1 cup Unsalted butter ((softened; 2 sticks))
2/3 cup Besti Monk Fruit Allulose Blend
4 large Eggs ((at room temperature))
1/2 tbsp Vanilla extract
2 1/2 cups Wholesome Yum Blanched Almond Flour
1/2 tbsp Baking powder
1/4 tsp Sea salt
1/2 tsp Xanthan gum ((optional, but recommended for structure))

Steps:

  • Preheat the oven to 350 degrees F (177 degrees C). Line an 8.5x4.5-inch loaf pan with parchment paper, so that the paper hangs over the 2 long sides.
  • In a large, deep bowl, use a hand mixer at high speed to beat the butter and Besti together, until fluffy.
  • Beat in the eggs, one at a time, beating for 30 seconds after each addition. Beat in the vanilla.
  • Lower the mixer speed to medium-low. Beat in the almond flour, baking powder, and sea salt. If using xanthan gum, sprinkle (don't dump) it evenly over the batter and beat in at low speed until just combined.
  • Scrape the sides of the bowl. The batter will be thick and creamy. Transfer the batter to the loaf pan and smooth the top, rounding slightly.
  • Bake for 25-30 minutes, until the top is golden brown. Tent the top with foil, then continue baking for 20-30 minutes, until an inserted toothpick comes out clean. Allow the bread to cool in the pan before moving or slicing.

4 bananas (, about 1 1/3 cups, mashed)
1 large egg
1 Tablespoon vanilla extract
3 Tablespoons light brown sugar
2 Tablespoons granulated sugar
1 teaspoon ground cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups all-purpose flour ((white or white-whole wheat))
2 Tablespoons unsalted butter (, melted (or substitute applesauce))

Steps:

  • Grease a standard 9x5'' loaf pan (I also like to line the bottom of the pan with parchment paper to make sure the loaf doesn't stick).
  • Mash bananas in a mixing bowl. Add egg, vanilla, brown sugar, granulated sugar, and cinnamon and stir well to combine.
  • In a separate small bowl stir together flour, baking powder, baking soda and salt. Add to banana mixture and stir to combine.
  • Gently stir in melted butter. Bake at 350 degrees F. for 35-45 minutes or until a toothpick inserted into the center comes out clean.
  • Allow to cool in the pan for 5-10 few minutes before inverting onto a wire cooling rack.

300g mixture dried berries and cherries
225ml hot tea
juice 1 orange (about 75ml/2½fl oz) plus zest
50g butter
100g light brown sugar
1 egg
225g self-raising flour
4 tbsp demerara sugar

Steps:

  • Place the dried fruits in a bowl and pour over the hot tea, orange juice and zest. Cover with cling film, then leave for at least 4 hrs or better still overnight.
  • Heat oven to 180C/160C fan/gas 4. Grease and line the base of a 2lb loaf tin. Beat together the butter and sugar until creamy, then beat in the egg followed by the flour. Carefully stir through the fruit mixture. Spoon the mixture into the tin, then smooth over the surface with the back of a spoon. Sprinkle all over with a thick layer of demerara sugar.
  • Bake for 1 hr or until a skewer inserted into the centre comes out clean. Leave to cool in the tin, then turn out, cut into slices and serve.

When my husband and I found out he had high colesterol and I was a borderline diabetic we knew we had to change our diets. The only thing was we love cakes and desserts. As a result this fruit loaf was created. We love it and I even make one a week for my dad as he is also a diabetic. (Please note full diabetics should take into consideration their daily intake of fruit when eating this loaf.)

1 cup pitted dates
1 cup sultana
1/4 cup Splenda sugar substitute or 1/4 cup sugar substitute
1 cup water
1 tablespoon baking soda
1 1/2 cups self raising flour
1 cup walnuts
1 egg
1 cup low-fat plain yogurt

Steps:

  • Combine dates, sultanas, baking soda, SPLENDA and water in a saucepan.

Steps:

  • Put the dried fruit into a bowl and pour the tea over, cover and leave overnight (not in the fridge).
  • After overnight soaking..Preheat oven to Gas Mark 4. Line or grease a 2lb loaf tin.
  • I use a loaf liner for ease
  • Sieve the flour into a bowl and add spice if using. Pour over soaked fruit and any juices (remove teabag if using!).
  • Add egg and stir well with wooden spoon until all mixed up.
  • Spoon into prepared tin and if wished sprinkle over 1tsp of sugar (you don't have to but it gives it a nice crunch and it is only 1tsp!!).
  • Put into oven and bake for about an hour, maybe a little more depending on your oven.
  • When cooked through, remove from oven and cool on a rack.
  • EAT!!! Lovely with butter spread on it. I know that defeats it being fat free but hey ho!!

1/4 cup butter or 1/4 cup margarine, softened
1/4 cup unsweetened applesauce
1/4 cup sugar
1/2 cup Splenda sugar substitute
1/2 cup egg substitute or 2 eggs
1/2 cup 1% fat buttermilk
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon almond extract (optional)
1 lemon, zest of, grated
1 lemon, juice of
1/4 cup Splenda sugar substitute

Steps:

  • Beat butter in a big bowl with sugar, Splenda and apple sauce and 1/4 cup egg substitute.
  • Add the rest of egg substitute (or second egg) and beat. Add the milk.
  • In another bowl, mix flour, baking powder, salt and lemon peel as well as almond extract if using. . Pour into egg mixture. Mix only to wet.
  • With a spoon, pour in a greased loaf pan of 8 x 4 inch.
  • Cook in the oven at 350°F for 45 minutes to 1 hour until the loaf is cooked. Remove from oven and put on glaze.
  • Glaze: Put lemon juice and Splenda in a small saucepan. Heat and stir to dissolve sugar. Spoon over warm loaf.
  • Let cool in the pan for 10 minutes. Remove from the pan, cool and wrap.

1/2 cup dried apricot, diced
3/4 cup water
3/4 cup apple juice or 3/4 cup orange juice

1 1/2 cups self raising flour
2 bananas, sliced

Steps:

  • Place carrot, apple, dried fruit, water, juice, sugar and cinnamon in pot.
  • Bring to the boil, simmer 15 minutes.
  • Set aside to cool.
  • Fold in sifted flours and bananas.
