A lightened up version of a breakfast favorite. You can make it even more points-friendly by substituting whole wheat flour for part of the AP Flour.

Number Of Ingredients 9

2 cups all-purpose flour
2 tablespoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon sugar
2 tablespoons vegetable shortening, cold
1 cup plain nonfat yogurt
1/4 cup half & half light cream
flour, for dusting

Steps:

  • Combine dry ingredients in a medium mixing bowl with a whisk.
  • Mix in shortening with your fingers until it resembles a coarse crumb (or use a food processor).
  • Stir in yogurt and half and half until it just comes together, do not over mix.
  • Lay out a sheet of wax paper, parchment paper or freezer paper and dust with flour.
  • Dump out dough and coat your hands with flour. Pat out until its about 1" thick.
  • Using the paper, fold over the dough and pat out, repeating about 4 times.
  • Pat out dough to about 3/4" and cut with a 2" ring cutter.
  • Bake in a 400 degree oven for 14-16 minutes.

1 1/2 C (180g) All Purpose Flour
2 Tbsp (24g) Granulated Sugar Substitute*
1/2 Tbsp Baking Powder
1/2 tsp Kosher Salt (or 1/4 tsp table salt)
3/4 C (170g) Fat Free Greek Yogurt
2 Tbsp (28g) Light Butter**
1 Egg Yolk, for brushing***

Steps:

  • Preheat oven to 375F and spray a baking sheet with cooking spray. Set aside.
  • Mix the dry ingredients together in a large bowl before cutting the butter in with a fork.
  • Add the Greek yogurt and mix until a dough begins to form. Don't over mix. There should be some remaining flour in the bowl.
  • Empty the dough and remaining dry ingredients onto a flat surface. Use your hands to work everything together until no crumbs remain.
  • Press the dough into a rectangle before cutting the dough into 6 pieces.
  • Brush the 6 pieces with an egg yolk (or other options from the notes) and add to the baking sheet. Bake for 25-30 minutes or until the biscuits have risen and their tops are golden brown.

Everyone tells me that you can't make good lowfat biscuits, but I think that this recipe proves them wrong. These are tender, but hearty with a little whole wheat flour.

1 1/2 cups all-purpose flour
1/2 cup whole wheat pastry flour
2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons vegetable oil
1 cup nonfat plain yogurt

Steps:

  • Preheat oven to 400.
  • Combine all-purpose and pastry flour with baking powder and salt.
  • In a separate bowl, combine yogurt and oil.
  • Blend yogurt mixture into flour mixture just until the dry ingredients are moistened and it forms a dough.
  • On a floured surface, pat the dough out into a circle 3/4-inch thick.
  • Using a knife or a pizza cutter, cut the circle into eight wedges.
  • Place wedges on an oiled baking sheet or a baking stone.
  • Bake for 20 minutes or until a knife iserted in the center comes out clean.

Biscuits are one of those items that go with an array of dishes. I've recreated this recipe to be lowfat and sugar free, so you REALLY can't go wrong with these! They brown nice and light on the outside, yet stay really moist and soft on the inside. Recently, I just made this recipe, sliced the biscuits in half, and stuffed them with a scrambled egg dish and cheese. Really tasty! Of course, they also pair nicely with a good stew, too! Or just eat them by themselves! :0) Enjoy!!

2 cups whole wheat flour
4 teaspoons baking powder
3/4 teaspoon salt
2 tablespoons honey (add more if you want a sweeter biscuit)
1/3 cup vanilla yogurt
3/4 cup milk

Steps:

  • Preheat oven to 425 degrees.
  • In a bowl, combine flour, baking powder, and salt.
  • Add yogurt and honey. With a fork, "cut in" the yogurt and honey to the dry ingredients (like you would with buttter), and combine until crumbly.
  • Add milk and stir until the dough forms a ball.
  • Pat or roll the dough out to 1/2-1 inch thick (depending on how big you want your biscuits).
  • With a floured glass or circular cutter, cut dough into circles.
  • Place biscuits on a greased cookie sheet.
