This delicious muffin makes wholesome eating fun. This muffin is low in fat, and has good carbs and lots of fiber. It's great for heart health and wonderful for diabetics because of the oats, fiber, and low fat. It's also not too heavy like most high-fiber muffins and it tastes great. It just uses one bowl, which make everyone's life easier!

1 cup old-fashioned oats
1 cup all-purpose flour
½ cup whole wheat flour
¾ teaspoon baking powder
½ teaspoon baking soda
¾ teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon sea salt
1 cup unsweetened applesauce
2 egg whites
½ cup skim milk
½ cup brown sugar
2 tablespoons canola oil
2 teaspoons vanilla extract
½ cup fresh raspberries
¼ cup fresh blueberries
¼ cup fresh blackberries

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line 12 muffin cups with paper or foil liners, or grease if not using liners.
  • Combine oats, all-purpose flour, whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, salt, applesauce, egg whites, milk, brown sugar, oil, and vanilla in a large bowl. Mix until blended. Fold in raspberries, blueberries, and blackberries. Divide batter evenly into the prepared muffin cups.
  • Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, 15 to 17 minutes.
  • Let muffins cool for 5 minutes in the pan before transferring to a cooling rack.

this is the basic recipe for low-fat muffins. You can make your own changes and substitutions to taste. Milk can be substituted with fruit juice. Nut, raisins or chocolate chips can be added to the batter. Unfortunately, it's impossible to turn into a gluten-free version, sorry!

150 g all-purpose flour
50 g cornstarch
50 g brown sugar
3 teaspoons baking powder
1 teaspoon pure vanilla extract
115 ml skim milk
2 egg whites
30 ml vegetable oil

Steps:

  • Turn on the oven to 180°C - 350°F Grease lightly a muffin cups.
  • In a large mixing bowl combine flour with cornstarch, baking powder and sugar.
  • Stir.
  • In another bowl beat egg whites until fluffy, gradually add milk and oil.
  • Add vanilla extract.
  • Stir in the flour mixture. Do not overbeat the batter.
  • At this point you can add any other extra ingredient you like: nuts, raisins, chocolate chips --
  • Fill the muffin cups about 3/4 full.
  • Bake in the preheated oven about 25-30 minutes.
  • Do not open the oven for the first 20 minutes. After that time you can check if muffins are ready by insering a toothpick in the center of the muffins. If it comes out clean, they are ready.

2/3 cup roasted sunflower seeds
1 cup whole wheat flour
1/2 cup unbleached flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1 egg
2 tablespoons oil
3/4 cup grated carrot
1/2 cup unsweetened applesauce
1/2 cup packed brown sugar
1/2 cup orange juice
1 teaspoon vanilla
1/2 cup raisins

Steps:

  • Combine dry ingredients (flour through cinnamon) in large bowl.
  • Whisk together egg and oil till smooth in medium bowl.
  • Add all remaining ingredients (except raisins) and whisk till blended.
  • Stir in raisins.
  • Add wet ingredients to flour mixture, and whisk just until combined.
  • Divide batter among 12 sprayed or lined muffin cups, filling cups nearly full.
  • Bake at 375°F until muffins have risen slightly and are golden brown, 25-30 minutes.
  • Serve warm, refrigerate, or freeze.
