I played around with using different ingredients and have found that for a heartier loaf (perfect as a side to a homey soup) you can add oats. Also, ground flaxseed makes a healthy addition of Omega-3 fatty acids, as well as an extra dose of fiber. This bread is not too dense, but comes out soft enough for sandwiches and freezes extremely well. It makes awesome toast for any toast lovers too!

Number Of Ingredients 8

1 cup water (Warm)
2 tablespoons yeast
1 egg
1 1/2 teaspoons salt
1/3 cup honey
2 cups water
1/4 cup applesauce (plain)
7 -8 cups whole wheat flour

Steps:

  • Combine yeast and warm water and let sit for about 5-10 minutes. Add a pinch of sugar to hurry it along.
  • Mix egg, salt, honey, water and applesauce in large bowl.
  • Stir in 1-2 cups of flour until smooth.
  • Add in foamy yeast mixture.
  • Gradually add the rest of the flour, stirring with a wooden spoon until it becomes too difficult, and then begin to knead with both hands.
  • Turn dough out onto floured counter-top and knead until dough become elastic and smooth, form into a ball.
  • Grease large bowl and put dough in it, turning to coat it.
  • Cover with a damp towel, leaving it on counter to rise, or cover and refrigerate to bake later.
  • When well-risen (double its bulk-about 1 1/2 to 2 hours) turn out on counter, punch dough down and divide into three pieces. Roll each out into a long rectangle and roll up
  • Place each roll up piece of dough into a greased bread pan and let rise for 45-60 minutes.
  • Bake in oven at 350°F for exactly 30 minutes. Enjoy!
  • Freeze warm bread i bread bags to lock in moistness. May freeze extra loaves for up to 2 months. A family of four can easily eat two loaves in a week and half, leaving you to give one away, without freezing any. Enjoy!

3/4 cup wheat germ, divided
3/4 cup all-purpose flour
1/2 cup whole wheat flour
1/4 cup light brown sugar, packed
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup raisins
1 cup buttermilk (see directions for substitute directions)
1/4 cup butter or 1/4 cup margarine, melted
1 egg

Steps:

  • Preheat oven to 350. Spray 8x4" loaf pan with nonstick cooking spray. Measure 2 Tbsp wheat germ; set aside.
  • Combine remaining wheat germ, flours, sugar, baking soda, baking powder and salt in large bowl. Add raisins; stir until coated. Beat buttermilk, butter and egg in small bowl until blended. Stir into flour mixture. Pour into prepared pan; sprinkle with reserved 2 Tbsp wheat germ.
  • Bake 40-50 minutes or until toothpick inserted into center comes out clean. Cool in pan on wire rack 10 minutes. Remove from pan and cool 30 minutes on wire rack. Serve warm or at room temperature.

I developed this recipe over the years when I was trying to provide good nutrition for my children. Now my husband and I eat half a loaf the minute it comes out of the oven! We haven't bought bread at the grocery in years.

1 ½ tablespoons active dry yeast
2 ¾ cups warm water (110 degrees F)
3 cups whole wheat flour
1 cup wheat bran
5 cups bread flour, divided
1 cup wheat germ
1 cup dry non-fat milk powder
½ cup brown sugar
½ cup vital wheat gluten
2 tablespoons sesame seeds
1 tablespoon salt
¼ cup vegetable oil
2 eggs

Steps:

  • In a small mixing bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.
  • In a large mixing bowl, combine the whole wheat flour, wheat bran, 3 cups of the bread flour, wheat germ, milk powder, brown sugar, wheat gluten, sesame seeds, and salt; stir well. Mix in the yeast mixture, oil and eggs.
  • Add the remaining bread flour, 1/2 cup at a time, stirring well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes.
  • Lightly oil a large bowl. Place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
  • Deflate the dough and turn it out onto a lightly floured surface. Divide the dough into three equal pieces and form into loaves. Place the loaves into three lightly greased 8x4 inch loaf pans. Cover the loaves with a damp cloth and let rise until doubled in volume, about 40 minutes.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Bake at 375 degrees F (190 degrees C) for about 30 minutes or until the top is golden brown and the bottom of the loaf sounds hollow when tapped.

You don't need a lot of ingredients for this bread and it always turns out the same, which is why I love it. From The Bread Machine Cookbook by Donna German, who always gives amounts for small, medium and large machine. I'm posting the large recipe.

2 tablespoons butter or 2 tablespoons margarine
2 tablespoons sugar
1 teaspoon salt
2 cups whole wheat flour
2 cups white bread flour
2 teaspoons bread machine yeast

Steps:

  • Add ingredients to bread machine in the order given, or according to your machine instructions.
  • Set on whole wheat or basic cycle. On my very old Black and Decker machine I use the powdered milk/wheat setting.
  • This is a high rising whole wheat bread, and the large recipe usually squashes at the top of my machine. I can give small and medium versions if you send a private message.
