WONTON FRUIT CUPS
This was inspired by Creamy Fruit Cups (recipe #15419). I could only find fresh red grapes in my small town and had to improvise with other ingredients. I was pleased with the final result. I served these as part of buffet of finger foods at a breakfast party, but they could easily be a light dessert or part of an afternoon luncheon.

Steps:
- Preheat oven to 350 degrees.
- Spray mini muffin pan with cooking spray.
- Place a wonton wrapper in each muffin cup. Be careful to make sure that the edges of the wrapper do not fold back into the cup.
- Bake for 10 minutes, or until golden brown.
- Remove from muffin pan and cool completely.
- Combine grapes and yogurt.
- (Can be prepared to this point for later assembly.).
- To assemble fruit cups, spoon some grape mixture into each wonton cup.
- Top with a mandarin orange segment.
- Garnish with mint leaves, if desired.

WONTON YOGURT FRUIT CUPS RECIPE - (4/5)

- Directions: Brush first wonton wrapper with a little butter and nestle it down into one of the cups of a 12-cup muffin pan. Brush second wonton wrapper with butter and place diagonally on top of first one. Repeat to fill muffin cups. Transfer muffin pan to the oven and bake until golden brown and crisp, about 6 minutes. Cool. Fold the fruit spread into the yogurt and combine. Spoon approximately 2 Tbsp. of yogurt/fruit mixture into each wonton cup. Top with a combination of berries. Warm 2 Tbsp. of fruit spread in the microwave for 10 seconds. With a pastry brush, brush glaze over the fresh fruit.

- Place wonton wrappers on a work surface; spritz with butter flavored spray. Combine 1 tbsp sugar with cinnamon; srpinkle over wontons. Press into mini muffin cups coated with spray. Bake 350 for 4-5 min till light brown. Immediatley remove wonton cups to an ungreased sheet. Bake 2-3 minutes longer till bottoms are light brown. remove to rack. In a small bowl, beat cream cheese, vanilla and remaining sugar till smooth. Stir in chocolate chips and pecans. Spoon into wonton cups. Top each with a cherry.

CREAMY FRUIT CUPS
I got this recipe out of a diabetic cookbook published by "Prevention Guide". Very pretty dish for gatherings. Great comfort food with out the guilt afterwards. Make some ahead of time for lunch at work...makes you feel a little extra special! (will try to add a pic of it soon)

Steps:
- Preheat the oven to 350 degrees.
- Coat a 12-cup muffin pan with cooking spray.
- Line each cup with a wonton wrapper.
- Coat each wrapper with cooking spray.
- Place a second wrapper diagonally on top of each of the first ones, making sure that the points of the wrappers form sides to the cup.
- Coat the second wrapper with cooking spray.
- Bake for 10 minutes or until golden brown.
- Cool on a rack.
- Remove from the pan.
- In a medium bowl, combine 1 cup of the berries, the yogurt, and all- fruit spread.
- Gently toss to blend.
- Evenly divide the yogurt mixture among the cups.
- Top with the remaining 1/4 cup berries.

These are so good and light and refreshing and nice to have for dessert after a big meal. Low fat and yummy!!! - 1. Preheat oven to 350. Using a pastry brush, brush melted butter onto one side of wonton wrapper, sprinkle same side with sugar. Press each wrapper, sugar side up into mini muffin tin. Bake 6-8 minutes or until edges are golden brown. Cool completely on wire racks.
- 2. Whisk together sweetened condensed milk, lemon zest, lemon juice in a medium bowl. Fold in cool whip. Spoon into cooled wonton cups. Top with 2 or 3 fresh berries or 1 fanned strawberry.
- 3. *wonton wrappers can be baked up to a week ahead of time and stored at room temperature in a sealed bag or container.
- 4. *Can dust with powdered sugar if desired. *Can drizzle chocolate or white chocolate or both over tops. *Or a dalop of whipped cream on top is nice! (as shown in photo)
