1 cup nonfat plain yogurt
2 tablespoons chopped onion
1 garlic clove, minced
1 tablespoon crumbled blue cheese

Steps:

  • In a blender or food processor, combine cottage cheese, yogurt, onion and garlic; process until smooth. Stir in blue cheese. Store, covered, in the refrigerator.

1/4 cup low-fat sour cream
1/4 cup blue cheese (crumbled)
1 teaspoon parsley flakes (dry)
1 small garlic clove, mashed
1 dash Worcestershire sauce
1 -2 tablespoon low-fat milk (to thin)

Steps:

  • Combine first six ingredients in food processor.
  • Add milk to desired thinness.
  • Blend till smooth.

1/4 cup reduced-fat mayonnaise
1/4 cup reduced-fat sour cream
1/4 cup water
1 tablespoon red-wine vinegar
1 tablespoon minced shallot
1/2 cup crumbled blue cheese (about 2 ounces)
Coarse salt and ground pepper
1 head iceberg lettuce

Steps:

  • In a medium bowl, whisk reduced-fat mayonnaise, reduced-fat sour cream, and water with red-wine vinegar. Stir in minced shallot and crumbled blue cheese (2 ounces), breaking up large pieces of cheese with the spoon. Season with coarse salt and ground pepper.
  • Slice iceberg lettuce into 8 wedges (remove core). Place 2 wedges on each plate; drizzle with dressing. Serve immediately.

2 tablespoons fat-free mayonnaise
1/4 cup low-fat buttermilk
1/4 cup plain fat-free yogurt
1 tablespoon white vinegar
1/2 teaspoon Splenda sugar substitute
1/3 cup crumbled blue cheese
salt & freshly ground black pepper

Steps:

  • Drain yogurt through a coffee filter paper for 1/2 hour, so that some of the liquid drains out.
  • In a bowl, whisk the buttermilk and thickened yogurt with the mayonnaise until smooth.
  • Add the vinegar and Splenda and mix until all the ingredients are well combined.
  • Stir in the blue cheese and season to taste, with salt and pepper.
  • Let it sit in the fridge for 30 minutes before using.
