CAULIFLOWER CASSEROLE
Creamy and cheesy cauliflower casserole with cream cheese and bacon is an easy, low-carb side dish perfect for holidays and gatherings.

- Place racks in the upper and lower thirds of your oven and preheat to 425 degrees F. Lightly coat a wide 3-quart (9x13) casserole dish, with nonstick spray, and line a rimmed baking sheet with parchment paper.
- In a large bowl, toss the cauliflower florets with olive oil, garlic powder, salt, pepper, and nutmeg.
- Transfer the cauliflower to the prepared casserole dish and spread it into an even layer. Keep the bowl handy. Roast cauliflower on the lower rack for 30 minutes, until the florets are tender and begin to brown.
- Meanwhile, arrange the bacon strips in a single layer on the prepared foil-lined baking sheet. Bake on the upper rack until crisp, about 10 to 15 minutes.
- Remove the bacon and cauliflower from the oven. Stir the cauliflower, spread it back into an even layer, and place it on the upper rack to continue cooking until the end of its baking time.
- Transfer the bacon to a paper-towel-lined plate and lightly pat dry. Once cool enough to handle, roughly chop or crumble the bacon into small pieces.
- In the same bowl that you used to toss the cauliflower, beat together the cream cheese and Greek yogurt until combined. Stir in 1/3 cup Gruyere cheese, 2 tablespoons of Parmesan cheese, and half of the chopped bacon.
- Remove the roasted cauliflower from the oven and dollop the cream cheese mixture over the top. Sprinkle with the remaining 1/3 cup of Gruyere and 2 tablespoons of Parmesan.
- Return the pan to the upper third of the oven and bake until the cheese is melted and gooey, about 5 to 7 minutes. Turn the oven to broil. Broil the casserole until golden on top, 1 to 3 minutes. Do not walk away, and watch carefully to make sure the cheese does not burn.
- Remove from the oven and sprinkle with fresh chives and remaining bacon. Serve hot.

ROASTED CAULIFLOWER WITH BACON RECIPE

- Preheat your oven to 400 F. Toss the cauliflower in a medium-sized baking dish with some cooking fat and roast it in the oven for 20 minutes. While the cauliflower is cooking, fry the bacon in a skillet over a medium-high heat, until just done. Then remove it from the heat and chop it into bite-sized pieces when cool enough to handle. Once the cauliflower has cooked for 20 minutes, add the bacon to the baking dish and cook for another 5 minutes, until the bacon is nice and crispy. Season to taste with salt and pepper, and sprinkle with the green onion on top to serve.

- Preheat the oven to 350 degrees F (175 degrees C).
- Bring a saucepan of water to a boil. Add cauliflower and cook until tender, but not overly soft, 3 to 5 minutes. Drain well and transfer cauliflower to a large bowl. Mash, using a potato masher, leaving some chunks.
- Reserve 1/2 cup Cheddar cheese and 1 tablespoon bacon bits. Mix remaining Cheddar cheese, remaining bacon bits, cream cheese, sour cream, green onions, butter, salt, and pepper into the mashed cauliflower in the bowl. Transfer mixture to an 8-inch square baking dish. Sprinkle reserved Cheddar cheese and bacon bits on top.
- Bake in the preheated oven until hot and bubbly, 30 to 35 minutes.

- Place cauliflower in a steamer basket over boiling water.
- Cover pan and steam about 8 minutes or until almost tender.
- Remove steamer basket and set aside. Heat a heavy nonstick skillet over medium high heat. Cook bacon 4-5 minutes or until browned.
- Add scallions, cauliflower and salt and pepper to taste. Cook 2 minutes, stirring frequently until hot.

- Preheat oven to 400 degrees F (200 degrees C). Grease a large, square baking dish with cooking spray.
- Put cauliflower in a microwave-safe bowl and cook in microwave oven until tender, about 6 minutes.
- Blend cauliflower in a food processor until smooth; add sour cream, yogurt, and butter and process again until smooth.
- Mix blended cauliflower mixture in a bowl with 3/4 cup Cheddar cheese, bacon bits, chives, garlic, and black pepper; spread into the prepared baking dish and top with remaining Cheddar cheese.
- Bake in preheated oven on the middle rack until cheese is melted, about 15 minutes. Switch oven to 'broil' and continue baking until the top is golden brown, 3 to 5 minutes more.
