Potato wedges are oven-baked until crisp and golden brown and then sprinkled with salt, pepper and Parmesan. Trust us-they're even better than fried!

1/4 cup KRAFT Grated Parmesan Cheese
1 tsp. chili powder
1/2 tsp. garlic powder
1/4 tsp. ground black pepper
2 lb. baking potato es (about 4), cut into 1-inch-thick wedges
2 Tbsp. oil

Steps:

  • Heat oven to 450°F.
  • Mix first 4 ingredients. Toss potatoes with oil in large bowl. Add half of the cheese mixture; toss to coat. Spread potatoes in single layer on large baking sheet sprayed with cooking spray.
  • Bake 45 min. or until potatoes are crisp and golden brown; turning after 25 min. Transfer potatoes to large bowl lined with paper towels. Toss lightly to remove excess oil. Remove paper towels.
  • Sprinkle potatoes with remaining cheese mixture.

I found this recipe in a newspaper and adjusted it somewhat by adding additional Parmesan cheese. This is a wonderful side dish, and since the potatoes are cooked with the skin on, they are nutritious as well as delicious.

2 medium potatoes, sliced
1 tablespoon canola oil
3 tablespoons grated Parmesan cheese
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Place potatoes in a large bowl. Drizzle with oil. Sprinkle with cheese, garlic powder, paprika, salt and pepper; toss to coat. Transfer to a greased 15x10x1-in. baking pan., Bake, uncovered, at 450° for 25-30 minutes or until golden brown, stirring once.

4 large baking potatoes, peeled
1/2 teaspoon dried thyme
1/2 teaspoon black pepper
1 tablespoon olive oil
1/4 cup grated parmesan cheese
1/2 teaspoon salt

Steps:

  • Cut each potato into three pieces lengthwise and then into thick strips.
  • Pat dry with paper towels and place in a bowl.
  • Add thyme and pepper and toss well.
  • Drizzle olive oil over potatoes, tossing well to coat.
  • Arrange on baking sheet and bake at 450° for 30 minutes.
  • Sprinkle Parmesan cheese and salt evenly over potatoes and bake an additional 10 minutes or until tender and browned.

4 medium potatoes (about 5 ounces each)
1 tablespoon oil
1 tablespoon parmesan cheese, grated
1/2 teaspoon garlic powder

Steps:

  • Preheat oven to 450 degrees.
  • Scrub potatoes, but don't peel.
  • Cut in wedges or strips.
  • Place potato slices in a plastic bag with the oil and shake well to coat potatoes evenly.
  • In another plastic bag, mix seasonings.
  • Add potatoes and shake to coat.
  • Arrange potatoes, in a single layer, on a baking sheet that has been sprayed with non-stick cooking spray.

I don't really care for fish all that much, but decided to try this recipe one night out of a change of pace. I was shocked that the fish actually turned out tasting really good; almost like real fried fish! My husband, who usually won't eat any seafood, really liked this dish too. Please keep in mind that you may need a little more of the ingredients than this recipe calls for such as the cornflakes, depending on how crunchy you want your fish. I used a little more when I made it. Hope you like it!

2 frozen flounder fillets, thawed slightly in microwave
1/2 cup light sour cream
1 tablespoon lemon juice
1/2 teaspoon chili powder
1 cup crushed corn flakes
2 tablespoons light margarine

Steps:

  • Heat oven to 500 degrees and spray a baking pan with non-stick spray.
  • Thaw the fish in microwave until the fish is tender.
  • In med.
  • bowl mix together the sour cream, lemon juice and chili powder.
  • Dip the fish sour cream mixture then coat the fish with the corn flake crumbs.
  • Place in a baking dish and drizzle the margarine over the fish.
  • (The "I Can't Believe it's Not Butter" spray also works if you want an even lower fat and calorie dish.) Bake uncovered for 10-12 minutes or until fish flakes easily w/ a fork.
  • ****I suggest to prevent the fish sticking to the pan, spray the baking pan a little before the fish goes in.
  • I didn't spray it and the fish ended up sticking a little.

So yummy! (to me, these taste like the fry-daddy type french fries my mom made me when I was a kid!) 1 1/4 lbs baking potatoes, peeled and cut into 1/2-inch strips
1/2 teaspoon sugar
4 teaspoons oil
1 teaspoon paprika

  • Preheat oven to 450 degrees. Spray a non-stick baking sheet w/ non-stick cooking spray.
  • In a lg. bowl, combine potatoes, 1/4 teaspoons of the salt and all of sugar w/ cold water to cover. Soak 15 min, drain and blot dry.
  • In another lg. bowl, toss potatoes w/ oil and paprika. Place in a single layer on the baking sheet.
  • Bake, turning potatoes over as they brown, until cooked through and crisp. (Could take anywhere from 25-45 min., depending on how you cut your potatoes and your oven. My fries only took about 25 minute I checked on my potatoes and turned them about every 5 minute or so. You will see them browning and hear them sizzling.) Sprinkle w/ the remaining 1/2 teaspoons of salt.

1 tablespoon lemon juice
2 large baking potatoes, cut into wedges

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil and spray with vegetable cooking spray.
  • In a shallow bowl combine oil and lemon juice. Dip potatoes in oil/lemon mixture and season with salt and pepper, to taste. Place on baking sheet.
  • Bake in preheated oven for 20 minutes. Remove from oven and turn wedges over. Return to oven and continue cooking until crisp and brown on both sides, about 10 minutes more.
