1 1/2 cups of all-purpose flour
2 tablespoons of milk
1/2 cup of vegetable oil

Steps:

  • Pour oil and milk into a large mixing bowl and stir together.
  • Slowly add flour, stirring lightly with a fork.
  • Work mixture with your hands to form a large dough ball.
  • Continue to work the dough until it is no longer tacky to the touch.
  • Place dough ball between two pieces of wax paper and roll into a 12-inch circle.
  • Remove the top piece of wax paper. Pick up the dough using the bottom piece of wax paper. Place the dough, paper side up into a tin pie plate or glass dish that has been sprayed with non-stick. (Essentially you flip the dough so the dough side is in the dish and the remaining piece of wax paper is on the top)
  • Trim the excess pie dough from around the edges. If you prefer, pinch along the edge for a crimped look.
  • To pre-bake your pie shell, prick the bottom with a fork and bake at 450 for 12 minutes or until golden brown.
  • FOr an unbaked shell, fill the pie filling and bake as directed in the pie recipe.

Apple pie is my favorite pie. I make it for holidays and just because sometimes too. I wanted to cut out some of the fat from the butter so I cut it down and eliminate the sugar. It makes it caramel and better for you.

1 recipe pastry for a 9 inch double crust pie
¼ cup unsalted butter
3 tablespoons all-purpose flour
¼ cup water
½ cup packed brown sugar
8 Granny Smith apples - peeled, cored and sliced

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Melt the butter in a saucepan. Stir in flour to form a paste. Add water and brown sugar, and bring to a boil. Reduce temperature and let simmer.
  • Place the bottom crust in your pan. Fill with apples, mounded slightly. Cover with a lattice work of crust. Gently pour the sugar and butter liquid over the crust. Pour slowly so that it does not run off.
  • Bake 15 minutes in the preheated oven. Reduce the temperature to 350 degrees F (175 degrees C). Continue baking for 35 to 45 minutes, until apples are soft.

This is truly a low fat, low sodium desert... The crust isn't as 'crisp' as I would like but it still looks and tastes great... The Phyllo has 220 mg of sodium and the crackers have 40 mg... And with only one tablespoon of fat one could eat the whole pie and still comply with a low fat, low sodium diet.

5 sheets phyllo pastry sheets
38 oyster crackers, Finely Crushed (the cheap ones have less salt)
1 tablespoon canola oil
1 tablespoon skim milk
2 large apples
1/4 cup sugar (more or less)
2 -3 tablespoons cornstarch
cinnamon
sugar

Steps:

  • Core, peel and slice apples. Sprinkle with 1/4 cup sugar and corn starch. Mix and set aside.
  • Mix oil and milk. Place one Phyllo sheet on some paper towels, brush with milk mixture, sprinkle about 1/4 of the crushed oyster crackers. Place another sheet on top and repeat. Place sheets in a 9 inch pie pan. Do the same with two more sheets of Phyllo, placing them in the opposite direction.
  • Fill pie, sprinkle on the Cinnamon. Take the last sheet of Phyllo and brush with milk mixture, sprinkle the remaining cracker crumbs and fold in half. Place that on top of the pie and fold over and smooth down the edges of the other sheets. Brush top with the milk mixture and sprinkle with sugar.
  • Bake at 425° F until nicely browned -- .

3 tablespoons cornstarch
1 tablespoon ground cinnamon
1 (12 fluid ounce) can unsweetened apple juice concentrate, thawed
6 cups sliced green apples

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a small bowl whisk together cornstarch, cinnamon, and 1/3 cup of the apple juice concentrate. Set aside.
  • In a large saucepan simmer apples with remaining apple juice concentrate until apples are tender, about 10 minutes. Stir in cornstarch mixture and continue to simmer until thickened. Remove from heat.
  • Spoon apple mixture into pastry-lined pie plate. Cover with top crust. Seal and flute edges. Cut steam vents in top.

1 teaspoon salt
1 1/2 teaspoons cinnamon
2/3 cup shortening
1 tablespoon flour
5 -6 tablespoons cold water
1 1/2 tablespoons fat-free margarine
6 -7 medium apples, pared, cored, and sliced

Steps:

  • Crust: Mix flour, salt, and shortening until crumbly. Add cold water 1 tbsp at a time until it forms a ball. Roll out 1/2 mix to line a 9 inch pie pan.
  • Filling: Mix sugar, cinnamon, and flour together. Pour over apples. COver with top crust and bake 15 minutes at 425 degrees F, then continue baking 30 minutes at 350 degrees F.
