- In a large bowl, combine the flour, cornmeal, sugar, baking powder and salt. In a small bowl, combine the egg whites, milk and applesauce. Stir into dry ingredients just until moistened. , Pour into a 9-in. square baking pan coated with cooking spray. Bake at 400° for 15-20 minutes or until a toothpick inserted in the center comes out clean. Remove from pan to wire rack. Serve warm.

Delicious cornbread that won't clog your arteries. I've adopted this recipe as it didn't have a loving owner. I have made it myself and you can read my comments in my review! I have updated the cooking time and added optional ingredients.

Steps:
- Preheat oven to 400 degrees F.
- In a medium mixing bowl, combine dry ingredients.
- Stir in yogurt and eggs. If using stir in corn and jalapeno peppers.
- Pour into 8 inch square pan sprayed with cooking spray (or use a cast iron skillet).
- Bake for approximately 20 minutes.
- Best served warm.
LOW FAT, SUGAR FREE CORNBREAD
This is a low cal modification of my mom's cornbread recipe. Using Splenda instead of sugar and "I Can't Believe It's Not Butter Lite" instead of butter or oil, makes a big difference in calories but not in taste. I just made some to serve with chili and it was great!

Steps:
- Preheat oven to 425°F.
- Coat an 8 inch square baking pan with nonstick cooking spray and dust with 2 tablespoons of cornmeal.
- Sift into a large bowl the remaining cornmeal, baking powder, baking soda, salt and flour.
- In another bowl, combine buttermilk, eggs, cheese and chilies, then stir into the dry ingredients.
- Pour batter into the prepared baking pan .
- Bake 18 minutes or until tester comes out clean. Makes 12 2 inch pieces.

- Preheat oven to 400°F; grease an 8-inch square pan or glass dish.
- Combine corn meal and soured milk in a small bowl and let sit for 5 minutes. Meanwhile, combine other dry ingredients in a larger bowl.
- Add crushed pineapple and egg (or egg whites) to corn meal mixture. Mix until combined.
- Add corn meal mixture to dry ingredients, mix until well combined.

CORNBREAD BROWNIES - LOW FAT, GLUTEN FREE
This recipe was developed for a challenge to make unusual cornbread. I've gone wheat-free, so used cocoa where I would have used flour and milled flaxseed/water for the fat. Added chocolate chips and walnuts, plus a little cinnamon and a dash of cayenne 'cause I'm crazy like that. Compared to 'real' brownies, 'real' wins, but they are pretty good compared to flaxseed muffins. Especially good warmed a little in the microwave with some greek yogurt or fruit.

- Preheat oven to 400 degrees. Grease 8x8 pan.
- Add milk to cornmeal, stir. In separate bowl, whisk egg, water, honey, and flaxseed. Let both mixtures sit about 15 minutes.
- Stir spices, baking powder, and cocoa into cornmeal mixture.
- Stir liquid (which is the consistency of applesauce after it sits) into cornmeal mixture.
- Fold in walnuts and chocolate chips.

LOW FAT DOUBLE CORNBREAD WITH STEVIA & YOGURT
My mom makes a delicious double cornbread, and I wanted to make some last night but I knew I didn't have all the right ingredients so I improvised this one a bit. It came out moist and I was really pleased! I didn't have enough wheat flour so I used some chickpea flour, but you can also just use regular flour for the whole thing and omit the xanthan gum. I also use So Delicious coconut milk (50 calories per cup, 5g fat) in a lot of my recipes because I don't drink cow's milk anymore, but I'm sure using regular or 2% milk would be fine. Some of the ingredients were not added in the nutrition facts, so here are the facts per serving: Calories: 154, Fat: 1.7, Sat Fat .5, Carbs 27.7, Sodium 410, Fiber 2.6, Sugar 1.7, Protein 8.1.
